Freezer Breakfast Sandwich with Oven Baked Eggs image

This easy recipe makes a large batch of breakfast sandwiches that you can freeze, then toss in the microwave on a busy morning.

12 large eggs
salt and pepper
12 english muffins
12 slices cheese
12 sausage patties

Steps:

  • Preheat oven to 350 degrees. Generously grease 12 muffins tins. Crack one egg into a small dish and be sure there are no shells before pouring that egg into one of the muffin tins. Repeat with the remaining eggs. Sprinkle the tops of all the eggs with some salt and pepper. Use a butter knife to break open the yolk, if desired, and then bake for 20 minutes until eggs are set.
  • Assemble the sandwiches, wrap them each in plastic wrap and freeze. To reheat, unwrap the sandwich, open it into two pieces and microwave for 1 1/2 minutes - 2 minutes depending on the power of your microwave.

My mother would prep this on Christmas Eve Day and let it set overnight, then bake it Christmas morning for a simple but decadent dish. cooking spray
2 pounds shredded Colby-Jack cheese, divided
12 eggs
1 cup heavy whipping cream

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Coat a 9x13-inch baking dish with cooking spray.
  • Spread a thin layer of Colby-Jack cheese in the bottom of the prepared baking dish. Crack eggs on top of the cheese layer and break the yolks but do not stir. Layer crumbled sausage over eggs and top with remaining cheese. Drizzle cream on top.
  • Cover baking dish and refrigerate, 8 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).

Chop chicken sausage and add it with onion and bell pepper to the skillet. Continue to cook for a minute or two and then add in spinach.   • Make Ahead: The burritos may be assembled a few hours ahead of time, wrapped tightly in plastic wrap and refrigerated, before cooking.
