CRISPY ITALIAN OVEN CHICKEN



Crispy Italian Oven Chicken image

This crispy chicken is made in the oven without any breading at all; the only ingredients you need are the chicken, a drizzle of oil, and a sprinkling of spices.

Number Of Ingredients 5

2 1/2 - 3 pounds bone-in chicken thighs
1 tablespoon olive oil
1 1/2 teaspoons Italian seasoning (store-bought is fine)
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees. Line a large baking tray or half sheet pan with foil and place all the chicken pieces on it, skin side down. Sprinkle with salt, pepper, and spices and flip each piece skin side up. Drizzle a little oil over the skin on each piece of chicken and rub lightly to coat. Sprinkle again with salt, pepper, and spices.
  • Bake for one hour, until most of the fat has rendered out of the chicken and the skin is golden brown and crisp. Remove from the oven and let rest about 5 minutes before serving. Enjoy!

It's a new year and I'm assuming some of you have made a resolution or two to lose some weight. You've come to a good place then; I'm here to help. Nutrition is key to a healthy lifestyle but it doesn't matter how disciplined you are, if you don't enjoy what you're eating then eventually you're going to give up. That's why I love this recipe; it's virtually fat free and is loaded with flavour and protein. Use this as a method instead of a recipe and experiment with the spices and herbs you love. 1 tsp (dried) oregano
1 tsp garlic powder
½ tsp salt
¼ tsp (dried) thyme
¼ tsp pepper
4 Boneless, skinless chicken breasts, fat trimmed off (about 3.5 oz/125 g each)

Steps:

  • Combine the oregano, garlic powder, salt, thyme and pepper and rub it all over the chicken breasts, coating them completely on both sides.
  • Let the rub sit on the chicken for 5 - 10 minutes before cooking.
  • Cook the chicken according to my Guide For Awesome Grilled Chicken.
  • Transfer the chicken breasts to a cutting board to rest for at least 5 minutes and then cut them into strips.
  • Serve on with your favourite pasta, green salad, Caesar salad, or on a sandwich, you get the idea!

ITALIAN-RUBBED CHICKEN



Italian-Rubbed Chicken image

A zesty way to prepare chicken on the stove. I came up with it when my oven stopped working and had to prepare everything on the stove top. I typically use the Kraft Zesty Italian dressing and have only used chicken legs and thighs. You can use other parts of the chicken, but cooking times may vary.

3 -4 chicken legs
3 -4 chicken thighs
1/2 cup Italian dressing

Steps:

  • Place the chicken in a bowl and add the dressing.
  • Let marinate for at least 30 minutes (1-2 hours is best) in the fridge. Shake it or mix it occasionally.
  • Turn the stove on to medium heat and place the chicken in to a frying pan and cover for 10 minutes and save the leftover dressing.
  • Turn over after 10 minutes and cover and cook for another 10 minutes. (if it seems to be burning turn down the heat).
  • Uncover and add the leftover dressing, turning each piece to coat it.
  • Continue to cook for about another 10-15 minutes turning occasionally. The dressing will become dark golden color.
  • Enjoy!

Porchetta-a traditional Italian stuffed pork roast-is delicious, but so laborious. This chicken has all the same garlicky, herby flavors-not to mention lots of crispy bacon bits-and it's optimized for a weeknight meal.

2 teaspoons fennel seeds
1 (3 1/2-4-pound) chicken, halved, or 4 pounds chicken legs (thigh and drumstick)
Kosher salt, freshly ground pepper
8 ounces bacon, finely chopped
2 garlic cloves, finely grated
1 cup coarsely chopped parsley
1/4 cup olive oil
2 teaspoons finely grated lemon zest
1 teaspoon finely chopped thyme
1/2 teaspoon crushed red pepper flakes
Special Equipment
A spice mill or a mortar and pestle

Steps:

  • Toast fennel seeds in a dry small skillet over medium, tossing occasionally, until fragrant, about 2 minutes. Transfer to a small plate and let cool. Finely grind in spice mill or with mortar and pestle.
  • Pat chicken dry and sprinkle with half of fennel; season generously with salt and pepper; set aside.
  • Preheat oven to 425°F. Cook bacon in a large ovenproof skillet over medium heat, stirring occasionally, until bacon is crisp, 8-10 minutes. Using a slotted spoon, transfer bacon to a medium bowl. Pour off all but 3 Tbsp. bacon fat; reserve for another use. Increase heat to medium-high and carefully place chicken halves, skin side down, in skillet, pressing down so skin makes good contact with surface of pan. Cook until skin is golden brown and starting to crisp, about 5 minutes. Turn chicken; transfer skillet to oven and roast until an instant-read thermometer inserted into the thickest part of thigh registers 165°F, 35-40 minutes. Transfer chicken to a cutting board and let rest 10 minutes.
  • While chicken rests, add garlic, parsley, oil, lemon zest, thyme, red pepper flakes, and remaining fennel to bowl with bacon. Mix well; season with salt and pepper.
  • Serve chicken drizzled with pan juices and topped with bacon mixture.
