- In a large resealable plastic bag, combine the first five ingredients; add swordfish. Seal bag and turn to coat; refrigerate for 30-45 minutes., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill swordfish, covered, over medium-hot heat or broil 4 in. from the heat for 5-7 minutes on each side or until fish just turns opaque., Cut zucchini and yellow squash lengthwise into 1/4-in. slices, then widthwise into 3-in. pieces. In a large skillet, saute the onions and rosemary in oil for 1-2 minutes or until onions are tender. Add squash; saute for 5-6 minutes or until crisp-tender. Add potatoes and tomatoes; cook just until heated through. Sprinkle with salt and pepper; toss to coat. Serve with swordfish.

- Mix together 2 tablespoons of the olive oil, lemon juice, salt, and pepper in a medium bowl. Add the fish and stir enough to get it coated. Let it marinate for about 15 minutes. Remove fish from the marinade and pat dry.
- Heat remaining olive oil in a large skillet over medium-high heat. Fry the onion until golden, about 8 minutes, then add the fish. Brown the chunks of fish, about 1 minute per side; remove from the pan and set aside.

- Soak raisins in lukewarm water for 30 minutes. Drain and set aside. Preheat oven to 400 degrees F (200 degrees C).
- Heat olive oil in a large saucepan or skillet over high heat. Saute onion and garlic until soft. Stir in raisins, tomatoes, olives, pine nuts and capers. Cover pan, reduce heat to medium and cook for 15 minutes.

- To make the onions, stir the sesame seeds in a heavy small dry skillet over medium heat until brown. Place in a small dish and set aside. Heat the peanut and sesame oils with the ginger in the skillet over medium-high heat. Add the green onions and stir-fry until almost tender, about 1 minute. Add the water and soy sauce and stir-fry until tender, but still crunchy, about 1 minute more.
- To make the swordfish, mix the sugar and pepper in a large soup plate. Dip one side of each steak in the mixture. Heat the oil in 1 very large or 2 smaller nonstick skillets over medium-high heat (you will need more oil if using 2 skillets). Add the swordfish, coated side down, and cook until the bottom is browned and caramelized, about 3 minutes. Pour the soy sauce in the skillet(s), cover and cook until the fish is glazed and just opaque throughout, about 1 to 2 minutes.
- If necessary, rewarm the onions by stirring over medium-high heat. Place 1 swordfish steak on each of 4 plates, top with the onions and sprinkle with the reserved sesame seeds. Serve immediately.

- In a bowl, combine the lemon juice and olive oil.
- Place the swordfish cubes in a shallow glass dish and sprinkle with salt and pepper to taste.
- Pour about 1/3 cup of the olive oil and lemon mixture over the fish and toss to coat evenly.
- Cover and refrigerate for 2 to 4 hours.
- Add the garlic and oregano to the remaining olive oil and lemon mixture.
- Set aside to use as a sauce.
- Preheat the broiler or fire up the barbecue.
- Cut the onion through the stem end into quarters and separate each quarter into individual pieces.
- Alternate the swordfish cubes with the onion pieces and bay leaves on skewers.
- Arrange the skewers on a broiler pan or on the grill rack.

- Prepare a charcoal grill or preheat a gas grill or broiler; the fire should be moderately hot and the rack 4 to 6 inches from the heat source. In a small food processor or blender, combine anchovies, parsley, garlic, lemon juice and zest, and 2 tablespoons oil. Process until puréed, adding a little bit of hot water (or more oil) if necessary to allow the machine to do its work. Stir the capers into the purée.
- Cut swordfish steaks in half horizontally, leaving the skin attached as a hinge. Spread about half the parsley mixture on the inside, then close the steak with a couple of toothpicks. Brush with remaining oil, then sprinkle with salt and pepper.
- Grill or broil 6 or 7 minutes a side, or until the swordfish is done (swordfish is best when it is still slightly pearly, or you can cook it until it is flaky and well done). Serve with remaining green sauce.

