1 1/2 pounds frozen salmon filets
1/4 cup lemon juice
3/4 cup water
fresh dill, basil, parsley or a mix (a few springs)
1/4 teaspoon garlic powder or to taste (or to taste (or 2 cloves garlic, minced))
1/4 or to taste sea salt (or to taste)
1/8 teaspoon black pepper
1 lemon (sliced thinly)
1 tablespoon avocado oil (or melted coconut oil)

Steps:

  • Pour water and lemon juice into your Instant Pot. Add fresh herbs to the water/lemon juice mixture and place steamer rack in Instant Pot.
  • Drizzle salmon with oil and season with salt and pepper.
  • Sprinkle garlic powder over the salmon and place on the salmon in a single layer on the steamer rack in the Instant Pot. *
  • Layer lemon slices on top of the salmon.
  • Place the lid on the Instant Pot, lock in place and turn the valve to sealing.
  • The use the Manual setting to cook on HIGH pressure for 7 minutes.*
  • It will take your Instant Pot about 10 minutes to get up to pressure.
  • Once the time is up, switch the valve to venting to quick release the pressure.
  • Enjoy warm over a salad, with roasted veggies or any other way that you can dream up!

1 pound salmon fillets
½ lemon (sliced)
6-8 garlic cloves
Salt (to taste)
Black pepper (to taste)

Steps:

  • Add 1 cup water to the Instant Pot inner pot.
  • Add salmon to a baking dish and top with lemon slices, garlic cloves and salt and pepper. Place the baking dish on top of the trivet in the Instant Pot. Cover with a lid or foil.
  • Close the lid on the pressure cooker and turn the valve to sealing position.
  • Set to a manual high time for 10 minutes. When the cooking time has finished, do a natural release for 5 minutes before releasing the rest of the pressure.
  • Salmon should be flaky. If salmon has not cooked completely, place the pan back into the Instant Pot with the lid/foil on it and cook for an additional 3 minutes, then perform a quick release.

1 pound salmon fillets
½ lemon sliced
½ lemon juice (optional)
6-8 garlic cloves, sliced
Salt and pepper, to taste
dash of olive oil

Steps:

  • Place 1 cup pf water into the inner pot of the Instant Pot.
  • Slice salmon as desired and so that it fits in the Instant Pot.
  • You can place the salmon directly in the Instant Pot inner pot, use a dish or a steamer rack. Place the salmon into a baking dish, if that's what you're using.
  • Top the salmon with olive oil, salt and pepper, lemon slices, and garlic cloves. If you want your salmon to have a more lemony flavor, squeeze lemon juice over it, using the other lemon half. For extra flavor: add a bit of grass-fed butter on top of your salmon. Place a couple pieces of sliced butter on top of each piece of salmon. It will melt when it starts cooking and give your salmon an even better flavor.
  • Place the baking dish, using a trivet with handles, into the Instant pot.
  • Close the Instant Pot lid, seal and set to a high pressure for a cook time of 3 minutes, 5 minutes if you're cooking from frozen.
  • Natural release the pressure for 5 minutes followed by a quick release of the remaining pressure.
  • Your salmon is ready. Enjoy!

1 1/4 pounds small red-skinned potatoes, halved or quartered
4 tablespoons unsalted butter
Kosher salt and freshly ground pepper
Four 5- to 6-ounce skin-on center-cut salmon fillets (3/4 to 1 inch thick)
1/4 teaspoon paprika
1/2 teaspoon grated lemon zest, plus lemon wedges for serving
4 cloves garlic, minced
4 cups packed mixed baby spinach and arugula (about 3 1/2 ounces)

Steps:

  • Put the potatoes in the bottom of an Instant Pot. Add 1 cup water, 2 tablespoons of the butter, 1/2 teaspoon salt and a few grinds of pepper. Place the pot's steam rack over the potatoes.
  • Rub the top and sides of the salmon fillets with the paprika and lemon zest and season generously with salt and pepper. Place skin-side down on the rack. Put on the lid, making sure the steam valve is in the sealing position, and set the cooker to high pressure for 3 minutes. When finished, carefully turn the steam valve to the venting position to release the pressure.
  • Remove the salmon and rack and set the cooker to saute at normal heat. When the potatoes start sizzling, add the garlic and cook, stirring, until softened, 1 to 2 minutes; stir in the remaining 2 tablespoons butter and season generously with salt and pepper. Smash the potatoes with a fork or wooden spoon until chunky.
  • Turn off the cooker. Add the mixed greens to the potatoes and stir until wilted, 1 to 2 minutes. Season with salt and pepper. Divide the salmon and potato mixture among plates. Serve with lemon wedges.
