¾ cup water
3 tablespoons white vinegar
¼ cup dark brown sugar

Steps:

  • Pour soy sauce, water, and vinegar into a large, non-metallic bowl. Whisk in brown sugar, white sugar, pepper, sesame oil, garlic, and onion until the sugars have dissolved. Submerge the ribs in this marinade, and cover with plastic wrap. Refrigerate 7 to 12 hours; the longer, the better.
  • Preheat an outdoor grill for medium-high heat.
  • Remove ribs from the marinade, shake off excess, and discard the marinade. Cook on preheated grill until the meat is no longer pink, 5 to 7 minutes per side.

1 large Asian pear, peeled, cored and sliced
⅓ cup sherry wine
⅓ cup soy sauce
¼ cup rice vinegar
⅛ cup brown sugar
3 cloves garlic, peeled
5 slices fresh ginger, peeled and thinly sliced
1 tablespoon hoisin sauce
1 tablespoon hot chile paste (such as sambal oelek)
1 teaspoon sesame oil
4 pounds beef short ribs, trimmed
1 chopped green onion for garnish

Steps:

  • Mix pear slices, sherry wine, soy sauce, rice vinegar, brown sugar, garlic, ginger, hoisin sauce, hot chili paste, and sesame oil in a blender until smooth, about 4 minutes.
  • Arrange short ribs in a 9x13-inch baking dish and coat completely with marinade. Cover baking dish with plastic wrap and transfer to the refrigerator to marinate for 8 to 12 hours.
  • Remove short ribs to a plate and blot dry with paper towel to remove excess marinade.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Grill short ribs until firm, hot, and slightly pink in the center, about 4 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).

2 scallions, chopped
3 garlic cloves, minced
1/2 cup soy sauce
1/4 cup sesame oil
1 teaspoon sesame seeds
2 tablespoons sugar

Cucumber Kimchi, recipe follows, optional
5 small pickling cucumbers
2 tablespoons salt
2 cups water
1 pound Chinese turnips, some julienned and some cut into circles
1/4 cup julienned carrot
2 cloves garlic, minced
2 scallions, julienned
3 hot red peppers, seeded and minced
1 teaspoon minced fresh ginger
1 teaspoon sugar
1 teaspoon salt
3/4 teaspoon cayenne pepper
1 cup chicken stock

Steps:

  • Score ribs every 1/2-inch along the length and width of the bone, making sure not to cut too deep so the meat will stay attached to the bone.
  • Combine the remaining ingredients in a bowl to make the marinade. Pour the marinade over the ribs and push the sauce into the cuts so it gets all the way down to the bone. Turn the ribs over face down in the marinade and cover for a minimum of 2 hours or refrigerate overnight for a stronger flavor.
  • Remove ribs from the marinade and barbecue over a charcoal grill. Serve ribs with Cucumber Kimchi, steamed rice, and green Korean peppers. Enjoy!
  • Make 3 deep slashes of equal size along the length of the cucumbers. Make sure not to cut all the way to the end of the cucumber to keep the cucumbers whole.
  • Dissolve the 2 tablespoons of salt in the water. Soak the cucumbers for 2 hours to soften so they won't crack when they get stuffed.
  • For the stuffing, combine the remaining ingredients except for the chicken stock and mix well.
  • Squeeze as much water as possible out of the cucumbers. Stuff the turnip mixture tightly into the cuts. Place the cucumbers in a jar with the remaining stuffing and let sit for 3hours. Pour the chicken stock over the cucumbers and let stand at room temperature for 24 hours. Refrigerate and serve with Korean short ribs.

This is probably the best homemade Korean grilled beef dish EVER, no exaggeration. I guess you can think of it as a Korean-style beef teriyaki. It is my daughter's favorite way to eat meat and I've never met an American who didn't like it. I was surprised not to find any other kalbi recipe on the zaar, though there are many for braised short ribs and the other korean bbq beef, bulgogi. Kalbi is simple and delicious. Growing up, I typically only had kalbi on special occasions, family holiday dinners, church picnics, and the like. In a restaurant, it can get very pricey but it's a real treat of an experience to have kalbi cooked right at the table and have all sorts of side dishes to eat with it. This recipe is also very flexible: easily doubled; any sweeteners can work in place of sugar (pear juice, honey, brown sugar); easily fried in a skillet or broiled in the oven or grilled... You can serve with just rice, or go all out restaurant-style and serve with red lettuce leaves for wrapping, spicy bean paste, slices of garlic cloves, sliced up scallions and kimchi. It's up to you! The only important thing to remember is the proportion of sugar to soy sauce to water that will result in the best combination of sweet and savory. Prep time does not include marinating time.

