Vegetable oil, for deep-frying
2 cups all-purpose flour
1/2 cup plus 3 tablespoons granulated sugar
2 1/4 teaspoons baking powder
2 teaspoons ground cinnamon
1 1/4 teaspoons salt
2 large eggs
3/4 cup whole milk
2 tablespoons melted butter
2 teaspoons vanilla extract
2 Granny Smith apples, cored and cut into small dice
Powdered sugar, for dusting, optional
Serving suggestions: breakfast sausage and bacon

Steps:

  • Heat a couple of inches of vegetable oil in a heavy pot or Dutch oven over medium to medium-low heat until a deep-fry thermometer inserted in the oil registers 340 degrees F.
  • In a mixing bowl, combine the flour, granulated sugar, baking powder, cinnamon and salt. In a separate bowl, beat the eggs with a fork, then add the milk, melted butter and vanilla. Gently fold the dry and wet ingredients together until just combined (do not over-mix). Fold in the apples, adding enough to make a very chunky batter.
  • Drop heaping tablespoons of batter into the hot oil, 6 to 8 at a time. Fry until golden brown, 4 to 6 minutes. Remove and drain on paper towels. Dust generously with powdered sugar and serve warm with sausage and bacon!

I didn't think I liked apple fritters, but turns out I just don't like chunks of almost raw apple, surrounded by a doughnut. Maybe I've just been going to the wrong shops, but I've never enjoyed the texture, and always wanted to try them with cooked apples.

1 tablespoon butter
2 large Granny Smith apples - peeled, cored and cut into 1/4-inch dice
1 tablespoon white sugar
1 ¼ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon kosher salt
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
⅛ teaspoon ground nutmeg
1 large egg
¼ cup white sugar
1 tablespoon melted butter
½ cup sparkling apple cider
2 cups vegetable oil for frying
½ cup confectioners' sugar, or more as needed
1 tablespoon sparkling apple cider, or as needed to make glaze

Steps:

  • Melt butter over medium-high heat and cook until it turns golden brown, 2 to 3 minutes. Add apples and cook over medium-high heat until apples just begin to soften around the edges, 3 to 4 minutes. Sprinkle in 1 tablespoon sugar and continue cooking another 2 minutes. Remove from heat. Drain in a strainer; let cool to room temperature.
  • Whisk flour, baking powder, salt, cinnamon, ginger, and nutmeg together in a mixing bowl until well combined.
  • Whisk egg, 1/4 cup sugar, and melted butter together in a separate mixing bowl. Add cooled apple pieces and sparkling apple cider; add the flour mixture. Stir just until flour is incorporated.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Spoon about 2 tablespoons batter per fritter, into hot oil, slightly flattening them out. Cook in batches. Fry on one side until small bubbles appear on the surface, about 2 minutes. Carefully flip fritters over and fry the other side until richly browned, about 2 more minutes.
  • Transfer with a slotted spoon to a paper-towel-lined plate to drain grease. Cool slightly before glazing.
  • Whisk powdered sugar and cinnamon in a mixing bowl. Add enough apple cider, 1 teaspoon at a time, to form a smooth glaze that is just runny enough to drizzle over fritters.

These apple fritters with caramel sauce are a delicious deep-fried taste of fall. Serve with some ice cream of a cup of coffee for a sweet treat any time of year.

2 cups all purpose flour
1/2 cups sugar
3 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1 tsp vanilla extract
2 eggs
3/4 cup whole milk
3 tbsp unsalted melted butter
2 apples
1 cup sugar
3 tbsp water
4 tbsp unsalted butter
3/4 cup heavy cream

Steps:

  • Heat some frying oil in a large pot over medium high heat until the oil reaches 340 degrees F.
  • In a large bowl, mix the eggs, milk, melted butter, vanilla extract, and sugar until well combined.
  • Add the all purpose flour, cinnamon, baking powder, and mix until well combined.
  • Fold in the chopped apples.
  • Using a mini scoop or two spoons, scoop the batter and drop into the oil.
  • Cook for 4-5 minutes or until golden brown.
  • Drizzle with homemade caramel and enjoy!
  • To make the caramel sauce, combine the water and sugar and cook over medium heat in a saucepan until the sugar dissolves.
  • Once the sugar dissolves, keep a close eye on it, sugar burns quickly.
  • Once it turns into a copper color remove it from the stove.
  • Add the butter and heavy cream and mix until well incorporated.
  • Once the caramel thickens nicely and is lump free transfer to a heat proof container.

