- In a saucepan, combine the sugar, sugar substitute, cocoa and cornstarch. Add water and stir until smooth. Bring to a boil; cook and stir for 1 minute or until thickened. Remove from the heat; stir in butter and vanilla until smooth. Spread over cupcakes or cake while frosting is still warm.

- In a large bowl, sift flour and baking powder. Set aside.
- In a large saucepan, melt the butter. Add the white sugar, brown sugar and cocoa. Blend well.

- Pour into prepared 9 x 13 pan. Bake for 30 minutes. Centre will be firm but not hard.

QUICK AND EASY CHOCOLATE FROSTING
This is a very quick and super easy frosting recipe that tastes great. Great for busy moms. The ingredients are very easy to remember since it's an equal amount of everything. I haven't experimented with using butter or margarine instead of shortening. Would love to hear from anyone who tries that because I'm sure it would be healthier.

- Place all ingredients in a glass bowl, except for vanilla extract.
- Microwave on low heat stirring and checking every few seconds until it is evenly melted. (Original recipe said to do this in a saucepan over low heat, but I've always used the microwave and it's come out fine.).
- Remove from microwave once melted and stir again .
- When slightly cool, add vanilla extract and frost cake.
- (I once poured this frosting while it was slightly warm onto a warm cake because I was in a hurry and it turned into a beautiful chocolate glaze.) Super easy. I don't think I've found an easier recipe than this that tastes so good.

- Sift sugar, cocoa, and salt together into a bowl; set aside. Put cream cheese and butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until smooth.
- Reduce speed to low; gradually mix in sugar mixture. Pour in melted chocolate in a slow, steady stream. Gradually mix in creme fraiche.
TERMINALLY LAZY CHOCOLATE CAKE
For when you don't want to put in a lot of effort and don't want much washing up to do afterwards. I would just serve as is, but you can frost it if you want to. UPDATE 5/20/7: Some of the reviewers have not liked the combination of cloves with chocolate that much so I'm making inclusion of that ingredient optional. If you're not sure, cut back to 1/4 tsp, or try adding just a tiny bit to a small portion of the dough and see if you like the taste--or just leave it out altogether.

- Make 3 holes in the mixture.

- Place the chocolate chips in a glass bowl and microwave them for 90 seconds, at 50% power, stir and microwave again for 30 seconds at 50% power. Stir until smooth. Use whichever method works for you, just melt it slowly, until the chocolate is smooth.)
- In a mixing bowl, beat the butter on medium speed until smooth. Add 1 cup of powdered sugar and beat again. Scrape the sides and add the remaining powdered sugar. Continue beating for about a minute, scraping the sides as needed, until the mixture is smooth and creamy. Add the vanilla and the cooled chocolate and beat on high for about 2 minutes, scraping the sides as necessary, until the frosting is creamy, smooth, and very fluffy. Spread across the cake of your choice, or just grab a spoon. Enjoy!
