1 small zucchini, sliced
1 medium carrot, shredded
1 small onion, sliced, separated into rings
1 teaspoon chopped fresh or 1/4 teaspoon dried basil leaves
1 teaspoon chopped fresh or 1/4 teaspoon dried oregano leaves
1/4 teaspoon pepper
1 medium tomato, chopped (3/4 cup)
3 pita (pocket) breads (6 inch)
1/3 cup shredded mozzarella cheese

Steps:

  • Spray 10-inch skillet with cooking spray. Heat over medium-high heat. Add chicken; stir-fry 3 to 4 minutes or until no longer pink in center. Add zucchini, carrot, onion, basil, oregano and pepper; stir-fry 2 to 3 minutes longer or until vegetables are crisp-tender. Stir in tomato.
  • Cut pita breads in half to form pockets; fill with chicken mixture. Sprinkle with cheese.

1/3 cup giardiniera, drained (Italian pickled vegetables)
2 ounces provolone cheese, sliced and cut into small cubes
1/4 cup fresh parsley, chopped
3 tablespoons Italian salad dressing
1/4 teaspoon dried oregano
4 pita pockets, halved and gently opened
8 leaves romaine lettuce or 8 leaves red leaf lettuce
cooking spray (optional)

Steps:

  • Combine chicken, pickled vegetables, cheese, parsley, dressing and oregano in medium bowl; mix well.
  • Line each half with lettuce leaf. Divide chicken mixture evenly among pita pockets.

2 (4 ounce) boneless skinless chicken breast halves
1/2 cup bean sprouts
1/4 cup diced water chestnut
1/4 cup sliced green onion
1 tablespoon rice vinegar
1 tablespoon minced garlic
1 tablespoon low sodium soy sauce
1 teaspoon sesame oil or 1 teaspoon peanut oil
1 (7 inch) whole wheat pita bread, cut in half crosswise
2 leaves lettuce leaves

Steps:

  • Place chicken in a medium saucepan; add chicken stock to cover. Bring to a boil. Reduce heat to medium, and cook, uncovered, 15 minutes or until chicken is done. Remove from liquid. Let chicken cool to touch. Chop chicken into bite-size pieces.
  • Combine chicken, sprouts, water chestnuts,green onions, and garlic. Combine vinegar, soy sauce, and oil; pour over chicken mixture, tossing gently.

1/2 cup plain Greek yogurt
1 lime (juice and zest)

Steps:

  • In a small bowl, mix together chicken, tomato, cucumber, and red onion. Toss with red wine vinaigrette and set aside
  • In a separate small bowl, mix together all ingredients for the lime crema.

4 medium lemons, divided
4 tablespoons olive oil
4 garlic cloves, minced
2 teaspoons dried oregano

12 pita pocket halves
1 carton (8 ounces) refrigerated tzatziki sauce

  • Cut 3 lemons crosswise in half; squeeze juice from lemons. Transfer to a large bowl or shallow dish. Whisk in oil, garlic, oregano, salt and pepper. Add chicken; turn to coat. 1 pound skinless, boneless chicken breast halves
1 teaspoon garlic powder
1 teaspoon dried thyme
1 teaspoon dried rosemary
3 slices bread, cut into 1/2 inch cubes
butter flavored cooking spray
1 teaspoon garlic salt
1 teaspoon dried parsley
½ pound bacon
1 large head romaine lettuce leaves, torn into bite size pieces
1 (8 ounce) bottle bottled Caesar salad dressing
freshly grated Parmesan cheese to taste
salt and black pepper to taste
1 (10 ounce) package (6-inch) pocket pita bread, halved

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken in a saucepan with garlic powder, thyme, and rosemary; add water to cover. Bring to a boil over high heat, then reduce heat medium-low, cover, and simmer until chicken is tender and no longer pink in the center, about 15 minutes. Remove chicken, let cool, and cut into strips.
  • Meanwhile, place bread cubes on a baking sheet. Spray with butter spray; sprinkle with garlic salt and parsley.
  • Bake bread cubes in preheated oven for 5 minutes. Turn cubes; spray again with butter spray and sprinkle with garlic salt and parsley. Bake another 5 to 10 minutes until golden brown and crunchy. Remove croutons, and let cool.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly browned and crispy. Remove bacon from skillet, drain on paper towels and crumble.
  • Combine chicken, bacon, lettuce, and croutons in a large bowl. Toss with Caesar salad dressing and Parmesan cheese. Season to taste with salt and pepper and toss again. Spoon salad mixture into pita bread halves.
