IRISH POTATO CANDY
Irish potato candy isn't Irish and has no potatoes in it, but it's still a delicious recipe for St. Patrick's Day.

Steps:
- Add powdered sugar 1/2 cup at a time to the softened cream cheese and mix thoroughly.
- Stir in vanilla.
- Add butter and mix.
- Use a spoon or spatula and fold in the coconut.
- Place cinnamon in a shallow bowl.
- Shape coconut mixture into roughly shaped 1 inch balls.
- Roll in cinnamon.
- Place each "potato" on parchment paper or a plate.
- Chill in the fridge for 1/2 hour or more before serving.

- In a medium bowl, beat the butter and cream cheese together until smooth. Add the vanilla and confectioners' sugar; beat until smooth. Using your hands if necessary, mix in the coconut. Roll into balls or potato shapes, and roll in the cinnamon. Place onto a cookie sheet and chill to set. If desired, roll potatoes in cinnamon again for darker color.

This recipe contains no potatoes. It gets it name from the look of the candy. I have not tried this recipe myself. It is for an ISO request. Recipe says you can also dip in melted chocolate for Easter eggs.

Steps:
- NOTE: Be sure to use regular cream cheese, not whipped or reduced fat type.
- In a large bowl, cream together the butter and cream cheese.
- Add vanilla and confectioners' sugar.
- Beat until mixture forms a ball.
- Stir in coconut with a spoon.
- Roll the mixture between your hands to form small potato-shaped candies or roll into small balls.
- Place cinnamon in a shallow dish and roll the balls in it.
- Place the balls on a cookie sheet and chill for about 1 hour or until firm.
- If you prefer "dirtier potatoes" roll the candy a second time after they have chilled.
- Alternatively dip in melted chocolate for Easter eggs.
MULDOWNEY'S IRISH POTATO CANDY

- Place cinnamon on a plate. Form the mixture into small, round balls and roll in the cinnamon until coated and they look like tiny potatoes.

I used to get these in the bakery on St. Patrick's Day when I was a kid. These old fashioned candies can also be dipped in chocolate for Easter. Everybody who has ever tried these has raved over them.

- combine the 1st 5 ingredients until well mixed. (use your hands. I have broken too many spoons on this).
- Shape into 1 inch balls
- Roll in Cinnamon.
- refrigerate.

- omit cinnamon and dip in melted dark chocolate.
- omit cinnamon add 1/2 C chopped dried apricots and dip in melted white chocolate.

- Combine all ingredients except the cinnamon in a mixer. Mix on the lowest setting until the powdered sugar looks just incorporated. Scrape the bowl and mix on low until completely smooth and fully emulsified. Cover and chill for one hour.
- Use a teaspoon or small cookie scoop to scoop and roll small, tablespoon-sized rounds of coconut "dough." Roll in cinnamon and tap off the excess. You may not use all the cinnamon, but you need extra enough to roll the buttercream balls.
- Serve chilled or at very cool room temperature. PRO TIP: Irish potatoes can be frozen and thawed in the refrigerator overnight.
