INSTANT POT BABY BACK RIBS - DRY-RUBBED

Steps:
- Add all spices to a small bowl and combine well.
- Using a knife, remove the silver skin membrane on the bone side of the ribs.
- Liberally season ribs with seasoning mix on both sides.
- Add one cup of apple cider to pot, along with trivet. Place both racks of ribs on top of trivet. Lock lid and cook for 22 minutes at high pressure.
- Once cook time is complete, allow pressure to release naturally (will take about 25 minutes.)
- Transfer ribs to baking sheet and place under high broiler for 5-7 minutes, until desired char is achieved. Watch closely to prevent burning.
- In a medium saucepan over medium heat - combine all of the barbecue sauce ingredients, except the salt, and bring to a boil, stirring well. Let cool, then season with salt.
- Cook the ribs following steps 1 through 5 of the dry rub ribs instructions. Then, transfer ribs to a baking tray and brush sauce all over the bone side. Place ribs under a high broiler for about 5 minutes. Then flip, sauce the meaty side, and broil for a few more minutes.

- Combine kosher salt, brown sugar, chili powder, paprika, garlic powder, cayenne pepper, and black pepper in a small bowl for the spice rub.
- Cut the rack of ribs into 4 equal portions. Rub all sides of each piece with spice rub.
- Pour broth into a multi-functional pressure cooker (such as Instant Pot®). Add ribs in a teepee formation. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
- Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove lid. Move ribs to the baking sheet using tongs. Brush ribs on all sides with barbeque sauce.
- Bake in the preheated oven for 7 minutes. Turn ribs and continue baking until meat pulls away easily from the bone, about 7 minutes more. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

- On the bone side of the ribs, work a butter knife between the membrane and the bone, then grab with a paper towel and pull the membrane off of the ribs. (If it tears while you’re pulling, work the knife under the remaining pieces and pull them off as well.)
- In a small bowl, stir the Memphis Dry Rub ingredients, breaking up any clumps of brown sugar with your fingers. Set aside 1 tablespoon of the dry rub.
- Sprinkle both sides of the ribs with the remaining rub (about 2 tablespoons). Cut the rib rack into 4 pieces, cutting between every third bone. Pour a cup of water and the liquid smoke into an Instant Pot or other pressure cooker, then add the pressure cooker rack. Stack the ribs loosely on top of the rack.
- Lock the lid and pressure cook at high pressure for 30 minutes in an Instant Pot or other electric pressure cooker, or for 24 minutes in a stovetop PC. (Use “Manual” or “Pressure Cook” mode in an Instant Pot). Let the pressure come down naturally, about 15 more minutes.