3 lbs beef short ribs (Flanken style or Korean style)
1 cup sugar
1 cup water
1 cup soy sauce
2 tablespoons sesame oil
1 yellow onion, halved and sliced
4 garlic cloves, minced
2 tablespoons toasted sesame seeds
2 scallions, chopped
1 head red leaf lettuce, washed (optional)
3 scallions, sliced lengthwise (optional)
1 tablespoon red pepper flakes (optional)

Steps:

  • Rinse short ribs under the faucet to get rid of loose bone bits. Soak the short ribs in water for 10 minutes to drain out some of the blood. They can be soaked in a roasting pan, ziploc bag, or large bowl--- whatever container you would like to use for marinating.
  • In your marinating container, combine sugar, water, soy sauce, sesame oil, onion, garlic, sesame seeds and scallions. Dissolve the sugar into the mixture as much as possible, but it will likely not become totally dissolved.
  • Lay rib pieces in the marinade, dispersing onion slices between and on top of the meat and submerging the meat as much as possible.
  • Let the beef marinate in the refrigerator at least 30 minutes, and ideally overnight.
  • Line the grill with foil and poke holes in the foil. On medium high heat, grill the short ribs 5-7 minutes on each side until the meat is cooked medium-well and the bones do not bleed. In my opinion, this particular dish is best with a bit of burnt edges and near-well-doneness.
  • Serve with rice.
  • Alternatively, add extra flair! Wash and break off whole leaves of red lettuce and place on a serving plate (note: red lettuce is not actually red and is widely available in grocery stores). In a small bowl, toss long thin slices of scallion with sesame oil and red pepper flakes. Serve short ribs cut into thirds or about 1 inch squares (kitchen shears work best). In a small dish, place spicy bean paste or hot sauce. To assemble, wrap each piece of meat in a red lettuce leaf with scallion mixture and a dot of the spicy sauce.

1/4 cup (60 milliliters) cola
3 tablespoons packed (40 grams) light brown sugar
2 cloves garlic, finely minced
1/2 Asian pear, grated on a box grater
1 tablespoon toasted sesame oil
2 pounds 1/4- to 1/2-inch-thick crosscut bone-in beef short ribs (flanken style)
Vegetable oil, for greasing
2 scallions, very thinly sliced on an angle
1 tablespoon toasted sesame seeds

Steps:

  • Make the marinade: Combine the soy sauce, cola, brown sugar, garlic, pear and sesame oil in a large bowl. Stir together with a whisk or fork until the sugar is dissolved and the garlic is distributed evenly.
  • Marinate the short ribs: Add the short ribs to the marinade and massage it into the beef. Cover and let marinate in the refrigerator for 1 to 4 hours.
  • Heat a grill pan or grill over high heat for at least 5 minutes. Wipe the grill pan or grill grates with a lightly oiled towel right before cooking to remove any char and debris. (This will give you great grill marks and help the beef from sticking.)   • Place seseme seeds in a small frying pan over medium heat to toast. Stirring frequently until lightly browned, about 3-4 minutes. Immediately remove from heat & cool. When seeds are cooled, grind in a spice grinder or food processer. Place ground seeds in a large bowl with broth, soy sauce, rice wine, sugar, garlic, ginger, green onions, and chili garlic sauce. Mix well and add ribs to coat. Cover and let stand in refrigerator for 4 hrs to overnight, turning once.
  • Lift meat from marinade and drain briefly. Reserve the marinade in a small pan.
  • Place ribs on a well oiled grill 3-4 inches abouve a solid bed of low-glowing coals or medium heat on a gas grill. Cook about 3 minutes per side for medium rare ribs.
  • While meat is cooking, simmer marinade for 3 minutes. Add cornstarch solution, stirring, until sauce boils and thickens.
  • Serve ribs with rice and sauce on the side.

Korean short ribs are my all time favorite Asian dish. This recipe originally came from chow.com, but I've tweaked it a bit. Posted for Zaar World Tour. (Time doesn't include marinating time and assumes butcher has butterflied the ribs for you.)

