Healthy pull apart take on monkey bread, kids love this banana filled bread

Number Of Ingredients 6

1.5 cups self-raising wholemeal flour
1 cup Greek style yoghurt
2 tablespoon peanut butter
2 medium bananas
1 teaspoon cinnamon
2 dates

Steps:

  • Mix the yoghurt and flour for the dough, it will come together into a ball with a bit of mixing
  • Knead the dough for 5 mins on a floured board (I use standard flour for kneading rather than wholemeal)
  • Roll the dough into a rough rectangle (similar to an A4 piece of paper, dough should be approx 0.5-1cm thick
  • Place the rectangle so that the long edges are parallel with you
  • Spread the peanut butter on the dough, leaving approx 2 inches along one edge (the long edge furthest away from you)
  • In a blender purée the bananas, dates and cinnamon
  • Spread the banana mixture over the peanut butter
  • Now roll the dough so that you create a long pinwheel sausage filled with the banana filling.
  • Slice the sausage into 1.5-2cm thick slices
  • Place these into a baking paper lined dish. You want the pinwheels to be touching each other but for the dish to not be completely packed
  • Bake at 180 degrees Celsius (360 Fahrenheit) for 15-20 minutes or until golden
  • Leave to cool
  • Serve, it is lovely to serve slightly warm

cooking spray
1 tablespoon ground cinnamon
¾ cup white sugar
2 (7.5 ounce) packages refrigerated biscuit dough
½ cup butter
½ cup brown sugar
1 tablespoon ground cinnamon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray 8 muffin cups with cooking spray.
  • In a bowl, stir together 1 tablespoon of cinnamon and the white sugar until evenly blended. Remove the biscuits from the packages, and cut into quarters. Drop a few biscuit pieces at a time into the sugar mixture, and coat thoroughly. Distribute the coated biscuit pieces among the prepared muffin tins (4 to 5 pieces per cup).
  • Place butter, brown sugar, and the remaining 1 tablespoon cinnamon in a microwave-safe glass or ceramic bowl, and microwave a few seconds until the butter has melted. Stir to blend, and drizzle about 2 tablespoons of the butter mixture over each cup.
  • Bake in the preheated oven until the tops of the muffins are crispy and brown, about 20 minutes. Allow to cool for about 10 minutes before removing from pan.

Yummmmmy kid-friendly dish. When I was a child, my mom always let my sister and I make this with her and it was fun. As an adult, I still enjoy making it.

1 ½ cups white sugar
1 tablespoon ground cinnamon
3 (10 ounce) cans refrigerated biscuit dough
3 tablespoons butter, melted, or more to taste
1 teaspoon vanilla extract
¼ teaspoon ground nutmeg

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a fluted tube pan (such as Bundt®).
  • Mix together sugar and cinnamon in a medium bowl. Tear each biscuit in 1/2, then roll each piece into a ball. Roll each ball in the sugar-cinnamon mixture until completely covered. Place in the prepared pan, filling the pan up to 3/4 full to allow biscuit balls to expand.
  • Combine butter, vanilla extract, and nutmeg in a small bowl, mix in some of the leftover sugar-cinnamon mixture, and pour over the biscuit balls.
  • Bake in the preheated oven until golden brown and no longer doughy in the center, about 45 minutes. Cool in the pan for 5 to 10 minutes, then flip pan onto a serving dish to release the monkey bread.
