I made this for New Year's Eve and it was so good. I couldn't even taste the alcohol in it.

2 cups cold orange juice
½ cup lemon juice
¼ cup white sugar
32 fluid ounces cold lemon-lime flavored soda
¾ cup peach-flavored bourbon liqueur (such as Southern Comfort ®)
ice cubes

Steps:

  • Combine orange juice, lemon juice, and sugar in a pitcher; stir until the sugar is dissolved. Cover pitcher with plastic wrap. Chill in refrigerator 15 minutes. Add the lemon-lime soda and the bourbon liqueur. Serve over ice.
  • Refrigerate until chilled, about 15 minutes. Gently stir lemon-lime soda and bourbon liqueur into the orange juice mixture. Pour into cups filled with ice to serve.

This one can be made in either way, depending on which liqueur you use first. The taste will be the same, but the looks slightly different. The first two liqueurs can be switched to make an IRISH SUNRISE.

3/4 ounce banana liqueur
3/4 ounce Amaretto
3/4 ounce irish cream

Steps:

  • Layer in a shot glass in the order given.
  • The secret is to pour slowly, barely dribble the liqueurs into your glass.
  • Start with your first liqueur and pour it into your glass, now take your spoon and place the tip of the spoon very close to your first liqueur, now carefully and slowly pour in your second liqueur over the back of the spoon and into the glass, then your third.

1/4 cup strawberry preserves
2 cups fresh strawberries
3 frozen peeled bananas
1/2 cup nonfat plain yogurt
1 cup orange juice (or pineapple juice)
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 tablespoon honey
fresh strawberries
orange slice

Steps:

  • In a blender, blend the strawberry preserves and berries until smooth and creamy. Transfer to a small bowl and chill until needed. Note: this can be made ahead of time and refrigerated.
  • In a clean blender combine the bananas and remaining smoothie ingredients until smooth.
  • To serve use a 10 oz wine goblet, Fill with 1/4 cup strawberry puree and pour banana mixture over to fill glass. This creates a 'sunrise' in your glass. Garnish with a fresh berry and orange slice.

  • Irish Boxty. Soft on the inside and crispy on the outside, these are the potato pancakes of our dreams.
  • Kale Colcannon. She may not be the prettiest dish, but she’s definitely the most comforting (especially with extra butter on the side).
  • Corned Beef Hash. Breakfast doesn’t get better than this. Bonus points for using up any leftovers hiding in your fridge.
  • Baked Fish and Chips. OK, so they’re baked instead of fried, but we don’t think Grandma would disapprove of that. After all, it still tastes amazing.
  • Lamb Stew. Best served with a side of soda bread and a tall Guinness, of course.
