HIBACHI SWEET CARROTS
Super easy sweet carrots that go perfectly as a side dish to your favorite homemade hibachi dinner!

Steps:
- Place the carrots in a small pot with 1 cup of water (approximately), enough water to cover the carrots by about half. Add the sugar and salt to the water.
- Bring the carrots to a boil and let boil uncovered for 5-7 minutes, testing after 5 minutes, until tender.
- Drain any remaining water and return the carrots to the hot pot. Add the butter and swirl to coat and melt.
- Serve as a small side dish to your favorite dinner. enjoy!

- Place the carrots into a large pot and cover with salted water. Bring to a boil over high heat until tender, about 15 minutes. Drain and allow to steam dry for a minute or two.
- Return the pot to the stove; reduce the heat to medium-low. Melt the butter in the pot. Stir in the honey and brown sugar; add the carrots and stir until evenly coated; cook another 5 minutes

- Bring a large pot of water to boil, add the carrots and parboil for 5 minutes. Drain and rinse with cold water.
- In a large glass dish, combine the remaining ingredients. Add the carrots and marinate for 30 minutes.
- Prepare an outdoor grill with an oiled rack set 4 inches from the heat source. Using a oiled wire hinged vegetable basket or just directly on the rack ( whichever you find easier), grill the carrots, turning constantly for a total of 10 minutes, until slightly charred.

- Prep Your Japanese Carrots. Peel carrots and chop off their tops and tails with a sharp knife. Slice the carrots into thick pieces, bias slices, coins or batons.
- Boil Your Carrots. Bring a pan of salted water to a boil and add the carrots. Make sure there is enough water to fully cover all the carrots.
- Simmer Your Carrots. Turn the heat down so that the water is simmering. Simmer the carrots until they are cooked but still a little firm. Take a bite to determine whether they are done enough.
- Drain and Return to Pan. Drain the carrots in a colander and immediately slide them back into the pan. Put the pan back on the stovetop and turn the heat to medium-low.
- Add Some Butter. Add a small knob of butter and stir it into the carrots with a wooden spoon. Use just enough butter to glaze the surfaces of all of the carrots, so add a small amount at a time until the carrots are coated but not swimming in butter.
- Add Some Sweetener. Add a small amount of white sugar, brown sugar, maple syrup or molasses and stir it into the carrots. Or try honey-glazed baby carrots.
- Add More Seasonings. Add optional seasonings, such as lemon or orange zest, grated fresh ginger or a pinch of chili or curry powder. Stir them into the carrots with a wooden spoon.
- Stir Until Shiny. Stir the carrots gently over the heat for about five minutes. The sweetener and butter should thoroughly blend to form a shiny glaze on the carrots.
- Serve and Enjoy. Taste one of the carrots. If you want them to be sweeter, add a little more sugar, honey, molasses or syrup and stir over the heat for a few more minutes.