- Brine the fish: Combine kosher salt and 2 cups water in a large mixing bowl and stir to dissolve the salt; add ice. Place the swordfish fillets in the brine and leave for 1 hour. Remove the fish from the brine, dip briefly in salt-free ice water and dry it thoroughly with paper towels. Lay the fish out flat on parchment-lined baking sheets; cover and refrigerate for about 4 hours (ideally). This step is optional. Prepare the grapes and onions: Heat 3 tablespoon olive oil in a large sauté pan set over medium-high heat. Add the onion slices, garlic, rosemary, vinegar and honey; cook until the onions soften, about 4 minutes. Lower the heat to low and season the onions with salt and pepper. Cover the pan and cook until tender, stirring occasionally, about 10 minutes. Add the grapes, cover the skillet again and cook until they begin to split, about 5 minutes. Grill the fish: Meanwhile, cut out the bloodlines on the fish if necessary. Brush the swordfish with the remaining olive oil and season with more salt and pepper. Grill or broil the fish until just cooked through, 3 to 4 minutes per side. Plate the dish: Discard the rosemary sprigs and smashed garlic from the sautéed grape mixture, then spoon some onto each of warmed warmed plates. Top with swordfish, garnish with a bit of fresh rosemary and a drizzle of the accumulated pan juice and serve immediately.
SEARED SWORDFISH WITH CAPER-ONION SAUCE
Steps:
- Heat the oil in a large skillet over medium-high heat. Add the onion and sauté for 1 minute. Add the capers and sauté until the onions are just barely translucent, about 2 minutes. (Be careful when you add the capers; they may spit in the hot oil.) Push the vegetables to the side of the pan with a spatula.
- Sprinkle both sides of each swordfish steak with a pinch each of salt and pepper. Lay the swordfish in the middle of the frying pan, leaving the onions pushed to the side. Cook the swordfish for 2 minutes. While the swordfish cooks, stir the vegetable mixture to prevent it from burning. Reduce the temperature to medium and flip the swordfish. Spoon the vegetable mixture on top of the swordfish. Cook the swordfish for 1 1/2 more minutes, or to desired level of doneness. For medium rare, a meat thermometer inserted in the thickest part of the swordfish will read 145˚F. For medium to well done, cook the fish to 155˚F. or higher. Remove the pan from the heat and transfer the swordfish to a serving platter, leaving the onion mixture in the pan.
- Add the garlic, lemon juice, white wine, sugar, and a pinch each of salt and pepper to the onion mixture and stir. Bring to a boil over high heat and reduce the liquid to 1/4 cup, about 5 minutes. Remove from the heat, add the basil, and whisk in the butter until it melts.
- Spoon the sauce over the swordfish and serve.
SICILIAN SWORDFISH WITH ONIONS

- 1 Pour 2 tablespoons of the oil into a medium skillet. Add the onion and cook until softened, about 5 minutes. Stir in the anchovies and cook 5 minutes more or until very tender. Add the tomatoes, oregano, salt, and pepper and simmer 10 minutes. 2 Place a rack in the center of the oven. Preheat the oven to 350°F. Oil a baking pan large enough to hold the fish in a single layer. 3 Pat the swordfish steaks dry. Place them in the prepared pan. Sprinkle with salt and pepper. Spoon on the sauce. Toss the bread crumbs with the remaining 1 tablespoon of the oil. Scatter the crumbs over the sauce. 4 Bake 10 minutes or until the fish is just slightly pink in the center. TUNA OR SWORDFISH WITH ONION CONFIT

- Put the olive oil in a 10- or 12-inch skillet over medium heat. Add the onions, a healthy pinch of salt, some pepper, and the thyme. Cook, stirring occasionally, until the mixture starts to sizzle, a minute or two. Adjust the heat so that you have to stir only every 5 minutes at most to keep the onions from browning. They will become progressively softer; do not allow them to brown. Figure at least 30 minutes total for the onions to cook.
- Core the tomatoes, then cut them in half horizontally. Squeeze and shake out the seeds, then cut the tomatoes into 1/2-inch dice. Preheat a grill to moderately hot.
- When the onions are very soft, almost a shapeless mass, season the fish and grill it, turning once, for a total of about 6 minutes for tuna, 8 to 10 minutes for swordfish; check for doneness by making a small cut in the center of the fish and peeking inside. (Tuna can be quite rare; swordfish is best cooked to medium, when its interior is still slightly pearly rather than completely opaque.) While the fish is grilling, stir the olives and tomatoes into the onions and raise the heat a bit; cook, stirring occasionally, until the tomatoes liquefy and the mixture becomes juicy. Taste and adjust the seasoning. Serve the fish on a bed of the onion confit.
- Variations
- Chicken with Onion Confit: Serve the onions with grilled skinless, boneless chicken breasts.
- Omit the thyme and use a bay leaf instead, or finish the dish with a handful of chopped fresh basil, chervil, or parsley.
- Cook some finely chopped aromatic vegetables, like carrots, celery or fennel, and garlic, along with the onions.

- Combine 1/4 cup maple syrup, teriyaki sauce, lemon juice and garlic in a large zipper bag. Add fish. Marinate in refrigerator for 20 minutes.
- Prehet grill. While fish marinates, coat one side of 12-in square of tin foil. Place onions on half of tin foil. Combine 2 T maple syrup and butter, stirring well. Drizzle syrup mixture over onions. Fold foil over onion and crimp edges to seal.
- Place foil packet on grill. Cover and grill for 20 minutes or until onion is tender and golden. Set aside and keep warm.
- Remove fish from marinade, reserving marinade. Place marinade in a small saucepan and bring to a boil. Set aside.
- Place fish on grill rack and grill 4-6 minutes on each side or until fishflakes easily with a fork, basting often with reserved marinade.
- Place fish on platter, top evenly with onions.
