MEDITERRANEAN LAYERED BAKE
Mediterranean Layered Bake - delicious layers of potato, tomatoes, aubergine, peppers and courgette topped with a cheesy white bechamel style sauce.

Steps:
- Add the sliced potatoes to a large saucepan with water and parboil (they should still be firm in the centre, but slightly softened on outside). Drain and set aside.
- Add the olive oil to a frying pan over a medium high heat, once hot, add the onion and fry for a couple of minutes until softened
- Add the peppers and garlic and fry for a further couple of minutes.
- Add the chopped tomatoes, tomato paste (puree), stock, balsamic vinegar, oregano, fresh basil and crushed fennel seeds.
- Bring to a boil and then reduce heat, and allow to gently bubble for 15-20 minutes until sauce reduces down and thickens (it's important to let the sauce reduce down and thicken otherwise it will be too watery).
- Taste sauce and season as needed with salt and black pepper.
- Set aside.
- Wipe the frying pan clean, spray with olive oil spray and place over medium heat, add the courgette and aubergine in batches until lightly browned on all sides and softened, seasoning with a little salt and black pepper as you do.
- Then you can begin the layering.
- Add half the tomato sauce to the bottom of the baking tray.
- Then add half the courgette and half the aubergine.
- Add half the potato slices in a then layer, slightly overlapping each other as you do.
- Then add the remaining tomato sauce, another layer of aubergine and courgette and then the final layer of potatoes.
- Preheat oven to 200c/fan 180c/400f or gas mark 6
- Add the milk to a saucepan, stir the cornstarch with a couple of tablespoon of water to make a slurry, add this into the milk, slowly heating until it starts to thicken. As it starts to thicken, stir in 30g of the parmesan until melted into the sauce.
- Pour the sauce over the potatoes, spreading out so it covers evenly with a spatula
- Top with the remaining parmesan and mozzarella.
- Cover with foil (it's important you use a deep enough tray so that the cheese doesn't touch the foil when covered)
- Place in the oven and bake for 30 minutes, remove foil and continue to bake for another 20-30 minutes until the top is lovely and golden.
- Sprinkle with some fresh chopped parsley
- Serve and enjoy!!

AUBERGINE AND MOZZARELLA BAKE
A simple vegetarian bake made with mozzarella and aubergine will out-class any lasagne ready-meal. Serve with crusty bread. This is designed to be a low cost recipe.

- Preheat the oven to 200C/400F/Gas 6.
- Heat a saucepan over a medium heat. Add one tablespoon of the olive oil and, once hot, add the onion and a pinch of salt. Fry the onion for 4-5 minutes, or until softened. Add the garlic and continue to cook for two minutes.
- Pour in the tomatoes and mix well, breaking up any larger bits with the back of your spoon. Season with a pinch of salt and pepper and bring to a simmer. Reduce the heat and simmer gently for 20-30 minutes, or until the tomato sauce is thickened and flavoursome.
- Meanwhile slice the aubergines lengthways into slices 5mm/¼in thick. Brush the aubergine slices with olive oil and season well with salt and pepper on both sides. Heat a griddle pan until smoking hot and then griddle in batches for 2-3 minutes on each side, or until all the slices are golden brown. Alternatively, heat the grill to high, place half of the aubergine slices on a baking tray and grill for 3-4 minutes on each side. Continue with the rest of the slices until they are all golden-brown. Remove and leave to one side once cooked.
- Add a spoonful of tomato sauce to the bottom of a medium sized ovenproof baking dish (about 28x22cm/11x8½in)and spread evenly. Top with a third of the aubergine slices.
- Follow with a third of the remaining tomato sauce and top with a third of the mozzarella. Repeat the process for another two layers finishing with tomato sauce and the mozzarella. Place into the preheated oven and bake for 25-30 minutes, or until the dish is bubbling and the mozzarella melted and golden-brown on top.
LAYERED MEDITERRANEAN MOZZARELLA EGGPLANT (AUBERGINE) BAKE
If anyone is searching for an absolute fantastic eggplant recipe, then this is one you will have to try! To save time combine the bread crumb mixture, and fry the onion and garlic ahead of time or even a day ahead. I would suggest to double this recipe, otherwise you might tend to eat the whole casserole yourself LOL... it is that good!

