EASY INSTANT POT® CHICKEN TIKKA MASALA
Simple and absolutely irresistible chicken tikka masala made in the Instant Pot® with all the flavors of garam masala and turmeric. A wonderful and easy midweek dinner option.

Steps:
- Combine chicken, yogurt, garam masala, lemon juice, cayenne pepper, and ginger in a bowl; toss until fully coated. Cover and refrigerate for 1 hour.
- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add chicken with marinade; cook until tender, stirring occasionally, about 5 minutes.
- Place tomato sauce, garlic, garam masala, paprika, turmeric, and salt in the pot; stir until well combined. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Remove lid and select Saute function. Pour in cream; stir well. Simmer until sauce has thickened, about 4 minutes.

This is a quick Garam Masala (Indian spice) mix. Garam Masala is better when made with whole spices that have been roasted and ground, but this is a quick and easy substitute that's pretty good.

- Check all spices and remove any rotten pieces or dirt. Check cloves and remove any stems without buds. Break the cinnamon into smaller pieces, and clean the dirt between the grooves using a damp kitchen towel.
- Add all spices except nutmeg to a large skillet. Lightly toast these spices, on medium-heat, for about 2 minutes, stirring every 20 seconds or so. The spices are done when they start releasing their aroma. Turn off the heat. Transfer to a plate to stop the toasting. Cool for 10 minutes.
- Using a coffee or spice grinder, grind this mix in 3-4 batches. Give it a good shake in between to prevent spices from clumping. Grind it to a fine texture.
- Grate nutmeg using a microplane and add to the spice-mix. Store in an air-tight container, in a cool and dry place.
