- Preheat oven to 400 degrees F (200 degrees C).
- In a large bowl, stir together, flour, sugar and salt. Add water, 1 egg white and melted butter; mix well to make a stiff dough. Knead until dough is smooth, about 5 minutes.
- Divide dough into 10 balls. Roll each ball on lightly floured surface until paper thin. Place on ungreased baking sheet. Brush with egg white and sprinkle with sesame seeds.
- Bake in preheated oven for 10 to 12 minutes, until browned.

- Preheat oven to 400 degrees F (200 degrees C). Arrange oven racks so you have one low and one high in the oven.
- Cut a shallow slit along the side of the eggplant and place into a baking dish.
- Roast in preheated oven on the lower rack until the eggplant is completely shrunken and soft, about 40 minutes. Move dish to higher rack and continue baking until the skin is charred, about 5 minutes more. Let eggplant cool until cool enough to handle.
- Peel and discard skin from eggplant. Put eggplant into a bowl; add tahini, garlic, lemon juice, red pepper flakes, and salt. Stir until ingredients are evenly mixed. Drizzle olive oil over the baba ghanoush and garnish with parsley.

THICK-STYLE LEBANESE GARLIC SAUCE
This version is a fail-safe recipe that our family has perfected for the Lebanese Garlic Sauce. - Place the garlic, salt, lemon juice, vegetable oil, and olive oil in a quart-sized jar. Submerge an immersion blender in the mixture to the bottom of the jar. Mix with the blender resting on the bottom of the jar until the ingredients thicken, 1 to 2 minutes. - For souvlaki, mix first 5 ingredients to make a marinade and set aside. Distribute lamb, bell peppers, onion and tomatoes among 8 skewers. Place in a large shallow pan with marinade. Cover and refrigerate at least 3 hours, rotating skewers once. Heat a gas grill to medium, or use a charcoal grill and allow the coals to turn a light-ash color. Coat grill with cooking spray. Grill until lamb is medium rare and lightly charred, 5 to 8 minutes. Rotate to cook evenly. To cook in oven, broil on metal skewers 6 minutes, rotating until evenly browned. Grill or toast pitas. For sauce, puree cucumbers and a pinch of salt in a food processor. Place in a fine-screen colander and squeeze out the juice. Reserve juice and discard pulp. Whisk cucumber and lemon juices in a bowl with yogurt. Mix in garlic; season with salt and pepper. Serve with pitas and skewers.

- Heat butter and oil in a saucepan until the butter is melted.
- Add garlic to saucepan and stir until fragrant. I recommend using ready to use pre-diced garlic or garlic paste. If you don't have these then try to get your garlic as fine as possible.
- Add flour to garlic and butter mixture in saucepan and stir until fully incorporated.
- Add heavy cream and chicken broth to the saucepan and continue cooking over medium-low heat, stirring frequently, for approximately 10 minutes.
- Add about a teaspoon of salt, more or less to taste, then cover and cook on low heat for another 5 minutes.
- This sauce goes fantastic with pork chops and chicken breasts. Serve immediately over fully cooked chicken or pork chops.
LAMB IN FRAGRANT GARLIC CREAM SAUCE (ROGAN JOSH)
A friend of mine made me this dish, and I was so in love with it she bought me a copy of the book she got it from, Classic Indian Cooking by Julie Sahni. Don't be intimidated by this recipe - it is really very simple, if time consuming, but once you taste it - oh! It's so worth it! Serve with other Indian-inspired side dishes or basmati rice and a simple sauteed spinach dish.