- Prepare a cookie sheet and coat with non-stick cooking spray (you might need two sheets for the eggplant slices).
- In a bowl mix bread crumbs with about 1-1/2 teaspoons seasoning salt, pepper 1 teaspoon garlic powder and 4 tablespoons Parmesan cheese).
- In a shallow baking dish or bowl dip the eggplant slices in the egg whites and then coat in the seasoned bread crumb mixture.
- Place the eggplant slices on prepared baking sheet/s and spray the eggplant slices liberally with cooking spray; set aside.
- In a medium frypan heat the olive oil over medium heat.
- Add in onion and garlic; cook until softened.
- Add in oregano, 1 teaspoon salt or seasoning salt and pepper; cook for 1 minute.
- Increase heat to high and add in the chopped tomatoes; cook until thickened (about 10-12 minutes) then remove from heat, add/mix in basil (if you are using dry basil add in with the oregano),.
- Set oven to broil and broil the eggplant slices one pan at a time for 3-5 minutes (per side) until brown.
- Set oven to 400 degrees.
- Layer the eggplant slices in a greased 1-1/2 - 2-quart baking dish.
- Top with the tomato/onion mixture.
- Then top the slices with mozzarella cheese and remaining 1/3 cup Parmesan cheese.
- Bake uncovered until cheese is bubbly, about 15 minutes.
- Delicious!

AUBERGINE, TOMATO & PARMESAN BAKE (MELANZANE ALLA PARMIGIANA)
Every Italian cook has their own version of this classic aubergine dish. It's even better made a day ahead

- Heat oven to 200C/fan 180C/gas 6. In a shallow pan, mix together the garlic and 4 tbsp of the olive oil. Cook over a high heat for 3 mins, tip in the tomatoes, then simmer for 8 mins, stirring every now and then. Stir in the tomato purée.
- Meanwhile, heat a griddle pan until very hot. Brush a few of the aubergines with a little oil, then add to the pan. Cook over a high heat until well browned and cooked through, about 5-7 mins. Turn them halfway through cooking. Lift onto kitchen paper and do the next batch.
- When all the aubergines are cooked, lay a few of them in the bottom of an ovenproof dish, then spoon over some sauce. Sprinkle with Parmesan and basil leaves. Add seasoning, then repeat this process with the remaining ingredients. Finally, pour the egg over the top, sprinkle over a little more Parmesan, then bake for 20 mins or until the topping is golden.

- Preheat oven to 350. Grease bottom of oval casserole or 13x9-inch baking dish.
- Arrange slices of vegetables in rows, alternating different types and overlapping slices in part to make attractive arrangement.
- Sprinkle garlic evenly over top.

- Heat oven to 220C/200C fan/gas 7. Brush both sides of the aubergine slices with 2 tbsp of the oil, lay on baking sheets, season and bake for 15-20 mins until tender, turning once. Cook the lentils following pack instructions.
- Heat the remaining oil in a large frying pan. Tip in the onions and garlic and cook until soft. Stir though the squash and the tomatoes, plus ½ can of water. Simmer for 10-15 mins until the sauce has thickened. Stir in the lentils, basil and seasoning.
- Spoon a layer of lentils into a small baking dish. Top with aubergine slices and repeat, finishing with a layer of aubergine. Scatter with mozzarella and bake for a further 15 mins until the cheese is golden and bubbling.

- Preheat the oven to 350 degrees F (175 degrees C).
- In a plastic bag, combine the flour, bread crumbs and Italian seasoning. Shake to mix. In a shallow bowl, whisk together the eggs and water. Heat the oil in a large skillet over medium-high heat. There should be enough oil to thinly coat the bottom of the skillet. Dip the eggplant slices in egg, then place in the bag and shake to coat. Fry the slices in the skillet until golden brown on each side. Remove, and drain on paper towels.
- Spread a thin layer of spaghetti sauce in the bottom of a 9 inch square baking dish. Cover with the eggplant slices, then top with more sauce. Mix together the ricotta cheese and Parmesan cheese; spread over the eggplant. Spread sauce over the cheese, and top with tomato slices. Cover with more sauce, and spread remaining cheese over the top.
- Bake for 30 minutes in the preheated oven, or until cheese is melted and sauce is bubbling.
- Meanwhile, bring a large pot of lightly salted water to a boil. Add the pasta, and cook for about 3 minutes, or until tender. Drain. Serve the eggplant tomato bake over pasta.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet over medium heat, saute the ground beef, onion and garlic for 5 to 10 minutes. Drain excess fat. Stir in the tomato paste, water, tomatoes, parsley, thyme, oregano and basil. Set aside.
