2 cans diced tomatoes with green chiles
2 cans shoepeg corn
2 cans pinto beans
2 cans red beans
2 cans black beans
1 pkg taco seasoning
1 pkg ranch seasoning
1.5 lb s ground beef, browned and drained
Toppings:
Shredded cheddar cheese
Sour cream
Tortilla chips

Steps:

  • Add all ingredients to crock-pot. Do not drain liquid from cans of beans or corn, pour all contents of all cans into crock-pot and stir well to mix seasonings!
  • Stir occasionally until warm enough to serve.
  • When soup is warm enough to serve, place in bowl, sprinkle with cheese, put a tablespoon of sour cream on top and serve with a spoon or tortilla chips.

1 small onion, chopped
1 (1 ounce) package taco seasoning mix
1 (15 ounce) can tomato sauce
1 (15 ounce) can whole kernel corn, drained
2 (15 ounce) cans kidney beans, drained
6 cups corn tortilla chips
1 cup shredded Cheddar cheese
½ cup chopped green onion

Steps:

  • In a skillet over medium heat, cook beef and onion until beef is browned; drain. Place beef mixture in slow cooker with taco seasoning, tomato sauce, corn, and beans.
  • Cover, and cook on Low 2 hours. To serve, put a handful of corn chips in each bowl, and top with soup, cheese, and green onions.

1 pound 93% lean ground beef
1 cup chopped onion
4 cloves garlic, minced
2 (15 ounce) cans petite diced tomatoes, undrained
1 (15 ounce) can whole kernel corn, well drained
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can tomato sauce
1 (14.5 ounce) can beef broth
1 (4 ounce) can diced green chile peppers, undrained
1 tablespoon chili powder
1 teaspoon ground cumin
½ cup shredded Cheddar cheese
¼ cup sour cream
coarsely crushed tortilla chips
fresh jalapeno slices
cracked black pepper

Steps:

  • Add beef, onion, and garlic to a 4- to 6-quart Dutch oven. Cook over medium heat, stirring and breaking up lumps, until meat is browned and onion is tender, 5 to 7 minutes.
  • Stir in diced tomatoes, corn, beans, tomato sauce, beef broth, green chiles, chili powder, and cumin. Bring to a boil; reduce heat to low. Simmer, covered, about 20 minutes.
  • Serve soup topped with Cheddar cheese, sour cream, crushed chips, jalapeño slices, and/or black pepper.

1 (1 1/4 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
1 (16 ounce) jar salsa
2 cups shredded monterey jack cheese

Steps:

  • Preheat oven to 325 degrees F (160 degrees C).
  • In a large, heavy skillet over medium-high heat, brown ground beef, and drain fat.
  • Mix in dry taco seasoning.
  • Spoon browned meat into a 9x13 inch glass baking dish.
  • Spoon a layer of refried beans over meat, then salsa.
  • Top with shredded cheese.
  • Bake about 20 to 25 minutes in the preheated oven.

Steps:

  • In a large pot over medium high heat, combine the ground beef and the onions.
  • Saute for about 5 minutes or until onions are tender.
  • Add the tomato juice, corn, beans, tomato sauce and taco seasoning.
  • Stir well
  • Heat throughout, but do not boil.

1 package(s) taco seasoning
1 package(s) ranch dip seasoning
1 can(s) tomato sauce
2 can(s) diced tomatoes
1 can(s) rotel
1 can(s) kidney beans, drained
1 can(s) black beans, drained
1 can(s) pinto beans, drained
1 can(s) whole kernal corn canned, undrained
1 cup(s) water
1 pound(s) hamburger meat

Steps:

  • Open all the cans of beans and drain. Brown meat in a skillet. While it's cooking, mix together beans, corn, tomato sauce, diced tomatoes, rotel, both packs of seasoning, and water. Stir well until both seasonings are dissolved. Let this simmer until meat is done. Once the meat is ready, remove from skillet and drain then add to the pot and bring to a boil for 5 minutes. Reduce heat and cover for 30-45 minutes.
  • Optional: chop 1 whole onion and cook with meat. Topping choices: sour cream, corn chips and/or grated cheese. If the soup is too spicy for your tastes try using mild rotel and mild taco seasoning.
