LOW CARB MEATLOAF

1 pound lean ground beef
1 green bell pepper
1/2 onion
1 clove garlic
2 large eggs
1/2 cup almond flour *see note
1/2 cup shredded cheddar
1/4 cup powdered Parmesan cheese
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon ground black pepper
3 slices thin-cut bacon
3 tablespoons sugar free ketchup
1 tablespoon bottled Italian salad dressing

Steps:

  • Preheat oven to 375 degrees.
  • Mince the green pepper, onion, and garlic.
  • Add to a large bowl with the ground beef, eggs, almond flour, cheddar, Parmesan cheese, Worcestershire sauce, salt, and pepper. Use your hands to combine.
  • Shape mixture into a loaf, about 7x4 inches, and place in a 9x13 baking dish.
  • Cut the bacon slices in half and drape over the meatloaf.
  • Bake for 25 minutes.
  • Whisk together the ketchup and Italian dressing. Spoon half of the mixture over the meatloaf.
  • Increase heat to 425 and bake an additional 10 minutes and then spread the remaining sauce over the meatloaf.
  • Continue baking for 10-15 minutes or until the internal temperature reaches 160 degrees.
  • Let rest 5 minutes before slicing and serving.

½ cup grated Parmesan cheese
⅓ cup tomato sauce
¼ cup chopped onion
1 large egg

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.

2 Lbs. (907g) 80/20 Ground Beef
1 Cup (112g) Shredded Cheddar
1/3 Cup (35g) Almond Flour

2 Tbsp (30g) Liquid Aminos - or Soy Sauce, Worcestershire Sauce

Steps:

  • Preheat oven to 400°F.
  • Grease a 9x5 loaf pan with cooking spray and set it aside.
  • In a large skillet over medium heat, add and heat the Macadamia Nut Oil.
  • Now, add the onion & celery and cook until soft and translucent.
  • Next, add the garlic, oregano, and chili powder, and Italian seasoning and cook until fragrant. Once fragrant, let the mixture cool.
  • Now, when the mixture cools, use a large bowl to add and combine all of the ingredients - except for the ketchup.
  • Shape meat mixture into the size of a large loaf, and add it to the pan. *If using bacon, wrap it in bacon before adding the meatloaf to the pan.
  • Cook for 40 minutes, remove, and cover with ketchup (if using)
  • Return to oven and cook for another 15-20 minutes (once the internal temp gets to 165°F).

1/4 small red onion, minced
1 tsp garlic powder
1 tsp dried parsley
1 tsp pink Himalayan salt
1/2 tsp black pepper
1 large egg
1/2 cup ground pork rinds ((1 oz whole pork rinds))
1/4 cup grated Parmesan cheese
1 tbsp Worcestershire sauce
2 tbsp tomato paste
2 tbsp water
1/2 tsp Worcestershire sauce
5 drops liquid stevia
1 tsp white vinegar
pinch of salt, onion and garlic powder

Steps:

  • Preheat the oven to 375°F degrees and grease a loaf pan (if using).
  • Add all meatloaf ingredients to a large bowl. Using your hands, combine well. Form the mixture into a loaf shape and place on a greased baking dish or press into your greased loaf pan and flip out on the baking sheet.
  • Bake for 20 minutes.
  • While the meatloaf is baking, add all topping ingredients to a small bowl and whisk together.
  • Remove meatloaf from oven and top with the ketchup mixture. Bake for an additional 10-15 minutes or until the meatloaf reaches 165°F.
  • Remove from the oven and allow to rest for 15 minutes to let the juices settle before slicing and serving.
  • Best stored in an air tight container in the fridge up to 5 days.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a large bowl place the ground beef, egg, mushrooms, Ranch seasoning and salt. Mix well to combine.   • Pour the egg mixture over the meat mixture. Add in the onion and garlic. Combine until all of the ingredients are evenly distributed.
  • Form the meat mixture into a loaf shape.
  • Wrap the meatloaf with the strips of bacon.
  • Carefully pick up the meatloaf and place it on a cooling rack over an aluminum foil-wrapped baking sheet. Pour the tomato sauce over the top of the meatloaf.
  • Bake in the preheated oven uncovered for 1 hour or until the top is caramelized and the internal temperature is 165 F. You can increase the temperature to 375 F for the last 5 minutes to further caramelize the top and crisp up the bacon.
  • Remove from the oven and allow to cool slightly. Slice and serve immediately with your favorite keto sides, like mashed cauliflower and Brussels sprouts.

Ranch meatloaf is a family favorite homestyle meatloaf much like Grandma's meatloaf but better! This healthy meatloaf recipe takes the classic recipe and elevates it with delicious ranch seasoning! Delicious and easy to make on weeknights or for a Sunday dinner.

2-3 pieces whole wheat bread
1/2 cup milk or unsweetened almond milk
1 pound ground beef 90/10
1 pound ground turkey
1 packet ranch seasoning
1 egg
salt + pepper to taste
1 tbsp raw honey
1 tbsp mustard
1/3 cup ketchup

Steps:

  • Rip bread into tiny pieces and place in a large bowl. Add milk to soak bread and mix gently.
  • Add meat to the soaked bread and season with salt and pepper. Mix gently a few times.
  • Add in ranch packet and one egg. Using your hands, incorporate all of the ingredients until mixed but not over mixed.
  • Place meat mixture onto a foil-lined pan (see helpful tips for how to make a meatloaf pan) and shape into a loaf.
  • Mix together ketchup, raw honey and mustard until well mixed. Coat the loaf evenly with the ketchup glaze.
  • Bake meatloaf in a 350F oven for 60-80 minutes or until an instant read thermometer reads 165F.
