This is the version of guacamole you often see in little taquerias in Mexico. This is great to make when you can't find avocados at a decent price. Serve over tacos, flautas or just eat with tostada chips.

Number Of Ingredients 6

1 jalapeno, finely minced
3 tablespoons fresh cilantro, roughly chopped
1 avocado
1/4 teaspoon salt
1 cup water
3 tablespoons onions, chopped

Steps:

  • Put all the ingredients except the onion in a food processor and blend until very smooth.
  • Pour into a bowl and stir in the onion.
  • Use immediately.
  • I sometimes add more cilantro and jalapeno.

Avocado Raita is the Indian version of guacamole and tastes yummy with just about anything you serve it with. Turn up the heat by adding more red chilli powder and chopped green chillies! I got this recipe from the internet. Enjoy!

Number Of Ingredients 10

2 ripe avocados
1 medium onion, chopped very fine
2 medium tomatoes, chopped very fine
1 green chili, chopped very fine
1/2 teaspoon red chili powder
1 teaspoon cumin powder
1/2 cup fresh cilantro leaves, chopped (replace with parsley if you dislike cilantro as much as I do)
1/2 lemon, juice of
1 cup unsweetened plain yogurt, whisked smooth
salt

Steps:

  • Remove the peel and seed from the avocados and put into a mixing bowl. Mash till almost smooth.
  • Add the chopped onion, tomato, green chilli, all the spices and the lemon juice and chopped cilantro or parsley. Mix until all ingredients are blended.
  • Add the yogurt, salt to taste and stir to blend with avocado mixture.
  • Chill well in refrigerator and serve.

2 ripe avocados
1 lemon, juiced
1 plum tomato, seeded and chopped
1 small white onion, finely chopped
1 medium fresh jalapeno, seeded and finely chopped
Coarse salt

Steps:

  • Halve avocados lengthwise around pit. Remove pit with a large spoon, then scoop out flesh into a bowl. Squeeze the lemon juice into bowl. Add tomato, onion, and jalapeno, and mash guacamole with a fork to desired consistency. Season guacamole with salt, to taste.

To peel & dice my avocados I slice down the middle, from the top to the pip, then follow the pip all the way around slicing to meet the slice made from the top. Then twist to separate, toss the pip & score the avocado flesh, and invert it like you would do with mango. Original recipe courtesy of allrecipes.com, but I've tweaked it a bit.

1/2 habanero peppers or 1/2 jalapeno pepper, finely diced
1 garlic clove, minced
1 dash lime juice

fresh cilantro, to taste

Steps:

  • In a bowl, mush avocados until slightly chunky.
  • Add tomato, onion, peppers, garlic, lime, salt and cilantro and mix together.
  • Serve immediately with tortilla chips, nachos, vegetables or pita bread.

  • Scrape the avocado pulp onto a small bowl; coarsely mash with a fork.
  • Add the tomatoes, scallions, jalapeno pepper, lime juice, and salt; mix until just combined.
  • Scrape into a serving dish and serve at once.