3 -4 tablespoons oil
1 egg, beaten
1/2 cup milk
1/4 cup sugar
1 teaspoon cinnamon
1 cup sour cream
1 cup flour
1/4 teaspoon baking powder
1/8 teaspoon salt
3 granny smith apples
1 tablespoon powdered sugar (optional)

Steps:

  • Pour enough oil into an electric skillet so that the bottom is well covered, about 1/8" deep. Depending on how fast you are, either turn the skillet on now or wait until you start on the apples. The oil should be at 375 degrees.
  • Combine in a bowl the beaten egg, milk, sugar, cinnamon and sour cream. In separate bowl, whisk together flour, baking powder and salt. Add flour mixture to egg mixture and mix well.
  • Peel apples, core and slice them into 1/4" slices. Dip slices in batter and carefully place in oil. Cook for 1 to 2 minutes. Turn and cook 1 to 2 minutes more. Remove fritters and drain. Sprinkle with powdered sugar if desired. Serve warm.

2 apples, peeled, diced and patted thoroughly dry with paper towels
1/4 cup raisins, soaked in rum (optional)
1 cup flour
2 tablespoons sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 1/2 teaspoons baking powder
1 egg, lightly beaten
1 tablespoon melted butter
1/3-1/2 cup milk (enough to make a thick pancake mixture) or 1/3-1/2 cup apple cider (enough to make a thick pancake mixture)
1 teaspoon vanilla
Crisco or oil
powdered sugar

Steps:

  • Heat oil to 350 degrees enough to deep fry the fritters.
  • Mix dry ingredients of the batter. Toss the dried apples and raisins if using to batter.
  • Mix wet ingredients together add to dry ingredients.
  • Carefully drop spoonfuls into oil.
  • Pressing to flatten.
  • A flattened shape helps the interior cook through.
  • Fry till golden brown 3-5 minutes.
  • Roll into powdered sugar.
  • Serve with a scoop of your favorite ice cream.

A comforting dessert recipe. Try slicing your apples as evenly as possible so that each fritter is cooked to the same level of doneness. Although this may not be a healthy dessert, it sure is yummy!

1 cup all-purpose flour
1/2 teaspoon kosher salt
2 eggs, separated
2 tablespoons unsalted butter, at room temperature
1 cup apple cider
3 firm tart apples
3 tablespoons fresh lemon juice
1/3 cup granulated sugar
1 teaspoon ground cinnamon
vegetable oil (for deep frying)
1 cup powdered sugar, for dusting

Steps:

  • In a blender or food processor, process the flour, salt, egg yolks, butter and cider. Process until smooth.
  • In a large bowl, beat the egg whites.
  • Fold the flour mixture into the beaten egg whites, just until combined.
  • Peel and core the apples; cut into 1/4 inch thick slices.
  • Sprinkle the apple slices with lemon juice and toss with the sugar.
  • Heat 4 to 5 inches of oil in a large and heavy-duty saucepan over med.-high heat until the oil is hot enough to sizzle when a tiny bit of batter is dropped inches.
  • Dip an apple slice in batter - it should be evenly coated with batter, allowing excess batter to drip off. Repeat with several more apple slices.
  • Carefully drop battered apple slices into the hot oil. Cook 8 to 10 minutes or until the apple slices are cooked through and the batter is puffy and golden. *Work in batches so you don't overcrowd the pan*.
  • Drain on paper towels.
  • Repeat until all apple slices are battered and cooked. Let cool., then sprinkle with powdered sugar before serving.
