Braised Lamb Chops en Cazuela with Potato-Artichoke Gratin and Red Wine Reduction image

2 tablespoons olive oil
4 lamb chops, shoulder cut, 1 1/4 inches thick
Salt and freshly ground pepper
1 Spanish onion, coarsely chopped
2 carrots, coarsely chopped
2 stalk celery, coarsely chopped
1 cup red wine
1 cup port
4 cups chicken stock
1 bay leaf
4 fresh thyme sprigs, plus chopped leaves for garnish
2 tablespoons cold butter
Potato-Artichoke Gratin, recipe follows
Parsley, chopped for garnish
4 artichokes
1 large onion, chopped
1 lemon, quartered
1 cup dry white wine
3 large baking potatoes, like russets, thinly sliced on a mandoline
Salt and freshly ground pepper
1 1/4 cups heavy cream
3 sprigs fresh thyme
2 tablespoons finely chopped fresh thyme
1/4 cup freshly grated Parmigiano Reggiano
1/4 cup fresh bread crumbs

Steps:

  • Preheat oven to 350 degrees F.
  • Heat olive oil in a large Dutch oven and sear lamb chops until golden brown on both sides. Remove to a plate. Add onions, carrots, and celery to the pan and cook until the vegetables are golden brown. Add red wine and port and cook until almost reduced.
  • Add the chops back to the pot, add the stock, bay leaf, thyme, and bring the stock to a boil. Cover the pot, place the pot in the oven, and cook for about 2 hours or until fork tender.
  • Remove the lamb to a plate, strain into a clean small pot, and cook until reduced to a sauce consistency. Swirl in butter and season with salt and pepper, to taste.
  • Place a square of Potato-Artichoke Gratin on a large plate, top with a lamb chop and ladle some of the sauce over and around. Garnish with a sprig of fresh thyme and chopped parsley.
  • Place the artichokes, onion, lemon, wine and water to cover in a medium saucepan, cover with a clean dish cloth and simmer over medium-high heat until the artichokes are tender, about 20 to 30 minutes.
  • Drain the artichokes and when cool enough to handle, cut off the top half, trim leaves, remove choke, and remove heart. Slice heart into thin slices.
  • Preheat oven to 375 degrees F.
  • Butter a 8 x 8-inch baking dish and place a layer of potatoes on the bottom, place 1/4 of the artichoke hearts over the potatoes, season with salt and pepper, drizzle with 1/4 cup of the cream and some of the thyme. Repeat to make 5 layers ending with a layer of potatoes. Combine the cheese and bread crumbs and sprinkle over the top.
  • Place on a baking sheet and bake for 35 to 40 minutes or until the potatoes are cooked through and the top is golden brown and bubbly. Let rest 10 minutes before cutting.

150 grams Leeks (finely chopped)
1 tsp butter
1 Tbsp Pastry flour
60 grams Crème fraiche
1 egg white
3 Tbsps Tilsit cheese (finely grated)
2 tsps finely chopped Sage
salt

1 small onion (finely chopped)
80 grams Root system (Carrot, leek, celery, finely chopped)
1 tsp Pastry flour
200 milliliters clear Vegetable broth
2 garlic cloves (finely chopped)
1 bay leaf
salt
freshly ground peppers
125 grams Crème fraiche

Steps:

  • For the lamb: season lamb with salt and pepper. Heat olive oil in a pan and sear meat on both sides.
  • For the cheese crust: heat butter in a pan and saute leeks until soft, dust with flour and mix well. Add sour cream and bring to a boil. Remove from heat and add sage, beaten egg white and cheese. Season with salt and pepper to taste.
  • For the sauce: saute onion in the meat drippings. Add root vegetables and saute briefly. Dust with flour, deglaze pan with broth and season with salt and pepper, simmer for about 5 minutes. Remove from the heat and add crème fraiche.
  • Spread cheese mixture on top of lamb chops and brown lightly under a hot broiler, watching carefully. Serve accompanied by the sauce.

8 lamb loin chops
1/2 ounce butter
1 onion, sliced
4 tablespoons beer
1/4 teaspoon dried mixed herbs
3 fluid ounces double cream
2 ounces sharp cheddar cheese, shredded and mixed with 2 tsp. snipped chives

Steps:

  • Broil or grill the chops for 5-10 minutes on each side, depending on the thickness.
  • Remove and keep warm.
  • Melt the butter in a non-stick pan, add the onions and cook until soft.
  • Add the beer and herbs and boil for 1 minute, stir in the cream and heat through.
  • Remove from the heat, add the cheese and chives and stir until melted.
  • Pour over the chops and serve immediately.

This recipe for lamb chops is a favorite in my house. It is an easy and quick recipe for two people (we eat two chops each). Rosemary and thyme give it great flavor. If you double the recipe, remember that the sauce will take longer to reduce.

¾ teaspoon dried rosemary
¼ teaspoon dried basil
½ teaspoon dried thyme
salt and pepper to taste
4 lamb chops (3/4 inch thick)
1 tablespoon olive oil
¼ cup minced shallots
⅓ cup aged balsamic vinegar
¾ cup chicken broth
1 tablespoon butter

Steps:

  • In a small bowl or cup, mix together the rosemary, basil, thyme, salt and pepper. Rub this mixture onto the lamb chops on both sides. Place them on a plate, cover and set aside for 15 minutes to absorb the flavors.
  • Heat olive oil in a large skillet over medium-high heat. Place lamb chops in the skillet, and cook for about 3 1/2 minutes per side for medium rare, or continue to cook to your desired doneness. Remove from the skillet, and keep warm on a serving platter.
  • Add shallots to the skillet, and cook for a few minutes, just until browned. Stir in vinegar, scraping any bits of lamb from the bottom of the skillet, then stir in the chicken broth. Continue to cook and stir over medium-high heat for about 5 minutes, until the sauce has reduced by half. If you don't, the sauce will be runny and not good. Remove from heat, and stir in the butter. Pour over the lamb chops, and serve.

A wonderful dish--simple, delicious comfort food. I seared the lamb chops in a hot skillet coated with a little olive oil before adding them to the potatoes in the oven (reducing roasting time accordingly) and scattered chopped flat-leaf parsley along with the olives, tomatoes and feta to add some color. 3 large russet potatoes, peeled and each cut into 8 wedges
2 tablespoons olive oil
1 tablespoon chopped fresh rosemary, divided
1 tablespoon chopped garlic
8 lamb loin chops (1-inch thick)
1/2 cup chopped seeded tomatoes
1/3 cup crumbled feta cheese
1/3 cup chopped pitted kalamata olive
kosher salt
fresh ground black pepper

Steps:

  • Preheat oven to 450°F.
  • Toss together potatoes, oil and half of rosemary on a large rimmed baking sheet; sprinkle with salt and pepper.
  • Roast until potatoes are almost tender, about 30 minutes.
  • Meanwhile, press garlic and remaining rosemary onto both sides of the lamb chops; sprinkle with salt and pepper.
  • Arrange lamb on baking sheet next to potatoes; roast until potatoes are tender and lamb is cooked to desired doneness, about 18 minutes for medium-rare.
  • Mound potatoes in center of platter and surround with lamb chops. Sprinkle with tomatoes, cheese and olives.
