Here's a tasty way to serve venison! I brown pieces of venison in butter, then braise it with sauteed mushrooms, white wine, and seasonings. This is good served with mashed potatoes or ladled over rice.

¼ cup butter, divided
1 ½ pounds venison, cut into cubes
1 ½ pounds sliced mushrooms
½ cup dry white wine
1 (14.25 ounce) can beef broth
1 bunch green onion, chopped
¼ cup minced parsley
2 tablespoons onion powder
1 tablespoon garlic powder

Steps:

  • Melt half of the butter in a large skillet over medium-high heat. Sear the venison cubes until browned, then remove and set aside. Melt the remaining butter, then cook the mushrooms until they release their liquid. Stir in the white wine, and simmer for 3 minutes.
  • Stir in the beef broth, green onions, and reserved venison. Season with parsley, onion powder, and garlic powder. Bring to a simmer, then reduce heat to medium-low, cover, and simmer until venison is tender, about 2 hours.

3 tablespoons olive oil
2 pounds venison stew meat, cut into 1-inch cubes
1/4 cup all-purpose flour
Essence, recipe follows
2 cups chopped onions
1 cup chopped celery
1 cup chopped carrots
1 tablespoon chopped garlic
1 cup chopped tomatoes, peeled and seeded
1 tablespoon chopped fresh basil leaves
1 tablespoon chopped fresh thyme leaves
2 bay leaves
1 cup red wine
4 cups brown stock
Salt and black pepper
Crusty bread
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • In a large pot, over high heat, add the olive oil. In a mixing bowl, toss the venison with flour and Essence. When the oil is hot, sear the meat for 2 to 3 minutes, stirring occasionally. Add the onions and saute for 2 minutes. Add the celery and carrots. Season with salt and pepper. Saute for 2 minutes. Add the garlic, tomatoes, basil, thyme, and bay leaves to the pan. Season with salt and pepper. Deglaze the pan with the red wine. Add the brown stock. Bring the liquid up to a boil, cover and reduce to a simmer. Simmer the stew for 45 minutes to 1 hour, or until the meat is very tender. If the liquid evaporates too much add a little more stock.
  • Remove the stew from the oven and serve in shallow bowls with crusty bread.
  • Combine all ingredients thoroughly.

2 pounds beef stew meat, cut into 1-1/2-inch cubes
1 tablespoon all-purpose flour
3 tablespoons canola oil
2 garlic cloves, minced
3 large onions, quartered
1 cup beef broth
2 tablespoons seasoned salt
1 teaspoon chili powder
1 teaspoon dried oregano
1 teaspoon dried rosemary, crushed
2 cans (14-1/2 ounces each) Italian stewed tomatoes
1 can (6 ounces) tomato paste
1/2 cup minced fresh parsley
3 medium carrots, cut into 1-inch pieces
8 ounces mostaccioli or penne pasta, cooked and drained
1/3 cup shredded Parmesan cheese

Steps:

  • Toss meat with flour; brown on all sides in oil in 5-qt. Dutch oven. Add garlic and onions; saute until tender. Stir in the broth, seasoned salt, chili powder, oregano and rosemary. , Cover and simmer for 1-1/2 hours. Add tomatoes, tomato paste, parsley and carrots. Cover and simmer for 1 hour or until meat and carrots are tender. Stir in macaroni; heat through. Sprinkle with cheese.

2 pounds boneless venison or beef chuck roast, cut in 1-inch cubes
2 tablespoons canola oil
4-1/4 cups water, divided
1/2 cup tomato juice
2 medium onions, cut in wedges
2 celery ribs, sliced
1 teaspoon Worcestershire sauce
2 bay leaves
2 to 3 teaspoons salt
1/2 teaspoon pepper
6 medium carrots, quartered
1 large rutabaga, peeled and cubed
6 medium potatoes, peeled and quartered
1 cup frozen peas
1 tablespoon cornstarch

Steps:

  • In a Dutch oven, brown meat in oil over medium heat. Add 4 cups water and scrape to loosen any browned drippings from pan. Add the tomato juice, onions, celery, Worcestershire sauce, bay leaves, salt and pepper. Bring to a boil. Reduce heat; cover and cook for 2 hours, stirring occasionally. , Discard bay leaves; add the carrots, rutabaga and potatoes. Cover and cook for 40-60 minutes. , Stir in the peas; cook for 10 minutes. Combine cornstarch and remaining water until smooth; stir into stew. Bring to a boil. Cook and stir for 2 minutes or until thickened.

2 tablespoons vegetable oil
1/2 cup chopped onion
1/2 cup chopped celery
2 (28 ounce) cans tomatoes, undrained and chopped
1 (12 ounce) can beer
1 teaspoon salt
1 teaspoon sugar
1/2-1 teaspoon dried rosemary
1/2-1 teaspoon dried basil
1/2 teaspoon fresh ground pepper
2 carrots, diced
2 medium potatoes, cubed

Steps:

  • Heat the oil in a large soup pot; brown venison and sausage.
  • Add in onion and celery; stir/saute until tender.
  • Add in the next 7 ingredients; bring to a boil; lower heat and simmer, covered, for 30 minutes.
  • Add carrots; cook uncovered, 30 minutes.
  • Add in potatoes and cook 30 more minutes or until done.

1 lb bacon cooked and crumbled
3/4 c brown sugar
2 tsp apple cider vinegar
1 tsp salt
1/2 c ketchup
3 tsp prepared mustard
1 large can pork and beans

Steps:

  • 1. Brown the meat with onions and drain.
  • 2. Mix all ingredients together and pour into casserole dish.
  • 3. Bake at 325 degrees for 45 min. Can put in a crock pot and cook on low for 2 hours
