BEEF BRACIOLE RECIPE

Beef Braciole, stuffed beef rolls slowly simmered in tomato sauce, are Italian comfort food at it's best.

Number Of Ingredients 16

1 lb boneless beef round, cut into 4 thin slices approximately 1/3 inch thick
4 slices of prosciutto
1 tablespoon pignoli beans(pine nuts)
2 tablespoons grated pecorino romano cheese
2 garlic cloves, chopped
2 tablespoons parsley, chopped
2 tablespoons olive oil
1 medium yellow onion, chopped fine
2 carrots, peeled and chopped fine
2 celery stalks, chopped chopped fine
1 cup dry red wine
2 28oz cans imported Italian tomatoes
2 bay leaves
3 fresh basil leaves, torn into small pieces
flour spread on a plate for dredging
salt & pepper to taste

Steps:

  • Place each slice of beef between 2 sheets of plastic wrap and pound with a meat pounder until 1/4 inch thick. Sprinkle with salt & pepper. Lay a slice of prosciutto on each one.
  • Mix together the the pignoli beans, pecorino romano cheese, garlic and parsley and sprinkle evenly on top of the beef slices with prosciutto. Roll up the slices, tucking in the ends and tie with kitchen string.
  • Heat the olive oil in a large sauce pan over medium heat. Dredge the braciole in flour shaking off any excess, then place in the pan. Cook until browned on all sides, about 15 minutes. Remove from pan with a slotted spoon and keep to the side.
  • If needed add some more olive oil to the pan then add the onion, carrots, and celery. Cook, stirring until tender but not browned, about 10 minutes.
  • Add the red wine and cook, stirring up any browned bits stuck to the bottom of the pan until reduced by half, about 2 minutes.
  • Crush the tomatoes with your hands and add, with their juices, into the saucepan. Fill one of the tomato cans 1/2 way with water and pour in. Add the bay leaves and season with salt and pepper.
  • Place the braciole back into the sauce, turn heat to low and cook at a simmer until beef is tender 1.5 - 2 hours.
  • Sprinkle the basil over the rolls, and cook for 2 minutes longer. Transfer to serving plates, spoon the sauce over the top and serve at once.

1/2 cup dried Italian-style bread crumbs
1 garlic clove, minced
2/3 cup grated Pecorino Romano
1/3 cup grated provolone
2 tablespoons chopped fresh Italian parsley leaves
4 tablespoons olive oil
Salt and freshly ground black pepper
1 (1 1/2-pound) flank steak
1 cup dry white wine
3 1/4 cups Simple Tomato Sauce, recipe follows, or store-bought marinara sauce
1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
2 (32-ounce) cans crushed tomatoes
4 to 6 basil leaves
2 dried bay leaves
Sea salt and freshly ground black pepper
4 tablespoons unsalted butter, optional

Steps:

  • Stir the first 5 ingredients in a medium bowl to blend. Stir in 2 tablespoons of the oil. Season mixture with salt and pepper and set aside.
  • Lay the flank steak flat on the work surface. Sprinkle the bread crumb mixture evenly over the steak to cover the top evenly. Starting at 1 short end, roll up the steak as for a jelly roll to enclose the filling completely. Using butcher's twine, tie the steak roll to secure. Sprinkle the braciole with salt and pepper.
  • Preheat the oven to 350 degrees F.
  • Heat the remaining 2 tablespoons of oil in a heavy large ovenproof skillet over medium heat. Add the braciole and cook until browned on all sides, about 8 minutes. Add the wine to the pan and bring to a boil. Stir in the marinara sauce. Cover partially with foil and bake until the meat is almost tender, turning the braciole and basting with the sauce every 30 minutes. After 1 hour, uncover and continue baking until the meat is tender, about 30 minutes longer. The total cooking time should be about 1 1/2 hours.
  • Remove the braciole from the sauce. Using a large sharp knife, cut the braciole crosswise and diagonally into 1/2-inch-thick slices. Transfer the slices to plates. Spoon the sauce over and serve.
  • In a large casserole pot, heat oil over medium-high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrot and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and reduce the heat to low. Cover the pot and simmer for 1 hour or until thick. Remove bay leaves and taste for seasoning. If sauce tastes too acidic, add unsalted butter, 1 tablespoon at a time, to round out the flavor.
  • Pour half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
  • If not using all the sauce, allow it to cool completely and then pour 1 to 2 cup portions into plastic freezer bags. Freeze for up to 6 months.

