- Mix all ingredients in a plastic container.
- For single serving - Add 1/2 cup of mix to 1 cup of boiling water, mix and enjoy!
- For big pot - Whole container of soup mix with 5 cups of boiling water. If its too thick for you and water at 1/2 cup at a time.
CHEESE SOUP MIX IN A JAR
I found this recipe online (www.allfreecrafts.com) & used it for Christmas 2006. I made a test batch before gift-giving, and this is my tweaked version of the original recipe- my version includes more cheese and is less thick. Note: I found the cheese powder at the local bulk foods store.

Steps:
- Layer ingredients in a 1 quart canning jar in the order given. Use enough potato flakes to fill the jar- may not need the full amount (I didn't).
- For gift-giving, attach a card that reads: Bring 6 cups of water to a boil in a large pan. Add contents of jar, stir well, remove from heat, and let sit five minutes. Optional: May stir in one cup diced, cooked ham or broccoli.
- NOTE: I found that this soup got very thick as it cooled, so I've cut down on the original amount of potato flakes and increased the water. If you find that it's too thick, add another cup of boiling water.

"INSTANT" MAC AND CHEESE
No-boil, no-bake, one-pan mac and cheese is not just possibly simple, but simply possible! On top of producing awesome taste and texture, the whole procedure only took a few minutes longer than the boxed stuff; not to mention we avoided about a dozen ingredients we probably shouldn't be eating. Just make sure to grate your own (high-quality) Cheddar and turn off the heat as soon as the cheese melts, and the process should go smoothly.

Steps:
- Bring milk, salt, cayenne, mustard, nutmeg, and 1 tablespoon butter to a simmer in a pot over medium heat. Stir in macaroni. Simmer, stirring occasionally, until firm yet tender to the bite, about 8 minutes. Do not undercook.
- Meanwhile, melt remaining butter in a skillet over medium heat. Add bread crumbs and toast until golden brown, 3 to 5 minutes.
- Stir cheeses into the cooked macaroni. Reduce heat to low and stir just until melted. Turn off heat, cover, and let sit for 3 minutes. Uncover, stir, and season to taste.
- Spoon mac and cheese into warm serving bowls; sprinkle toasted breadcrumbs on top.
