ITALIAN-ISH GROUND TURKEY WITH RICE
I found a recipe on here and by the time I got through all my changes I realized I had a new recipe. The family loved it and told me I should post, so here it is. The seasoning gives the turkey a sausage flavor. My husband thought I could have added more rice to stretch it even more but I think the 4 cups was pleanty. Add less if you want it more meaty. Don't be afraid to try brown rice or some other favorite. Also, I think this would be GREAT with broccoli rabe in stead of escarole but I'm the only one in the house who likes it. If you like a little spice add some red pepper flakes when you add the other herbs. This is a quick and easy meal. I figured 30 min. from start to finnish but that depends on how fast you chop. I have a rice cooker so I don't have to babysit the rice and usually chop as I go, so my times may be off.

Steps:
- Cook the ground turkey and onion in a large skillet until the turkey is cooked through. If your turkey is on the fatty side than you may not need the oil but if not, use it.
- Add the herbs including the garlic and cook for an other minute and stir to combine all the flavors. Drain off the fat if necessary.
- Add the bell pepper. Let cook for a few minutes than add the escarole and pour the chicken broth over the top.
- Cook and stir to wilt the escarole and get the pepper to your desired level of doneness (I like it to have a little bite to it). The broth will evaporate quickly but if it doesn't don't worry, the rice will soak it up.
- Add the cooked rice and stir to combine.
- Serve hot.

TURKEY RICE
What ultimately sets a great holiday leftover dish apart from the rest? The answer: lots of flavor, not a lot of ingredients, and the ability to stand on its own rather than remind us of the meal it came from. This turkey rice, which is in fact a little more turkey than rice, checks all the boxes, and a fresh, 3-ingredient salsa adds the bright finishing touch.

Steps:
- Turkey:
- If using a raw turkey breast, sprinkle turkey all over with salt; place on a wire rack set inside a rimmed baking sheet and chill, uncovered, at least 6 hours and up to 1 day. (This will result in tender, flavorful meat.)
- Place turkey, scallions, ginger, and star anise in a stockpot. Pour in water to cover turkey by 1". Bring to a boil, then reduce heat and simmer, skimming foam from surface as needed, until an instant-read thermometer inserted into thickest part of breast registers 150°F, about 75 minutes. Transfer turkey to a cutting board and let sit until cool enough to handle (internal temperature should rise to 165°F while the turkey cools).
- Strain stock through a fine-mesh sieve into a large heatproof bowl; discard solids. Pour 3 cups stock into a large heatproof measuring glass and set aside for sauce; reserve remaining stock for another use.
- Shred turkey with a fork or your hands, removing and discarding skin (or shred along with meat if you prefer).
- If starting with leftover turkey: Preheat oven to 350°F. Spread turkey in an even layer on a rimmed baking sheet, drizzle stock over, and cover tightly with foil. Cook until warmed through, about 15 minutes.
- Sauce:
- Heat lard in a medium saucepan over medium-low. Add shallots (it will not look like enough fat at first) and cook, stirring often, until softened into a single layer, then continue to cook, stirring occasionally, until golden brown, 20-25 minutes total. (Shallots will crisp as they cool.)
- Drain shallots in a fine-mesh sieve set over a heatproof bowl. Transfer shallots to paper towels to drain; set aside. (You don't need to salt them.) Heat shallot fat in a medium saucepan over medium. Add garlic and cook, stirring often, until fragrant and just starting to color, about 3 minutes. Add michiu, soy sauce, sugar, 2 tsp. white pepper, and reserved 3 cups stock (if you are using leftover turkey, use chicken broth instead). Bring to a boil, then reduce heat and simmer, stirring occasionally, until sauce is reduced by half and glossy, about 25 minutes. Taste and add up to 2½ tsp. more white pepper if desired.
- To serve, divide rice among shallow bowls and pile shredded turkey over. Spoon 2-3 Tbsp. sauce over each bowl and top with reserved fried shallots.
GROUND TURKEY & RICE
My family was tired of the usual Chicken & Rice dish that I make so I came up with this one dish meal that's easy to throw together. They like this more than the Chicken & Rice. If you like more rice you can increase it by another 1/2 cup. You could even experiment using other vegetables i.e., frozen corn niblets, peas, green beans, etc.

Steps:
- Sprinkle the seasoned salt and (if using) fennel seed over the ground turkey. Mix well.
- Spray large skillet with vegetable spray and place turkey mixture in pan. Over medium-high heat cook and stir Turkey until browned; drain well. While the Turkey is draining add the vegetables to the hot pan and saute for about 5 minutes. Add the Turkey back into the pan and mix. Sprinkle rice over mixture and pour in Chicken broth. When broth comes to a boil reduce heat, cover and simmer for approx 20-30 minutes, stirring occasionally until liquid is absorbed. When the rice is cooked if there is still too much liquid in the pan remove cover, increase the heat and continue cooking until all liquid is absorbed.