2 Pounds Sirloin or other lean beef, sliced thinly into sheets
8 Ounces Fresh Mozzarella Cheese
¼ Cup Freshly Grated Pecorino Romano Cheese
¾ Cup Golden Raisins
¾ Cup Pine Nuts
½ Cup Chopped Italian Parsley
½ Cup Whole Wheat Bread Crumbs
6 Ounces Paper Thin Sliced Prosciutto
Cotton Butcher's String (for tying the braciole)
2 Tablespoons Extra Virgin Olive Oil
1 Large Yellow Onion
¼ Cup Extra Virgin Olive Oil
½ Teaspoon Kosher Salt
5 Cloves Garlic, minced
1 Tablespoon Fresh Chopped Rosemary
½ Teaspoon Dried Basil
½ Teaspoon Dried Oregano
1 Cup Dry Red Wine
1 Large (28 Ounce) Cans of Whole Tomatoes
1 6 Ounce Can Tomato Paste

4 Cloves Garlic, finely minced

Steps:

  • Unless you have mad knife skills, ask your butcher to slice two pounds of lean beef into very thin sheets--as thin as possible.
  • Slice the mozzarella into thin strips. Mix the mozzarella in a bowl with the romano cheese, raisins, pine nuts, parsley, and breadcrumbs.
  • With a meat hammer, pound out the slices of beef until they're as thin as you can get them.
  • Add a few tablespoons of the cheese mixture to the middle of each flattened sheet of beef. Add a thin sheet of prosciutto. Roll up the sheet of beef to form a roll. Tie the roll securely with butcher's twine.
  • Heat two tablespoons of olive oil in a skillet and brown the braciole on all sides until nicely caramelized.
  • Peel and dice the onion and saute in the olive oil and salt in a heavy bottomed stock pot until the onion is translucent (about 12 minutes).
  • Add the garlic and herbs, saute until garlic is cooked and fragrant, but not burned.
  • Deglaze by adding the red wine. Cook until the wine is reduced in volume by half.
  • Add the tomatoes and tomato paste. Bring to a simmer,
  • Add the browned braciole and allow the sauce to simmer on very low heat for an hour to an hour and a half. This cooks low and slow. Be sure to stir the sauce frequently so it doesn't burn on the bottom. If the sauce becomes too thick, thin it by adding a bit of water.
  • Simply mix together the ingredients. Sprinkle gremolata on top of dish before serving for a bright citrusy note.

300 g Tomato Passata
3 cloves garlic (crushed)
2 cups water or chicken bouillon
1 tbsp dry basil
1 tbsp dry oregano
1 tsp salt
1 tsp pepper
4 garlic cloves (crushed)
1/2 cup fresh basil
1/2 cup Parmesan cheese (grated)
1 tsp salt
1/2 cup Italian breadcrumbs
1 tsp pepper
900 g thin flank steak (beef)
150 g provolone cheese
125 g prosciutto
1 tbsp vegetable oil (for searing the meat)

Steps:

  • In a bowl mix the breadcrumbs, the freshly cut basil, the Parmesan cheese, salt, pepper, and crushed garlic. Mix all the ingredients and keep aside.
  • Cut the meat if not already cut in think steaks.
  • Tenderized the meat on both sides. Lay flat the meat on a wood plank, cover them with plastic and slam them on each side with a meat hammer or a rolling pin.
  • Lay flat the tenderized piece of meat, place a slice of provolone cheese on it, add a slice of prosciutto ham and on top add some filling into one side of it all.
  • Take one side of the meat a start rolling over the filling and continue rolling until the end of the meat. Place a toothpick through or use some butcher twine to keep it close.
  • There is two-step to cook perfectly the Braciole. First, add some vegetable oil into a hot skillet, add the Braciole roll and sear the roll on each side.
  • When the rolls are nicely colored, place the rolls into a deep baking dish and remove the toothpick or the twine.
  • Now add on top of the Braciole, the tomato Passata, the crushed garlic, the basil, the oregano, salt, pepper and the water (chicken bouillon).
  • Place the baking dish uncovered in the oven at 375 degrees for 45 minutes. The meat will melt into your mouth.

