JALAPENO POTATO SOUP
Steps:
- In a pot, melt butter and add leeks. Sauté for about 5 minutes on medium heat, stirring occasionally.
- When ready, increase the heat to high. Add diced potatoes, jalapenos, caraway seeds, salt, pepper and stock. Stir, cover with lid and bring to a boil. After, reduce the heat to low and simmer until the potatoes are cooked (about 10 minutes).
- Finally, stir in cheddar and heavy cream. Cook for about 2-3 minutes before turning off the heat completely. Blend until smooth with immersion blender and taste. Add more seasoning, if needed.
- Top with fried pancetta/bacon or cheese or jalapenos.
- Best served warm with bread or dinner rolls.

- Place broth, celery, onion and garlic salt in a large saucepan over high heat, and cook until mixture thickens, 10 minutes.

- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
- While bacon is cooking, melt butter in a pot over medium-high heat. Add jalapeno peppers and garlic; cook until soft, 3 to 4 minutes. Add chicken broth, dried cilantro, Cajun seasoning, and onion powder; stir up any browned bits from the bottom of the pot. Bring to a boil. Reduce heat and add chicken. Simmer for 10 to 15 minutes.
- Add cream cheese, most of the Cheddar cheese, and heavy cream; simmer, stirring occasionally, until cheese has dissolved, about 5 minutes. Season with salt and pepper.
- Serve soup with remaining cheese. Crumble bacon on top.

- Preheat oven to 400. Prepare mashed potatoes according to pouch directions and stir in cream cheese. Set aside.
- While potatoes set up, slice jalapeños in half lengthwise, clean out seeds and membranes, and place onto parchment paper-lined baking sheet.
- On floured surface, cut each sheet of pastry into four squares. Then cut each square in half corner-to-corner making 16 triangles. *I like to use my fluted-edge pastry wheel for this, but a pizza wheel works just fine, too.
- Overfill each jalapeño half with potato mixture, and wrap each with a strip of prosciutto, place onto wide ends of pastry triangles and roll up towards pointed end. Place pointed end-down back onto lined baking sheet.
- Bake in 400 degree oven for 12-15 minutes until golden.
- *Before baking, you can brush outsides and top with an egg wash, but isn't necessary.
- **Serve with warmed raspberry jam if desired for dunking.

- Fill a heavy saucepan with canola oil to about 2 inches deep and place over medium high heat. Using a candy thermometer, heat oil until it reaches 325 degrees.
- Place shredded hash browns in food processor (working in batches if necessary) and pulse until pieces are broken down into smaller bits. 8 - 10 pulses.
- Place chopped hash browns in a bowl and add cornstarch, peppers, and 1 tsp salt. Mix to combine.

- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lay bacon strips on the foil in an even layer.
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 15 minutes. Drain and allow to cool slightly.
- Place bacon in the preheated oven and bake until browned and crisp, about 15 minutes. Drain bacon slices on paper towels and chop into tiny pieces when cool enough to handle. Leave oven on.
- Mix cream cheese, Gouda cheese, milk, butter, chives, salt, and pepper together in a bowl. Mix in chopped bacon.

5-Ingredient Fix Contest Entry. This recipe is a variation of a mac & cheese dish I came up with a few years ago. I was looking for a way to bring these two great flavors together that could serve as an appetizer or a full meal. I came up with a soup. Its different, delicious and filling!

Steps:
- In a saucepan bring Simply Potatoes 'Diced Potatoes with Onion', chicken broth and jalapenos to a boil. Reduce heat to low. Simmer (uncovered) until potatoes are fork tender (about 20 to 25 minutes). Once potatoes are done, remove from heat.
- Pour half of the mixture into a separate (mixing) bowl. Use a hand blender to puree mixture until smooth. If you do not have a hand blender, you can place ½ the mixture into a blender (let it cool first) and puree until smooth.
- Pour the pureed mixture back into the saucepan with the other half. Turn heat to medium/low, add half & half and simmer until mixture is heated throughout (about 3-5 minutes).
- Slowly stir in shredded gouda (one hand full at a time). Wait until each handful is fully melted before adding another. Once all the cheese is melted turn heat off.
- Serve and enjoy!
