KEY WEST CHICKEN
This recipe from the Florida Keys has been given to almost everyone I know. It is the best marinade for chicken, and it only takes 30 minutes from prep till you can grill! It's a great blend of flavors with honey, soy sauce, and lime juice. If you have time, try marinating overnight for the fullest flavor.

Steps:
- In a shallow container, blend soy sauce, honey, vegetable oil, lime juice, and garlic. Place chicken breast halves into the mixture, and turn to coat. Cover, and marinate in the refrigerator at least 30 minutes.
- Preheat an outdoor grill for high heat.
- Lightly oil the grill grate. Discard marinade, and grill chicken 6 to 8 minutes on each side, until juices run clear.

CITRUS-HERB ROAST CHICKEN
This dish is one of my all-time favorites. The flavorful, juicy chicken combines with the aromas of spring in fresh herbs, lemon and onions to form the perfect one-pot meal. I make the gravy right in the pan. -Megan Fordyce, Fairchance, Pennsylvania

- Preheat oven to 350°. Peel and cut garlic into quarters. Place chicken on a cutting board. Tuck wings under chicken. With a sharp paring knife, cut 24 small slits in breasts, drumsticks and thighs. Insert garlic in slits. Tie drumsticks together., Place potatoes and carrots in a shallow roasting pan; top with herbs. Place chicken, breast side up, over vegetables and herbs. Cut lemon and orange in half; gently squeeze juices over chicken and vegetables. Place squeezed fruits inside chicken cavity. Sprinkle chicken with salt and pepper. Pour broth around chicken., Roast until a thermometer inserted in thickest part of thigh reads 170°-175°, 2 to 2-1/2 hours, sprinkling green onions over vegetables during the last 20 minutes. (Cover loosely with foil if chicken browns too quickly.), Remove chicken from oven; tent with foil. Let stand 15 minutes before carving. Discard herbs. If desired, skim fat and thicken pan drippings for gravy. Serve gravy with chicken and vegetables.

CITRUS CHICKEN WITH VEGETABLES
A light, summertime supper using those fresh garden vegetables. I usually use 3 chicken breasts to stretch the recipe for leftovers.

Steps:
- Cook beans& carrots together in small amount of boiling water until almost tender, about 10-15 minutes.
- Add zucchini; cook an additional 5 minutes.
- Drain; set aside.
- Meanwhile, combine flour, sesame seed, salt and pepper in paper or plastic bag.
- Add chicken, 1/4 at a time; shake gently to coat.
- Melt margarine in large skillet.
- Sauté chicken over medium heat until completely cooked and golden brown, about 4 to 5 minutes.
- Remove from pan; set aside.
- Remove drippings and excess crumbs from pan.
- Stir in orange juice, lemon juice and rosemary; bring to a boil.
- Add cooked vegetables, stirring until thoroughly heated.
- Add cooked chicken; toss gently.
- Serve immediately.
- Sprinkle each serving with parsley.

KEY WEST CITRUS CHICKEN W/ VEGGIES

- In a large bowl mix together well the BAH Lemon EVOO, lemon juice, mustard, garlic, peppers, and Key West Citrus Blend. Place chicken in the bowl and marinate at least 20 minutes in the refrigerator. Preheat grill on med-high heat. Drain and discard marinade from the bowl and place chicken on grill. Cook 8-10 minutes on each side until juices run clear. Remove from grill place on serving platter and drizzle with additional BAH Lemon EVOO, sprinkle additional BAH Key West Citrus Blend on chicken as desired. Serves 4. You can replace the Lemon EVOO for any citrus flavored BAH EVOO. For added twist, drizzle with your favorite BAH flavored balsamic vinegar over the cooked chicken just prior to serving.
KEY WEST GRILLED CHICKEN WITH CILANTRO-LIME CAULIFLOWER RICE RECIPE

- . For the chicken: Whisk together soy sauce, honey, vegetable oil, lime juice, and garlic in a small bowl. Place chicken breasts in a ziplock bag and pour mixture on top. Add jalapeno, squish to coat chicken in marinade, then refrigerate for 1 hour, or up to 8 hours. Grill chicken over medium-high heat for 4-5 minutes a side, basting with the leftover marinade a few times as it grills. 2. For the mango salsa: Combine all salsa ingredients in a bowl. Refrigerate until ready to use. 3. For the cilantro-lime cauliflower rice: Shred cauliflower using the shredding blade on a food processor, or by hand with a flat or box grater. Heat vegetable oil in a large skillet over medium-high heat. Add cauliflower, season with salt, then saute until soft and just starting to turn golden brown, about 10 minutes. Turn off the heat, then add 1 Tablespoon lime juice and cilantro. Taste and add more lime juice if desired.

- Bring 3 cups water and sugar to boil in large saucepan over high heat, stirring until sugar dissolves.
- Boil 3 minutes.
- Transfer syrup to bowl; cover.
- Chill until cold, at least 3 hours and up to 1 week.
- Mix lime juice, orange juice, 3 cups syrup, and 3 cups water in large pitcher (Can be made 1 day ahead. Cover and chill).
- Fill glasses with ice.
- Pour cooler over.

- In a small bowl, combine the first seven ingredients. Divide marinade equally between two large resealable plastic bags; add the chicken to one bag. Add peppers and onion to remaining bag. CHILI CITRUS CHICKEN
My husband was looking for something to cook for me one night and found this recipe. It was delicious.

Steps:
- In small dish, mix the chili powder, cumin, garlic salt, and the cayenne pepper.
- Rub the mixture on each chicken breast half.
- In frypan, place the oil and heat to medium temperature.
- Cook the chicken in pan, turning.
- Cook the chicken until juices are clear when pierced with a fork.
- Remove the chicken and keep warm.
- Combine the juices and jelly in the frying pan.
- Bring to a boil and cook for 2 min or so.
- Spoon sauce over the chicken.
KEY WEST-STYLE BAKED GROUPER
Steps:
- Preheat oven to 325 degrees F (165 degrees C). Lightly butter a 9x13-inch glass baking dish and set aside.
- Season the grouper fillets with salt, lemon pepper, garlic powder, and onion powder; place into prepared baking dish. Spread about 2 tablespoons of softened butter over the top of each fillet. Pour in the lime and orange juices, then cover each fillet with 3 slices of lime and 2 slices of orange.
- Bake in preheated oven until fish is opaque and flakes easily with a fork, about 15 minutes.