2 lbs beef short ribs, cross cut and butterflied
1 dash kosher salt
1/2 cup low sodium soy sauce
1 small onion
4 ounces pear baby food
6 garlic cloves
1 inch fresh ginger
3 tablespoons honey
4 green onions
2 teaspoons sesame seed oil
1 tablespoon rice wine
1/2 teaspoon fresh ground black pepper
water, as needed

Steps:

  • MARINADE.
  • Chop onion, pear or apple, and ginger into small pieces and place in blender with garlic and just enough water to blend into a smooth pourable paste. Pour into medium mixing bowl.
  • Slice green onion and add to bowl.
  • Add all other ingredients. Mix well and let stand for at least fifteen minutes.
  • If too thick, add equal parts soy sauce and water until reach desired consistency.
  • PREPARE MEAT.
  • Very lightly salt meat on both sides and let sit 10 minutes.
  • Place meat into a bowl, pour in enough marinade to just cover the meat and mix well. Refrigerate for 6 to 24 hours.
  • GRILL MEAT.
  • Remove meat from refrigerator and let set at room temperature for 20 minutes.
  • Heat grill to high heat.
  • Cook until browned then turn and cook until browned on the other side, about 2 minutes per side.
  • NOTE:.
  • If you can't get the butcher to butterfly the ribs, you can do it yourself. Separate the ribs, then slice into the meaty side at the center of the rib section, stopping just before cutting through the membrane. Turn your knife 90º (flat to the bone) right and carefully slice the meat at roughly 1/8 inch thickness outward until just short of slicing through, roll the loosened flap of meat away from the knife, and continue slicing until again just short of slicing through. Repeat until you reach the "end" of the meat. Do the same for the left side and repeat this with each rib section.

  • Grind the sesame seeds in a coffee grinder until fine. Place the ground sesame seeds in a medium bowl and add the garlic, soy, sherry, honey, sesame oil, water, ginger, scallions, and red chili flakes, stir until thoroughly combined.
  • Put the ribs in a large baking dish, pour the marinade over, and turn to coat. Cover and let marinate in the refrigerator for 2 to 3 hours.

5 garlic cloves, forced through a garlic press or minced
1/2 cup soy sauce
3 tablespoons Oriental sesame oil
2 teaspoons minced fresh gingerroot
3 tablespoons sugar
2 teaspoons distilled white vinegar
2 teaspoons sesame seeds
1 teaspoon freshly ground black pepper
18 scallions, trimmed

Steps:

  • Cut through the meaty side of each short rib to the bone at 1/2-inch intervals, leaving the meat attached to the bone. In a bowl whisk together well the garlic, the soy sauce, the oil, the gingerroot, the sugar, the vinegar, the sesame seeds, and the pepper and coat each rib thoroughly with the marinade, transferring the ribs as they are coated to a large resealable plastic bag. Add the scallions and any remaining marinade to the bag, seal the bag, and let the mixture marinate, chilled, turning the bag occasionally, overnight.

These Galbi-inspired Korean short ribs are incredibly easy to make and very tasty. They can be served with sticky white rice and lettuce wraps and pair well with many other Korean BBQ dishes. Great for parties and backyard BBQs!

¼ cup rice wine vinegar
¼ cup soy sauce
¼ cup sriracha hot sauce, or to taste
2 tablespoons olive oil
¼ cup brown sugar
2 green onions, chopped
3 cloves garlic, minced, or more to taste
1 tablespoon ground black pepper
1 tablespoon toasted sesame seeds
1 tablespoon minced fresh ginger
1 pinch Chinese five-spice powder
2 pounds beef short ribs, cut 1/3-inch-thick across the bones

Steps:

  • Whisk vinegar, soy sauce, sriracha hot sauce, and olive oil together in a large bowl; add brown sugar and stir until dissolved. Mix green onions, garlic, black pepper, sesame seeds, ginger, and five-spice powder into vinegar mixture until marinade is evenly combined.
  • Place short ribs in a large reseable bag and pour marinade over ribs; coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for at least 3 hours.
  • Preheat grill for medium heat and lightly oil the grate.
  • Remove ribs from marinade and place on the grill; cook for 6 to 7 minutes. Flip ribs and spoon marinade over second side; cook until meat is no longer pink, 6 to 7 minutes more. Turn grill heat to high and cook ribs for 1 minute more per side. Remove ribs from heat and place on a plate; let rest for 5 minutes.

  • Just before grilling, toast the sesame seeds, if using, by heating a small skillet over medium high heat, then adding the seeds. Toss and stir for a few minutes until they become deeper golden in color, but watch carefully as they can burn quickly. Transfer to a small plate.
  • Preheat the grill to medium high. Remove the short ribs from the marinade. Grill for about 4 minutes on each side, until the outside is caramelized and the middle is medium-rare. Allow the meat to sit for 5 minutes before slicing across the grain and serving with the hot rice. Or, if you prefer (and do heavily consider this), thinly slice the meat and serve it with any or all of the suggested accompaniments.
