One 16-ounce bag frozen mango chunks, thawed
One 14-ounce can sweetened condensed milk
1 tablespoon grated fresh ginger
1 teaspoon cardamom
Grated zest and juice of 1 lime

Steps:

  • Put the mango, condensed milk, ginger, cardamom and lime zest and juice in a blender and puree until smooth. Distribute the mixture among the paper cups, add the ice-pop sticks and freeze until firm, at least 6 hours.

6 ounces Mint Simple Syrup, recipe follows
6 ounces fresh lime juice
12 small fresh mint leaves
Four 12-ounce cans lime-flavored spiked or regular seltzer
1 cup sugar
1/2 cup loosely packed fresh mint leaves

Steps:

  • Stir together the Simple Syrup, lime juice and 4 ounces water in a large measuring cup. Add a couple of mint leaves to each of 4 frozen pop mold cavities. Divide the mixture evenly among each frozen pop cavity, then add the sticks and freeze until solid, about 5 hours.
  • Unmold the pops and place each in a glass. Top with the seltzer and serve immediately.
  • Add the sugar, mint leaves and 1 cup water to a small saucepot. Bring to a boil, then turn off the heat. Cover and let cool to room temperature. Strain the mint leaves from the syrup and refrigerate until ready to use.

  • In a saucepan, bring kiwi and wine or soda to a boil. Cook over medium heat for 5 minutes, stirring occasionally. Add gelatin; stir until dissolved. Stir in chilled soda and orange juice.
