7-Layer Chili Dog Dip

Steps:
- For the Chili con Carne: Heat a large pot over medium-high heat with one turn of the pan of EVOO, about a tablespoon
- When the oil ripples, add the ground chuck and brown, crumbling the meat as it cooks, about 3 minutes
- Add the onion and garlic, chili powder, grill seasoning, cumin and coriander
- Cook another five minutes
- Add beer and cook another minute, stirring to loosen any bits from the bottom of the pan
- Add the stock and tomatoes, and bring to a bubble
- Reduce heat and simmer 10 minutes
- For the 7-Layer Chili Dog Dip: Preheat oven 375F
- Arrange bacon on a broiler pan and bake until crisp, 12-15 minutes
- Roughly chop reserve
- In a medium skillet, heat one turn of the pan with EVOO about a tablespoon over medium-high heat
- Add chopped hot dogs to skillet and lightly brown
- Reserve
- Ladle chili in the bottom of a glass 8x8" baking dish
- Layer with the diced hot dogs, followed by cheese
- Bake 12-15 minutes
- Top with dollops of sour cream, reserved bacon and sprinkle with tomatoes, red onions, and cilantro, if desired
- Serve with tortilla chips for dipping

- Mix cream cheese, sour cream, and chili seasoning in a bowl.
- Spread mixture in the bottom of a dish.
- Add chili onto of the cream cheese mixture.
- Top chili with cheese.
- Dice green and white onions and sprinkle on top of the dip.
- Place in oven for approximately 10 minutes: until cheese is melted and chili is bubbling.
- Serve!

- Heat the oil in a large nonstick skillet over medium-high heat, add half of the onion and the garlic and cook, stirring, until soft and just begins to brown, about 4 minutes. Add the tomato paste, chili powder, 1/2 teaspoon salt and the cayenne pepper. Cook, stirring, until the oil is brick red, about 2 minutes. Add the chicken broth and bring to a simmer. Cook until thickened slightly, about 3 minutes. Add the shredded chicken and stir until just warmed through, remove from heat and cool to room temperature.
- Whisk together the sour cream, cilantro, lime juice and zest in a small bowl. Toss together the corn and pepper in another small bowl.
- Layer the dip in a medium, straight-sided 3-quart glass trifle bowl or your favorite serving dish. Spread the cornbread on the bottom, then top, in even layers, with the tomatoes, beans, cheese, cilantro-lime sour cream, chicken chili, the remaining chopped onions and the corn-pepper mixture.
- Wrap and refrigerate until chilled, at least 1 hour or overnight. Serve with chips for dipping.

- 1. Preheat oven to 375 degrees. In a 2 qt baking dish place softened cream cheese and spread over bottom of the pan evenly.
- 2. Once cream cheese is spread out, layer green chilies and if using jalapenos spread evenly over cream cheese.
- 3. For the third layer, spread chili over peppers and cream cheese evenly.
- 4. For the fourth layer, evenly spread your shredded cheese. Finally for the fifth layer, top with green onions.
- 5. Once layers are assembled place dip in the oven and bake for 20 minutes.
- 6. Let cool for about five minutes {unless you want it hot and gooey). Serve with tortilla chips and enjoy.

The complete dip can be prepared and refrigerated until ready to bake. The jalapeno is only optional, I like to add it into the cream cheese. The success of this dip will depend on the quality of chili you use so make certain to use a good-quality canned chili or use homemade, for extra heat use extra spricy chili.

- Grease a 9-inch pie plate.
- Mix both packages cream cheese with jalapeno pepper (if using) then spread on the bottom of the pie plate.

- Mix softened cream cheese with Worcestershire Sauce & mayonnaise (or Miracle Whip) until smooth. Feel free to add more or less Worcestershire sauce for your personal taste.
- Spread the mixture on a plate, I usually use a plate the size of a dinner dish.
- Gently spread the chili sauce over the top of the cream cheese mixture. (Like spreading pizza sauce over the crust).
- Sprinkle the well drained crab meat over the top of chili sauce.
- Finally, sprinkle the parsley over the top.
- Refrigerate until ready to serve.
- Serve with crackers.

- Heat the oil over medium high heat in a large pot. When the oil is hot and rippling, add the ground beef. Cook, breaking up, until browned and cooked through. Drain, if needed. Add the onion, chili pepper, grill seasoning, cumin and coriander; cook another 5 minutes.
- Add 1/2 cup of the beef stock and allow to cook another minute or two, scraping up any browned bits on the bottom of the pan. Add the remaining stock and the tomatoes. Bring to a bubble, reduce the heat, and cook for an additional 10 minutes.
- Preheat the oven to 375°F.
- Arrange the bacon on a broiler pan and cook until crisp, 12-15 minutes. Roughly chop and reserve.
- Meanwhile, in a pan, heat the olive oil. Add the hot dogs and cook until browned. Reserve.
- Spread the chili in the bottom of an 8×8-inch baking dish. Layer the hot dogs on the chili, followed by the cheese. Bake for 12-15 minutes.
- Top with dollops of sour cream, chopped bacon, tomatoes, onion and cilantro. Serve with tortilla chips for dipping.