- Put the ingredients for the marinade except the ghee into a food processor and blend until finely pureed.
- Pour the marinade over the lamb, the pour the ghee over it.
- Mix thoroughly to coat the lamb pieces, then cover and let the meat marinate at least 1/2 hour at room temperature, or 2 hours in the fridge.
- Transfer the meat and the marinade into a large dutch oven.
- Bring the contents to a boil over med-low heat, reduce the heat and simmer, covered, until the lamb is very tender (about 2-2 1/2 hours depending on the quality of the meat).
- Stir frequently to prevent the sauce's sticking to the bottom of the pan and burning.
- Heat the 4 tbl ghee in a small frying pan on high heat.
- When it is very hot, add the garlic, and fry for 15 seconds stirring very rapidly.
- Add the cardamom, cumin, and garam masala.
- As soon as the spices begin to sizzle and become fragrant (3-5 seconds), turn off the heat and pour the spiced butter and spices over the meat.
- Add the cream and stir to combine the ingredients.
- Allow the lamb to then rest at room temperature for 2 hours.
- When ready to serve, taste for salt, then reheat the meat until piping hot and serve.
- Note: sometimes too much moisture evaporates during cooking which causes the ghee to separate from the sauce; If that happens, add a little milk or water, a tbl at a time, until the fat is re-incorporated back into the dish; Don't degrease since the ghee is a flavoring for the dish.
- Note 2- Rogan Josh improves in flavor with keeping, so I usually make it the day or two before I plan to serve it; It will keep in the fridge for 3 days, and freezes well.
- Note 3- serve with basmati rice.
LAMB ROGAN JOSH
Steps:
- First, heat the oil in a large pan and fry the lamb for 3 to 4 minutes until sealed.
- Add in your jar of Handi Tarka Base. Then fill the jar halfway with water and add this to the pan.
- Stir in the Handi Tarka base and water into the meat.
- Bring the ingredients to boil and simmer on low heat with the lid on for 25 minutes. Every few minutes, be sure to stir the mix so that it doesn't stick to the base of the pan. * If you are using mutton, add more water halfway through and continue simmering for an additional 10 minutes.
- Add the sliced capsicum. Option to add the chillis here if you prefer your Lamb Rogan Josh to be hotter.
- If your sauce is thickening too much at this point, add a splash of water and cook for a further 3 to 4 minutes. Stirring occasionally.
- In a separate frying pan, fry the onion rings and tomatoes in a drizzle of oil for 3 to 4 minutes until they brown.
- For optimum flavour in finishing, serve the Rogan Josh with hot chapatis.

SHRIMP WITH GARLIC CREAM SAUCE OVER LINGUINE

- In a saucepan bring 6 cups of water to a boil. Using a small paring knife, remove the vein along the back of each shrimp and rinse under running water. Add garlic to water and boil for two minutes. Add the shrimp to the water and cook with the garlic for 2-3 minutes. Drain the shrimp and garlic. Peel the garlic and finely chop. Heat oil in a large skillet over medium heat. Add garlic and cook for 1 minute. Pour in heavy cream and bring to a simmer. Cook until cream begins to thicken. Stir in parsley, Parmesan and shrimp. Season with salt and pepper. Pour sauce over linguine in a large bowl and toss to coat. Garnish with parsley and Parmesan.

MUTTON ROGAN JOSH RECIPE
This Kashmiri Rogan josh gets as authentic as it can and tastes super delicious with succulent pieces of lamb in a super flavorsome gravy.

- Heat oil or ghee in a heavy bottom pot and add bay leaf, green cardamoms, cinnamon, cloves and black cardamoms. (If you opt for the ground spices, add them later.)
- When the spices begin to sizzle in oil, add mutton and sear it for 1 to 2 minute on a high heat.
- Reduce the heat to medium and fry for another 4 to 5 minutes until the meat is slightly brown.
- While you fry the meat, add yogurt to a mixing bowl. Also add ground spices - red chilli powder, fennel powder, dried ginger powder and salt.
- Whisk all of them well. If your yogurt is too thick (like Greek yogurt), add 3 to 4 tablespoons of water or stock and whisk it well until smooth.
- Once the meat is light brown in color, add hing to the oil. Take the pot off the stove and slowly stir in the spice and yogurt mixture.
- Mix well and place the pot back on the stove. Cook covered for 3 to 4 minutes on a medium heat.
- Pour 1 cup hot water or stock. Cook covered on a low heat until tender, adding more hot water if required.
- Stir rogan josh every 7 to 8 minutes. When it is done, the mutton pieces should be soft, tender and fall off the bone.
- The cook time depends on the kind of pot, source of heat and the intensity of heat. Do not forget to add more hot water (if required) as you cook.
- The gravy in Rogan josh is neither runny nor too thick but is slightly thick as the some of the bone marrow seeps into the liquids. This results can be achieved only by slow cooking the dish.
- Taste test and add more salt if required. Turn off the heat and rest for few hours before serving. This helps to develop the flavors.
- Serve rogan josh with Butter Naan, Basmati Rice, Paratha or Roti. It is best served with plain rice.

- Heat a heavy non-stick pan over high heat. Add the lamb and 3 tablespoons of oil. Sear the meat, turning and tossing, until nicely browned all over. Transfer meat to a plate. Add the remaining 2 tablespoons oil and the onion to the pan and cook, stirring often, until the onions are browned, about 15 minutes. Stir in the ginger, garlic, cumin, coriander, red pepper, paprika, and turmeric and cook for 3 minutes. Add the tomato puree, meat, salt, and enough water to fully cover the meat, about 1 1/2 cups. Bring contents to a boil. Reduce heat and simmer, covered, for 1 1/2 hours or until the meat is cooked and very tender. Fold in the spinach and garam marsala. Serve sprinkled with cilantro.
