Old potato cake recipe of my grandmother's. Good served with fruit.

⅔ cup shortening
2 cups white sugar
2 eggs
¾ cup milk
2 cups all-purpose flour
2 teaspoons baking powder
⅛ teaspoon salt
2 teaspoons ground cinnamon
2 teaspoons ground cloves
2 teaspoons ground nutmeg
2 cups mashed cooked potatoes
1 cup chopped walnuts
1 cup raisins

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch Bundt pan. Sift together the flour, baking powder, salt, cinnamon, cloves and nutmeg. Set aside.
  • In a large bowl, cream together the shortening and sugar until light and fluffy. Beat in the eggs one at a time. Add the flour mixture alternately with the potatoes and milk. Stir in nuts and raisins.
  • Pour into a 10 inch Bundt pan. Bake in the preheated oven for 90 to 120 minutes, or until a toothpick inserted into the cake comes out clean.

Steps:

  • Combine 2 cups leftover mashed potatoes, a heaping 1/3 cup flour, 2 tablespoons milk and 1 tablespoon chopped mixed herbs in a bowl; knead until smooth. Season with salt and pepper. Divide into 4 balls on a floured surface and flatten each into a 3-inch patty. Melt 1 1/2 tablespoons butter in a large skillet over medium-high heat; add the patties and cook until golden brown, 4 to 5 minutes per side, adding more butter to the pan as needed. Season with salt.

This recipe was my mother-in-laws and every year at Thanksgiving and Christmas our family would look forward for this cake to be on the list for the sweets. Everyone loves this cake but for myself I like the crumbes on the plate after the cake is gone.

2 c sugar
6 eggs, separated
1 c mashed potatoes
3 Tbsp cocoa powder
1 tsp each-allspice,cloves,cinnamon
1 c each-walnuts,and pecans
c flour to thicken
1-2 box raisins
1-2 pkg coconut, shredded
OLD FASHION IRISH POTATO CAKE

Steps:

  • 1. Mix all ingredients together in a large mixing bowl.(I use the real large tupperware bowl so I can stir in all the ingredients well.) Then add flour to mixture to thickness of cake that you want. Divide batter in 3-4 cake pans and bake till done.
  • 2. While cake is cooking get yourself a pan to mix and cook icing in. Mix cocoa, sugar, and milk in pan till mixed well. Take one cake layer put in plate and top with syrup then add raisins, top with another cake top with syrup then raisins, take a fork and poke holes in cake so syrup soaks in cake, then add another cake, syrup, the raisins. Then top with last cake but don't put syrup, or raisins on top of cake. I use the seven minute icing for the top then spread coconut on top and sides of cake.
  • 3. SEVEN MINUTE ICING---2 unbeaten egg whites,1/2 cup karo,1 1/2 cup sugar, 5 Tbsp. coldwater, 1 teas vanilla flavor....Mix karo syrup, sugar,water in a pot. Cook for seven minutes, While this cooks beat egg whites. Remove mixture from stove and add vanilla. While mixer is on add mixture to stiff beaten egg whites slowly until thick. Cover cake with icing and coconut.

1 lb yellow potatoes ~ mashed - no butter or milk
4 slice thick bacon - cooked crisp and save the drippings
1 1/2 Tbsp grated onion
kosher salt & fresh cracked black pepper
2 Tbsp flour
1 Tbsp fresh parsely, chopped
sour cream

Steps:

  • 1. If you have an iron skillet, use it for these cakes. Browns nicely. If not any skillet will do. Fry your bacon until crisp and drain. Save the drippings and add some extra if you have it. You just want enough drippings in the pan, that the potatoes won't absorb too much before nicely browned.
  • 2. Mash potatoes ( cool ) and fold in the flour, salt, pepper, bacon, parsley and onion.
  • 3. Get skillet good and hot, but not smoking. Make 4 - 6 patties with the potato mixture and place in hot grease. Re salt and pepper. Fry for 4 - 5 minutes on the first side, can carefully lift around the edge to see if browned enough. Carefully flip to the other side and cook until golden crispy. Drain on paper towels.
  • 4. Serve with sour cream if desired. These cakes are so good! Enjoy them with breakfast, dinner or just a snack.
