English Muffins image

I've used this delicious recipe for about 29 years. They are very good... much better than any store-bought English Muffins I've ever had.

Categories     Bread     Yeast Bread Recipes     English Muffin Recipes

Time 2h15m

Yield 18

Number Of Ingredients 7

1 cup milk
2 tablespoons white sugar
1 (.25 ounce) package active dry yeast
1 cup warm water (110 degrees F/45 degrees C)
¼ cup melted shortening
6 cups all-purpose flour
1 teaspoon salt

Steps:

  • Warm the milk in a small saucepan until it bubbles, then remove from heat. Mix in the sugar, stirring until dissolved. Let cool until lukewarm. In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  • In a large bowl, combine the milk, yeast mixture, shortening and 3 cups flour. Beat until smooth. Add salt and rest of flour, or enough to make a soft dough. Knead. Place in greased bowl, cover, and let rise.
  • Punch down. Roll out to about 1/2 inch thick. Cut rounds with biscuit cutter, drinking glass, or empty tuna can. Sprinkle waxed paper with cornmeal and set the rounds on this to rise. Dust tops of muffins with cornmeal also. Cover and let rise 1/2 hour.
  • Heat greased griddle. Cook muffins on griddle about 10 minutes on each side on medium heat. Keep baked muffins in a warm oven until all have been cooked. Allow to cool and place in plastic bags for storage. To use, split and toast. Great with orange butter, or cream cheese and jam.

BASIC MUFFIN RECIPE

Basic muffin recipe image

Good Food reader Charlotte Hilsdon shares her simple, chocolate chip muffin recipe, to which you can add fruit, chocolate or nuts

Provided by Good Food team

Categories     Afternoon tea, Dessert, Snack, Treat

Time 45m

Yield Makes 20

Number Of Ingredients 7

2 medium eggs
125ml vegetable oil
250ml semi-skimmed milk
250g golden caster sugar
400g self-raising flour (or same quantity plain flour and 3 tsp baking powder)
1 tsp salt
100g chocolate chips or dried fruit such as sultanas or dried cherries (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line 2 muffin trays with paper muffin cases. In a large bowl beat 2 medium eggs lightly with a handheld electric mixer for 1 min.
  • Add 125ml vegetable oil and 250ml semi-skimmed milk and beat until just combined then add 250g golden caster sugar and whisk until you have a smooth batter.
  • Sift in 400g self-raising flour and 1 tsp salt (or 400g plain flour and 3 tsp baking powder if using) then mix until just smooth. Be careful not to over-mix the batter as this will make the muffins tough.
  • Stir in 100g chocolate chips or dried fruit if using.
  • Fill muffin cases two-thirds full and bake for 20-25 mins, until risen, firm to the touch and a skewer inserted in the middle comes out clean. If the trays will not fit on 1 shelf, swap the shelves around after 15 mins of cooking.
  • Leave the muffins in the tin to cool for a few mins and transfer to a wire rack to cool completely.

2 cups/260 grams all-purpose flour (or 2 1/4 cups pastry flour; sifted)
1/2 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground cinnamon

  • Let the batter rest for 10 to 15 minutes, to allow the glutens in the flour to relax, and some of those pockets of dry flour to dissolve.

HEALTHY BLUEBERRY MUFFINS

Healthy Blueberry Muffins image

These healthy blueberry muffins are golden, fluffy, moist and delicious! No one will guess this recipe is made with 100% whole wheat flour and naturally sweetened with honey or maple syrup. Recipe yields 12 muffins.

Provided by Cookie and Kate

Categories     Muffin

Time 35m

Number Of Ingredients 12

1 3/4 cups plus 1 teaspoon white whole wheat flour or regular whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt
1/4 teaspoon ground cinnamon (optional)
1/3 cup melted coconut oil or extra-virgin olive oil
1/2 cup honey or maple syrup
2 eggs, preferably at room temperature
1 cup plain Greek yogurt*
2 teaspoons vanilla extract
1 cup (6 ounces) blueberries, fresh or frozen
1 tablespoon turbinado sugar (also called raw sugar), for sprinkling on top

Steps:

  • Preheat the oven to 400 degrees Fahrenheit. If necessary, grease all 12 cups on your muffin tin with butter, coconut oil or cooking spray (my pan is non-stick and doesn't require any grease).
  • In a large mixing bowl, combine 1 3/4 cups of the flour with the baking powder, baking soda, salt and cinnamon. Mix them together with a whisk.
  • In a medium mixing bowl, combine the oil and honey or maple syrup and beat together with a whisk. Add the eggs and beat well, then add the yogurt and vanilla. Mix well. (If the coconut oil solidifies in contact with cold ingredients, gently warm the mixture in the microwave in 30 second bursts.)
  • Pour the wet ingredients into the dry and mix with a big spoon, just until combined (a few lumps are ok). In a small bowl, toss the blueberries with the remaining 1 teaspoon flour (this helps prevent the blueberries from sinking to the bottom). Gently fold the blueberries into the batter. The mixture will be thick, but don't worry.
  • Divide the batter evenly between the 12 muffin cups (I used an ice cream scoop with a wire level, which worked perfectly). Sprinkle the tops of the muffins with turbinado sugar. Bake the muffins for 16 to 19 minutes, or until the muffins are golden on top and a toothpick inserted into a muffin comes out clean.
  • Place the muffin tin on a cooling rack to cool. You might need to run a butter knife along the outer edge of the muffins to loosen them from the pan. If you have leftover muffins, store them, covered, at room temperature for 2 days, or in the refrigerator for up to 5 days. Freeze leftover muffins for up to 3 months.

  • Choose your muffin wisely. If you're wondering which muffin recipe to make, here's a tip: Less butter and sugar in a recipe makes a drier bread-like muffin, while more butter and sugar produces a moister muffin that's more like cake.
  • Start with room-temperature ingredients. Have all ingredients at room temperature before you start making the batter. Why? Having eggs, butter, and milk at room temperature helps them form a smooth mixture that traps air and expands when heated in the oven.
  • Don't overmix. The more you mix, the tougher the muffin, so use a light touch. Mix the dry ingredients in a large bowl and whisk the wet ingredients in a separate bowl.
  • Add the extras. Dust all the add-ins (fruits, nuts, etc.) with a little bit of flour before adding them to the batter. This keeps them from sinking to the bottom of your muffins.
  • Make muffins movable. Inexpensive muffin pan liners make it easy to get the muffins out of the pan without tearing them. But even if you use paper liners, a quick spritz or swipe of vegetable oil on the top of the muffin pan will make muffin removal even easier.
  • Portion the batter. That thick, lumpy batter is best portioned out with a spoon or a small ice cream scoop so you'll get evenly sized muffins.
  • About those muffin tops. Some say muffin tops are the best part. To get yours, bake the batter in shallow muffin tins or overfill regular muffin cups.
  • Feel the heat. Every smart baker uses an oven thermometer to make sure the heat is just right for their recipe. Position the baking rack in the middle of the oven for even heat distribution, and rotate the pan halfway through baking to counteract any hot spots.
  • Cool down. Let muffins cool for a few minutes before lifting them out of the pan and onto a cooling rack. And as tempting as it may be to eat freshly baked muffins right away, let them cool down a bit more so the structure can firm up.
  • Wrap 'em up. Muffins are best when freshly made, but for muffins anytime you want them, wrap cooled muffins in plastic and freeze for up to two months.

HOW TO MAKE CAFE-STYLE MUFFINS - WHAT SARAH BAKES

From whatsarahbakes.com
  • The flour you use can affect the look of your muffin considerably. I’ve noticed that recipes with a higher flour ratio (between 2-4 cups) create a much better ‘Mexican hat look’ then muffin recipes with less flour (1+1/2 cups).
  • Baking Soda and Baking Powder. Although both are chemical leaveners, baking soda and baking powder work slightly differently, producing slightly different results.
  • Fill to the brim Most recipes say to fill the muffin holes to about 3/4 full. For the muffin top look we need to fill them right to the brim.
  • Once the muffins are cooked and have cooled for 5 minutes or so, tip the warm muffins out onto a clean tea towel and leave to finish cooling upside down.
  • A new trick I learned recently was that muffins baked in muffin liners/paper cups, tend to create more of a dome look opposed to the Mexican hat look.