Number Of Ingredients 23

1 pound beef top round cut into 4 thin slices, about ¼ inch thick
Salt and freshly ground black pepper
3 tablespoons extra virgin olive oil
4 slices prosciutto ham
2 slices Provolone cheese, cut in half
For the Filling:
½ cup fresh breadcrumbs combined with 2 tablespoons milk (soak for at least 20 minutes)
2 tablespoons grated Parmesan cheese
2 tablespoons pine nuts
2 tablespoons raisins
2 cloves garlic, minced
1 tablespoons fresh parsley, chopped
1 teaspoon fresh rosemary, chopped
For the Tomato Sauce:
1 medium yellow onion, chopped
1 clove garlic, minced
½ cup dry red wine (such as pinot noir)
1 (28 oz) can stewed tomatoes, crushed with your hands in a bowl, discarding the hard cores
1 teaspoon salt
¼ teaspoon freshly ground black pepper
1 tablespoon fresh parsley, chopped
2 tablespoon fresh basil, chopped
Basil leaves, torn, for garnish

Steps:

  • For the Filling: Combine all ingredients in a small bowl.
  • Pound the beef slices until they're about ¼ inch thick. Sprinkle with salt and pepper. Lay a slice of Parma ham on each slice of beef, followed by ½ slice of Provolone and then place 2 tablespoons of the filling in the center. Slightly fold in the sides of the beef, lengthwise, fold one of the ends in, then starting with the other end roll up the slices of beef, pressing firmly so that's it's good and tight. Secure either with toothpicks or wrap the rolls "gift package" style with some thread. (Remember to remove them before serving!)
  • Heat the olive oil in a Dutch oven over medium-high heat. Add the beef rolls, seam side down to seal the rolls. Generously brown the beef on all sides. Transfer the rolls to a plate and set aside.
  • Add the onions and garlic to the Dutch oven and saute until they're soft and translucent, about 5 minutes. Add the red wine and bring to a boil, cooking until most of the wine is evaporated, about 3-4 minutes, deglazing the bottom of the pan.
  • Add the crushed tomatoes, salt and pepper. Bring to a boil and simmer for 2 minutes. Return the beef rolls and add just enough water to the pot until the beef rolls are submerged and covered. Return to a boil, reduce the heat to low, cover, and simmer for about 3 hours or until fork tender.
  • Add the parsley and basil and simmer for another 2 minutes. Add salt and pepper to taste.
  • To serve traditional-style, boil some pasta and serve with the sauce either as a first course, followed by the beef rolls and a leafy green salad.

1 lb top round steak
4 slices mozzarella cheese
1/4 cup freshly grated parmesan cheese
2 tablespoons garlic powder
salt and pepper, to taste
2 tablespoons olive oil
28 ounces pasta sauce

Steps:

  • Pound the steak very thin and cut into 4 pieces.
  • Place a slice of mozzarella on each piece, then top with parmesan, garlic powder, salt and pepper.
  • Roll each piece up tightly and secure with a string.
  • Heat the olive oil in a large nonstick skillet and brown the rolls evenly on each side.
  • Drop them in your favorite pasta sauce and allow them to simmer for 2 hours or until tender and cooked through. (The meat will add a wonderful flavor to your sauce!).
  • Remove the strings and serve.
  • (Alternative: Assemble and brown the beef rolls the night before and store them in the fridge. Then drop the rolls and the sauce in your crockpot and cook on low for 8 hours the next day).

