One of the quickest, tastiest bar cookie recipes I've used. You can alter the taste by changing fruit preserve flavors. It's a perfect cookie to bring to any pot luck function, but make sure you bring the recipe too, people will ask for it!

3 cups all-purpose flour
1 cup white sugar
1 teaspoon baking powder
⅛ teaspoon salt
½ teaspoon ground cinnamon
1 cup shortening
1 egg
1 (10 ounce) jar raspberry preserves

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking pan.
  • In a large bowl, stir together the flour, sugar, baking powder, salt and cinnamon. Cut in the shortening until the mixture is coarse and crumbly. Stir in the egg. I use my hands to mix it all together, it just seems easier. Press about half of the mixture into the bottom of the prepared pan. Spread the raspberry preserves over the crust then sprinkle with the remaining crumb mixture.
  • Bake for about 35 to 40 minutes in the preheated oven, until lightly toasted. Careful not to overcook. Cool in the pan on a wire rack. Then cut into squares, enjoy!

1 cup Gold Medal™ all-purpose flour
1 cup powdered sugar
1 cup ground walnuts
1/2 cup butter or margarine, softened
2/3 cup favorite preserves or jam

Steps:

  • Heat oven to 375°F. Grease bottom and sides of 8- or 9-inch square pan with shortening. Mix all ingredients except preserves in large bowl until crumbly. Press two-thirds of crumbly mixture in pan. Spread with preserves. Sprinkle with remaining crumbly mixture; press lightly.
  • Bake 20 to 25 minutes or until light golden brown. Cool completely, about 1 hour. For bars, cut into 6 rows by 6 rows.

From the Fort Worth Star-Telegram food section. I don't make jam, but those of who like to this sounds good. They also suggest basting a ham with this, glazing steamed carrots or a roasted pork loan. Or pour over cream cheese and serve with crackers.

6 cups cranberries, fresh or frozen, rinsed and picked over
3 cups sugar
1 cup orange juice
1 cup water
1/4 cup jalapeno, minced with seeds removed
1 tablespoon orange zest

Steps:

  • Combine all ingredients in a large stock pot. Bring to a rolling boil. Reduce heat and simmer for 20 to 30 minutes, stirring occasionally until thickened.
  • While jam is cooking, sterlized half-pint jars and lids according to manufacturer's directions.
  • When jam is ready, ladle into prepared jars, allowing 1/8-inch headspace before sealing. Follow manufactures's directions for processing in a hot-water bath for 5 minutes. Remove carefully and leave jars undisturbed for 12 to 24 hours.

3/4 cup butter or margarine, softened
2/3 cup granulated sugar
2 teaspoons vanilla
1 egg
2 cups Gold Medal™ all-purpose flour
1/2 teaspoon baking powder
1/2 cup favorite jam or preserves
Powdered sugar, if desired

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 13x9-inch pan with shortening. In medium bowl, mix butter, granulated sugar, vanilla and egg with spoon. Stir in flour and baking powder until dough forms. Pat dough evenly in pan.
  • Beginning 3/4 inch from short side of pan, press 1/2-inch-wide and 1/4-inch-deep groove in dough, using end of wooden spoon. Make 8 more grooves, each 1 1/2 inches apart. Fill each groove with slightly less than 1 tablespoon jam.
  • Bake 20 to 25 minutes or until light golden brown. Cool completely, about 1 hour. Sprinkle with powdered sugar. For bars, cut into 8 rows by 4 rows.
