I love smoked salmon and cream cheese. I have tried alot of them, quite a few from here on Zaar. So I decided to try my own....I took my favorite ingredients and threw them all together to create this truly tasty sandwich. I always add a little extra smoked salmon, cause I love it...I hope that you will enjoy this version. Add these ingredients to suit your personal tastes. The longer the cream cheese mixture sits in the fridge, the better it will taste. This is wonderful served on a large toasted sesame bagel for lunch or it makes a great appetizer when served on plain fresh mini bagels.

Number Of Ingredients 11

1/2 cup cream cheese, softened, room temperature, good quality
1/4 cup smoked salmon, coarsely chopped
1 -2 green onion, large, coarsely chopped (your preference)
1/8 cup cucumber, finey, shredded
1/2 teaspoon onion, sweet, red, finely minced
1/2 teaspoon shallot, finely minced
1 1/2 teaspoons lemongrass, minced
1 1/2 teaspoons cilantro, minced
1/4-1/2 teaspoon salt, coarse
1/4-1/2 teaspoon pepper, black, fresh ground
1 -3 tablespoon maple syrup, pure, good quality (your preference)

Steps:

  • In a small bowl add all the ingredient.
  • Mix well, making sure that everything is blended.
  • Taste and adjust seasonings if necessary.
  • Wrap and place in fridge for 30 minutes to 2 hours.
  • Toast bagel and add the cream cheese mixture to it.
  • Enjoy, enjoy, enjoy.

SALMON AND CREAM CHEESE DIP

Its a wonderfully creamy and tasty dip, the salmon and herbs are a delightful combination and it does not last long once you serve it.

Number Of Ingredients 9

250 g cream cheese, not lite
210 g salmon, tinned, red
2 teaspoons lemon juice
3 teaspoons milk
1/4 teaspoon lemon zest
1 tablespoon salad cream
1 1/2 tablespoons chives, fresh and finely snipped
1/4 teaspoon pepper, black course
salt

Steps:

  • Drain the Salmon well. Remove any skin and bones and crumble into a bowl.
  • Beat the cream cheese with the milk and lemon juice until its smooth, add the salmon, salad dressing, chives, salt and pepper, beat all together until well mixed. Refrigerate for a few hours at least,but 24 hours is better as the flavours blend.
  • Add slightly more milk to the mix if it's a bit too stiff as cream cheese differs from one brand to another.
  • Salad cream has a more tart flavour than mayonnaise,so do us that if possible.

This is my own invention and I always use it as a delicious entree for a dinner. You can make it ahead and it looks lovely on the plate.

200 g smoked salmon
300 g cream cheese
1/2 teaspoon capers
1 tablespoon lemon juice
1/4 teaspoon lemon zest
1 teaspoon spring onions or 1 teaspoon chives
1 teaspoon parsley
1/8 teaspoon sambal oelek or 1 dash Tabasco sauce

Steps:

  • Line 4 holes of a muffin tin ( I use one with rectangular muffins) with cling wrap, using individual pieces for each hole.
  • Line each opening with the smoked salmon slices so that it goes up the sides and overlaps a little.
  • In a small mixer combine the remaining ingredients which have been finely chopped( you can add in any salmon left over).
  • Carefully fill in the cream cheese mixture into the salmon lined muffin tin.
  • Refrigerate for at least 4 hours.
  • Take out of the tin, unwrap and decorate with lemons slices, olives or capers.Serve with crackers.

Its a surprisingly delicious way of serving salmon, a surprise because when I first made it, I just put things in first and - then had to remember what I had done! Its a reasonably healthy dish too being a mixture of freshly cooked salmon, tomatoes etc. wrapped in puff pastry It serves a whole bunch of friends - either as a hot meal and wonderful at a buffet as you can prepare it well ahead of time and serve it cold.

Number Of Ingredients 11

2 ounces rice, long grain
1 ounce butter
1 onion, large chopped
salt, low
pepper, Black
13 ounces tomatoes, canned and chopped
12 -14 ounces salmon fillets
2 tablespoons parsley, chopped
1 egg, beaten
1 lb puff pastry, ready made
1 lemon, zest and juice

Steps:

  • Cook the rice in boiling water for 11-12 minutes, or until just cooked, dont overcook as it goes mushy. and rinse with cold water, drain and allow to cool.
  • Simmer the Salmon fillets, allow to cool then strip off any skin and remove the bones, break up the flesh unto small crumbly pieces.
  • heat up the butter in a medium sized saucepan and saute the onion gently for at least 3 minutes, add a tiny amount more butter, if it starts to stick, or a splash of water also does the trick.
  • Drain the tomatoes retaining some of the liquid, in case it gets too dry and simmer for 15 minutes and leave to cool.
  • Pre heat oven to 400-420.
  • Combine the rice with the onion and tomato mix, the flaked salmon, parsley lemon zest, h alf of the beaten egg and the juice, season with the pepper and salt.
  • Rollout the puff pastry to a large oblong about 12x16 inches. arrange the mix down the middle of the pastry like a meatloaf, brush the edges of te pastry with water and wrap the ends over then the sides.
  • Turn over and place on a lined biscuit tray, brush the top with the beaten egg, and snip vents along the top.
  • Bake for about 35-45 minutes in a hot oven.