Steps:

  • In a medium bowl, combine the bread crumbs, pecorino Romano, ½ cup (20 g) chopped basil, provolone, parsley, 5 minced cloves of garlic, salt, pepper, and the olive oil. Stir and set aside.
  • Lay the flank steak on a cutting board. Season both sides with salt and pepper. Cover the the meat with a sheet of parchment paper. Using a meat mallet or rolling pin, pound the steak until it's ¼ inch (6 mm) thick.
  • Remove the parchment and sprinkle the bread crumb mixture evenly over the steak.
  • Starting from the bottom, roll the meat into a log. Using butcher's twine, tie up the roll so it holds its shape while cooking. Season with salt and pepper.
  • Heat the canola oil in a large Dutch oven over high heat. When the oil is shimmering, add the steak roll and, without moving it, cook until a dark brown crust forms on one side, about 3 minutes. Turn the roll and repeat until all sides and the ends have been seared. Remove the roll from the pan and set aside.
  • Preheat the oven to 350°F (180°C).
  • Add the butter, carrot, onion, celery, remaining 3 cloves of garlic, salt, and pepper to the pan and cook until caramelized, about 5 minutes.
  • Add the white wine and stir to loosen any brown bits from the bottom of the pot. Cook until the wine reduces and the pan is slightly dry again.
  • Add the tomatoes, bay leaves, oregano, and red pepper flakes. Stir to combine.
  • Return the beef roll to the pot. Cover and bake for 1 hour, flipping the roll halfway through (if the sauce is drying up too much, add more crushed tomatoes or water), until the beef is tender.
  • Slice the braciole and arrange on a serving platter with the sauce. Serve the braciole with orecchiette or polenta. Garnish with grated pecorino Romano and fresh basil.

1 (2 -2 1/2 lb) round steaks, Butterflied
1 lemon, grated rind
salt and pepper
2 1/2 teaspoons oregano
1/4 lb prosciutto, thinly sliced
2 cups breadcrumbs
1/4 lb parmigiano-reggiano cheese, grated
1/2 cup chopped parsley
1/2 teaspoon rosemary
1/2 cup flour
1/4 cup olive oil
4 garlic cloves, finely chopped
1 small onion, diced
1/2 cup dry red wine
4 -6 tomatoes, with their juice diced or
2 (15 ounce) cans diced tomatoes

Steps:

  • Open the butterflied steak and, with waxed paper covering it, pound evenly with a meat mallet until approximately 1/4 inch thick. Rub the lemon rind, salt, pepper, and 1-1/2 teaspoons oregano into the meat.
  • Lay the prosciutto slices evenly on the steak. Sprinkle the bread crumbs, grated Parmesan, & parsley evenly over the prosciutto slices. Roll the braciole tightly, taking care while rolling to tuck in both ends so as to hold in the filling while cooking. Tie the roll with strings at 1-1/2 to 2 inches intervals.
  • Rub the rosemary between your palms to break it up. Season the flour with the rosemary, remaining oregano, and salt and pepper. Rub this mixture onto the surface of the beef roll.
  • In a pan large enough to hold the roll, heat the olive oil over moderately high heat. Add the beef roll, turning to brown the entire surface.
  • Add the garlic and onion and cook until the garlic begins to turn golden brown. Add the wine and cook for one minute.
  • Add the tomatoes with their juice and salt & pepper to taste. Cover the pan and simmer over low heat for 1 to 1-1/2 hours or until very tender when pierced with a fork. If liquid appears to be diminishing during the cooking, splash a bit more wine into the pan.
  • Remove from pan & place on a heated platter. Remove the strings, cut into 1/2 inches thick slices, pour the tomato mixture over the slices and serve.
  • Note: If serving cold, place the braciole on a platter, pour the sauce over it, cover tightly with plastic wrap or foil, and refrigerate. Before serving, bring to room temperature, remove the strings, and cut into slices as mentioned previously. The slices can be served on a bed of lettuce, accompanied by freshly baked bread.
