SUNOMONO (JAPANESE CUCUMBER SALAD)

Sunomono (Japanese Cucumber Salad) image

This version of sunomono uses more readily available English or slicing cucumbers, but if you live near an Asian market you could substitute Japanese cucumbers. Some recipes call for salting the cucumbers first, but we found that squeezing them in paper towels removed enough excess moisture without adding additional sodium. This Japanese-inspired salad is cool, crisp and simply delicious.

Number Of Ingredients 5

2 medium cucumbers, or 1 large English cucumber
¼ cup rice vinegar
1 teaspoon sugar
¼ teaspoon salt
2 tablespoons sesame seeds, toasted (see Tip)

Steps:

  • Peel cucumbers to leave alternating green stripes. Slice the cucumbers in half lengthwise; scrape the seeds out with a spoon. Using a sharp knife or wide vegetable peeler, cut into very thin slices. Place in a double layer of paper towel and squeeze gently to remove any excess moisture.
  • Combine vinegar, sugar and salt in a medium bowl, stirring to dissolve. Add the cucumbers and sesame seeds; toss well to combine. Serve immediately.

SPICY CUCUMBER SALAD

Spicy cucumber salad image

Cool yet fiery, this Asian-inspired cucumber salad is a barbecue must. It's also great with chicken

Provided by Barney Desmazery

Categories     Dinner, Side dish, Starter, Vegetable

Time 30m

Number Of Ingredients 12

1 large cucumber , peeled
1 tsp golden caster sugar
1 tbsp rice white wine vinegar
2 tbsp soy sauce
1 tbsp sesame oil
small knob of ginger , finely chopped
2 garlic cloves , finely chopped
1 large red chilli , halved, deseeded and finely sliced
2 spring onions , finely sliced
large handful coriander leaves
1 tbsp olive oil
4 chicken breasts , skin on

Steps:

  • Slice the cucumber in half lengthways and use a teaspoon to scoop out the seeds. Slice cucumber into thick diagonal chunks. Tip it into a bowl and sprinkle with the sugar, vinegar and large pinch of salt. Leave for about 30 mins in the fridge. Meanwhile, tip the other salad ingredients into a bowl. Drain the cucumber and tip in with the rest of the ingredients.
  • Heat a griddle pan or heavy-bottomed frying pan until hot, but not smoking. Rub the chicken with oil, season with salt and pepper and sear, skin-side down, for about 8 mins until the skin is crisp and brown and the chicken is practically cooked. Flip the chicken over and give it a few mins more on the flesh side to finish it off. Leave the chicken to rest, then slice each breast on an angle and serve with a pile of cucumber salad.

Grandma's Cucumber and Onion Salad image

Both of my grandmothers made this salad every summer when their gardens produced baskets of cucumbers. It's a cool, fresh side dish for any meal. One of my grandmas omitted the green pepper and the celery seed. She also put ice in it to chill it quickly and cut the vinegar taste.

  • If you are using Japanese cucumber, this step called “Itazuri” is necessary. Wash the cucumber and sprinkle it with salt. With both hands, rub the cucumber against the cutting board. It removes the pointy bumps on the cucumber and helps absorb the dressing.
  • Alternately peel ½-inch (1.3 cm) strips lengthwise, leaving a strip of the skin intact. With this method, the cucumber slices have some decorative dark green accents and a little bit of extra crunchiness. Cut the cucumbers into thin slices, about ⅛-inch (3 mm) thickness (or even thinner).
  • Sprinkle salt and rub the cucumber slices gently with your hands. After 5 minutes or so when they are wilted, quickly rinse the cucumber slices under cold water. Squeeze the cucumber to get rid of the water.
  • Put dried wakame in a small bowl and soak in water for 10 minutes. Squeeze dry to get rid of the water.
