This recipe for Italian-style Swiss chard has been in the family for years. If you like garlic, this recipe is for you.

1 bunch Swiss chard
1 cup water
1 tablespoon salt
2 tablespoons olive oil
4 cloves garlic, coarsely chopped
⅛ teaspoon crushed red pepper flakes
salt to taste

Steps:

  • Wash the Swiss chard and cut into 1 inch strips. Separate the thick and tough stalk sections from the upper leafy strips.
  • Bring the water and 1 tablespoon of salt to a boil in a large saucepan.
  • Cook the stalk sections in the salted boiling water for 2 minutes. Stir in the leafy strips and cook until the leaves are wilted and the stalks are fork tender, about 6 minutes. Drain and set aside.
  • Heat the olive oil, garlic, and red pepper flakes in a large skillet over medium heat until aromatic, about 3 minutes. Add the drained Swiss chard, cook and stir for 2 minutes; season with salt to taste.

2 tablespoons butter
2 tablespoons olive oil
1 tablespoon minced garlic
½ small red onion, diced
1 bunch Swiss chard, stems and center ribs cut out and chopped together, leaves coarsely chopped separately
½ cup dry white wine
1 tablespoon fresh lemon juice, or to taste
2 tablespoons freshly grated Parmesan cheese
1 pinch salt to taste

Steps:

  • Melt butter and olive oil together in a large skillet over medium-high heat. Stir in the garlic and onion, and cook for 30 seconds until fragrant. Add the chard stems and the white wine. Simmer until the stems begin to soften, about 5 minutes. Stir in the chard leaves, and cook until wilted. Finally, stir in lemon juice and Parmesan cheese; season to taste with salt if needed.

Number Of Ingredients 6

300g Swiss or rainbow chard , leaves and stalks separated
2 tbsp good-quality olive oil , plus a drizzle
1 garlic clove , sliced
1 red chilli , deseeded and chopped
250g pouch cooked puy lentils
squeeze lemon juice

Steps:

  • Cut the chard stalks into batons and roughly shred the leaves. Heat half the olive oil in a large sauté pan. Add the chard stalks, garlic, chilli and a splash of water. Cook over a low heat for 8-10 mins until softened, then add the leaves and cook until completely wilted.
  • Prepare the lentils following pack instructions. Take the chard off the heat and stir through the lentils. Season, dress with more olive oil and the lemon juice, then serve.

Number Of Ingredients 4

2 pounds Swiss chard, rinsed, trimmed, and coarsely chopped
2 cloves garlic, green germ removed
Sea salt and hot red pepper flakes (or freshly ground black pepper)
2 tablespoons to one quarter cup extra virgin olive oil

Steps:

  • 1. Place the chard in a large stockpot with the rinse water still clinging to it and set on medium-high heat. When the chard begins to sizzle stir it and cover. Reduce heat to medium and cook until chard is wilted but still has texture and the leaves have turned dark green while the stems have turned a translucent grey, about 20 to 25 minutes. Remove from heat.
  • 2. Heat at least 2 tablespoons of oil with the garlic in a skillet over medium heat and cook until the garlic begins to turn golden, about 5 minutes. Add the Swiss chard, squeezing out some of the liquid before adding it to the oil. Cook, stirring, until the Swiss chard has wilted entirely and the garlic is cooked through, about 20 minutes. Season to taste with salt and pepper. Remove from the heat and transfer to a warmed platter. Drizzle with the remaining olive oil and serve.

1 pound Swiss chard
3 tablespoons extra-virgin olive oil
3 cloves garlic, sliced
1/4 cup chopped scallions
Salt and freshly ground black pepper
1/4 cup freshly grated Parmesan cheese

Steps:

  • Rinse the Swiss chard. Leave any water clinging to it. Chop it fine.
  • Heat the oil in a large skillet. Add the garlic, saute for a minute or so, then add the Swiss chard. Cook, stirring, until the Swiss chard begins to wilt. Cover the pan and cook over low heat for about 15 minutes.
  • Uncover and cook, stirring, a few minutes longer. Stir in the scallions, season to taste with salt and pepper. Sprinkle with cheese and serve.

This is a recipe adapted from "Wild About Greens" by Nava Atlas. I simplified the instructions and made some changes so it is more in keeping with our Nutritarian eating style. You can reduce prep time by using frozen onions and mushrooms and jarred garlic. This also would be good with 2 oz cooked whole wheat pasta per serving mixed in.

16 ounces chard leaves, any variety, chopped
1 large onion, halved and thinly sliced
4 garlic cloves, minced
4 mushrooms, halved and sliced
1/4 cup olive, pitted and sliced (I like Kalamata, packed in brine)
1 (16 ounce) can diced tomatoes
1 (16 ounce) can low-sodium black beans, drained and rinsed
2 tablespoons dried parsley
1/2 teaspoon italian seasoning
1/4 teaspoon basil
1/2 teaspoon oil (to coat pan)
1/4 cup dry sherry or 1/4 cup water

Steps:

  • Chop chard and set aside. I like to cut it into crosswise strips then cut the strips into 2 inch pieces.
  • Prepare onion, garlic and mushrooms and set aside. They may be put in the same bowl since they will be added at the same time.
  • Chop olives and mix with tomatoes beans, parsley, Italian seasoning and basil. Set aside.
  • Coat large covered frying pan or dutch oven (at least 5 quarts) with oil. Add onion, garlic and mushrooms and sauté over medium heat until soft, adding small amounts of sherry or water if needed to prevent sticking.
  • Add rest of sherry and as much chard as will fit. Cover and allow greens to wilt down briefly, mixing so chard wilts evenly. Continue to add the chard until all of it is in the pan.
  • Cook until chard is wilted but still bright green, about 2 minutes.
  • Stir in tomato, olive, bean mixture and heat through, stirring frequently.

Inspired by the Italian dish of sautéed puntarelle (a Italian variety of chicory) and white beans, this recipe makes a satisfying vegetarian main course or a hearty side dish for roast chicken or sausages. It opts for canned white beans, for the sake of weeknight convenience, and Swiss chard, which is much milder than puntarelle and easier to find in the U.S. Kale or escarole would also work well, if that's what you've got. On that note, grated Pecorino Romano cheese gives the broth a more pungent element, but Parmesan will work in its place. Serve in shallow bowls with toasted country bread to mop up the garlicky broth.

Steps:

  • In a 12-inch skillet or Dutch oven, heat the olive oil over medium. Add the fennel, onion and rosemary, and cook for 4 to 6 minutes, stirring occasionally, until tender. Add the garlic and red-pepper flakes and cook until fragrant, about 1 minute.
  • Begin adding handfuls of the greens, cooking and stirring until leaves wilt.
  • Add the white beans, broth and 1/4 teaspoon black pepper, and stir to combine. Bring to a boil, then turn the heat to low and simmer, mashing some of the beans with a wooden spoon, until the liquid has reduced and thickened, 6 to 8 minutes.
  • Off the heat, stir in the lemon juice, then the mozzarella, if using, and Pecorino Romano. Taste and season with salt and pepper. Divide among shallow bowls and top with more Pecorino Romano. Serve with toasted bread and a dish of red-pepper flakes on the side.

2 teaspoons extra virgin olive oil
1 1/2 teaspoons garlic (minced or pressed)
1 tablespoon capers, mashed
3 teaspoons balsamic vinegar

  • Trim stem ends of chard. Thinly slice stems crosswise up to base of leaves; set slices aside. Reserve a few whole leaves to line serving dish; coarsely chop remaining leaves.
