For our orangy occasion, I topped the colorful layers of this appealing salad with mandarin oranges. Presented in a glass bowl, it looks beautiful on a buffet. -Susan West North Grafton, Massachusetts

1/4 cup sliced almonds
2 tablespoons sugar
6 cups shredded lettuce
1 can (8 ounces) sliced water chestnuts, drained
1 cup frozen peas, thawed and well drained
1/2 medium cucumber, sliced
2 medium tomatoes, cut into thin wedges
2 cups shredded part-skim mozzarella cheese
1 can (15 ounces) mandarin orange, drained
DRESSING:
1/4 cup canola oil
2 tablespoons sugar
2 tablespoons cider vinegar
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large skillet, cook and stir almonds and sugar over low heat until sugar is dissolved and almonds are coated. Spread almonds on waxed paper and set aside., In a large salad bowl, layer the lettuce, water chestnuts, peas, cucumber, tomatoes, cheese and oranges. Sprinkle with the sugared almonds. Cover and refrigerate for at least 2 hours., In a small bowl, whisk the dressing ingredients. Pour over salad.

1 large yellow bell pepper, julienned
2 tablespoons lemon juice
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 large red bell pepper, julienned
1 large orange bell pepper, julienned
20 radishes, very thinly sliced
6 medium carrots, finely shredded
2 tablespoons lime juice
2 tablespoons orange juice
2 tablespoons grapefruit juice
2 tablespoons raspberry wine vinegar

Steps:

  • In a medium bowl, combine the yellow pepper, lemon juice, and 1 tablespoon olive oil and toss to coat. Season with salt and pepper and transfer to a clear serving bowl.
  • Repeat with remaining vegetables, tossing each in a different juice or vinegar and oil combination, spreading each in a thin layer in the bowl.

1 jar (6 oz) Progresso™ marinated artichoke hearts, drained, coarsely chopped
1 medium red onion, thinly sliced (1 cup)
1/2 cup coarsely chopped pitted Kalamata olives
1 cup crumbled feta cheese (4 oz)

Steps:

  • In small bowl, stir all dressing ingredients together with whisk until well blended.
  • Arrange lettuce on large serving platter. Drizzle with 3 tablespoons of the dressing. Place small dollops of hummus evenly over lettuce. Layer tomatoes, cucumbers, artichoke hearts, onion, olives and feta cheese on top of hummus. Serve with remaining dressing.

1 1/2 cups shredded mild cheddar cheese, divided
2 cups sliced fresh mushrooms
1 small red onion, sliced, separated into rings
2 tomatoes, chopped
1 (10 ounce) package frozen green peas, thawed, drained
1/2 cup kraft mayo mayonnaise
1/2 cup sour cream
1 tablespoon chopped fresh basil
4 slices bacon, crisply cooked, drained and crumbled

Steps:

  • Layer spinach, 1 cup of the cheese, the mushrooms, onions, tomatoes and peas in 3-qt.serving bowl.
  • Mix mayo, sour cream and basil.
  • Spread over salad, completely covering top of salad (gently spread the mayonnaise mixture over the entire salad, sealing to the edges to lock in the taste).
  • Cover.
  • Refrigerate at least 5 hours.
  • Sprinkle with remaining 1/2 cup cheese and the bacon just before serving.

1 (8 ounce) bag mixed greens
2 (5 ounce) cans sliced water chestnuts, drained
1 red pepper, cut into 1 inch pieces
1 green pepper, cut into 1 inch pieces
2 cucumbers, peeled, sliced
2 small tomatoes, each cut into 8 wedges
1 (10 ounce) package frozen green peas
3 cups mayonnaise
1 (1 ounce) package salad dressing mix
bacon bits
4 hard-boiled eggs, quartered
2 tomatoes, cut into eight wedges

Steps:

  • Layer all of the salad ingredients in a clear glass bowl in the order above, beginning with the greens and ending with the frozen peas.
  • Mix the dressing mix into the mayonnaise to taste (about 1/2 to 3/4 of the package). Spread the mixture over the salad so that it is completely covered. Cover tightly and refrigerate overnight.
  • Just before serving, garnish the top by alternating egg and tomato slices on the top. Sprinkle bacon bits over the top.
