IMPROVED FROZEN CHEESE PIZZA
This isn't really cooking, but it's a cheap and easy way to have almost home-made pizza fast. It's great for starving college students. This is a good source of protein, calcium and vitamin A, and we used to get 5 frozen pizzas for $10.

Steps:
- Sprinkle oregano over the pizza.
- Sprinkle cheese over the top.
- Add any other desired toppings (mushrooms, browned ground beef, shredded parmesan cheese, etc.).
- Bake for about 20 minutes at 425F or until the cheese is hot and bubbly.
- Slice and serve.

- Heat a 10-inch non-stick skillet over medium-high heat. Sprinkle shredded mozzarella cheese evenly into hot skillet; cook until cheese is melted, 2 to 3 minutes.
- Arrange tomato slices, basil leaves, and fresh mozzarella slices on the melted cheese, leaving space for a "crust" to form; cook until top is bubbling and edges are browned, 2 to 3 minutes.
- Remove skillet from heat and loosen pizza with a spatula. Gently slice pizza onto a cutting board; cool for 1 minute before slicing.

Steps:
- Preheat oven to 450°F (230°C).
- Place a parchment paper-lined baking sheet in the oven.
- To make four personal-sized pizzas, divide pizza dough into fourths.
- Roll out each piece of dough to desired thickness.
- To par-bake the pizza rounds, arrange the pizza dough rounds on the hot baking sheet.
- Bake for 3-4 minutes or until dough looks puffy and dry. Dough should not be golden brown.
- Cool pizza rounds on a wire rack.
- When cool, top your rounds with desired toppings.
- Place prepared pizzas on a baking sheet and freeze, uncovered, for 3 hours so the toppings adhere to one another.
- Wrap the now-frozen pizzas in plastic wrap and aluminum foil to prevent freezer burn. Label each pizza as desired and freeze for 1-2 months.
- To bake frozen pizzas, preheat the oven to 450°F (230°C).
- Unwrap pizza and place directly on rack or parchment-lined baking sheet.
- Bake for 15-18 minutes, or until crust is brown and cheese is melted.
- Cool for 5 minutes. Cut into slices before serving.

Steps:
- --crust--.
- Preheat oven to 400 degrees F.
- Mix all ingredients throughly and divide in half.
- Press each half onto a pizza pan being sure to evenly spread it all the way to the edge.
- Bake each crust 8-10 minutes. Allow to cool.
- --toppings--.
- Mix 2 tablespoons water, vanilla,cinnamon and sugar in a small sauce pan, over low heat until sugar has melted.
- Beat sugar syrup into ricotta cheese until throughly incorporated.
- Spread over cooled crusts; This is the"sauce".
- Add pecans and fruit, placing each to look like pizza toppings.
- You can use basically any kind of fruit that you like but I liked the above ingredients.
- In a small saucepan, melt caramels in 1 tablespoon water, until smooth.
- Drizzle over pizza to look like"cheese".
- Chill for an hour. Slice and serve.

SHARON'S NO CHEESE PIZZA
I tried Amy's No Cheese Pizza recipe recently and wanted to make it at home. After searching and not finding a recipe for it, I came up with this. Amy's crust has wheat germ, wheat bran in it so if you are making your own crust, you could add that in(or sprinkle over storebought crust). I hope you enjoy it as much as I did.

Steps:
- Preheat oven to 450*F.
- Heat the olive oil, saving out 1 tbls. and add the onions, garlic, thyme and oregano. Cook, stirring occassionally, until most of the moisture has evaporated and the onion mixture is very soft, almost smooth, and caramelized, about 30 minutes.
- Put the onion mixture along with tomato paste, lemon juice and agave syrup in a blender and pulse until slightly pureed(a few chunks here and there are fine).
- Season with salt and pepper.
- In the same frying pan, heat 1 tbls. of oil and saute the shitake mushrooms for about 3-5 minutes.
- Cover the crust with the onion/tomato mixture, sprinkle evenly with the artichokes, mushroom, and bell peppers.
- Drizzle with olive oil and balsamic vinegar. Sprinkle over a little freshly ground black pepper if desired.
- Bake for 10-12 minutes or until golden brown. The baking time will vary depending on whether you bake on a stone, on the oven rack, or on a pizza pan. Be sure that your oven is well pre-heated before putting pizza inches.

- preheat oven to 425.
- prepare dough.
- brush the surface of the the prepared dough with a thin application of olive oil.
- evenly distribute the cheese over the oiled surface as follows: smoked gouda, mozzarella, fontina.
- place tomato slices over the cheeses, spaced about 1 inch apart - do not overlap.
- top the tomatoes with the pieces of buffalo mozzarella followed by the shaved romano.
- transfer pizza to preheated oven, bake till crust is crisp and golden and center is bubbly, about 15 minutes.
- remove pizza from oven, sprinkle with basil.
- slice and serve.
