Ostrich meat is similar to beef but much leaner. This healthier ground meat makes a great burger, especially when flavored with onion and garlic.

1 pound ground ostrich
2 tablespoons onion (finely chopped)
1 clove garlic (minced)
1 teaspoon ​ olive oil
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Gather the ingredients.
  • Heat the olive oil in a skillet over medium heat. Add the onion and garlic and sauté until slightly brown. Set aside to cool.
  • Preheat the grill to medium-high. Place the ostrich meat in a bowl and add the onion and garlic; season with salt and pepper and mix to combine. Form into four patties about 1 inch thick.
  • Place the patties on the hot grill and cook on each side for 5 to 6 minutes or until they reach your desired doneness .
  • Serve the ostrich burgers on buns with your favorite hamburger toppings.

4 pounds cucumbers, sliced
8 small onions, sliced
1/2 cup canning salt
5 cups sugar
4 cups white vinegar
2 tablespoons mustard seed
2 teaspoons celery seed
1-1/2 teaspoons ground turmeric
1/2 teaspoon ground cloves

Steps:

  • In a large container, combine the cucumbers, onions and salt. Cover with crushed ice and mix well. Let stand for 3 hours. Drain; rinse and drain again., In a Dutch oven, combine the sugar, vinegar and seasonings; bring to a boil. Add cucumber mixture; return to a boil. Remove from the heat., Carefully ladle hot mixture into hot pint jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 15 minutes. Remove jars and cool.

6 tablespoons (3/4 stick) butter, room temperature
1 tablespoon finely chopped fresh tarragon
1 tablespoon finely chopped fresh basil
1 tablespoon finely chopped fresh Italian parsley
1 teaspoon finely grated Meyer lemon peel or regular lemon peel
1 teaspoon fresh Meyer lemon juice or regular lemon juice
1 1/2 pounds ground beef (15% fat)
Vegetable oil (for brushing)
4 sesame seed hamburger buns
1 large tomato, thinly sliced crosswise
1 bunch arugula
Ingredient info: Meyer lemons are a bit sweeter than regular lemons and have a slight floral note. They're available at some supermarkets and farmers' markets.

Steps:

  • Mix butter, all herbs, lemon peel, and lemon juice in small bowl. Season with salt and pepper. Measure 1/3 cup herb butter; transfer to sheet of plastic wrap (reserve remaining butter in bowl for spreading on buns). Using plastic wrap as aid, form butter into 3-inch-long log; wrap plastic around to seal. Freeze until firm, about 30 minutes. Cut crosswise into 4 rounds. Flatten rounds into 2-inch-diameter disks.
  • Divide meat into 4 equal pieces. Using damp hands, form each piece into ball. Using thumb, make deep wide indentation in center of each ball. Press 1 lemon-butter round flatly into indentation, then press meat securely over butter to enclose. Flatten each burger into 31/2-inch-diameter patty, leaving butter rounds horizontally in center of each burger. DO AHEAD: Herb butter and burgers can be made 6 hours ahead. Place burgers on baking sheet, cover with plastic wrap, and chill. Cover and chill herb butter in bowl; bring to room temperature before continuing.
  • Brush barbecue rack with oil. Prepare barbecue (high heat). Sprinkle both sides of burgers with salt and pepper. Spread remaining butter over cut sides of buns. Grill burgers until cooked through, 4 to 6 minutes per side. Grill buns until slightly charred, about 1 minute per side.
  • Place burgers on bun bottoms. Top with tomato slices and arugula leaves. Cover with bun tops and serve.

My great grandma's bread and butter pickle recipe. This is a canning recipe, so you'll have some for the whole winter!

5 cucumbers, thinly sliced
3 onions, sliced
¼ cup salt
1 cup white vinegar
1 cup water
¾ cup white sugar
½ teaspoon celery seed
½ teaspoon mustard seed
½ teaspoon ground ginger
¼ teaspoon ground turmeric
4 1-pint canning jars with lids and rings

Steps:

  • Mix cucumbers and onions together in a bowl. Stir in salt and let sit for 2 hours.
  • Stir vinegar, water, sugar, celery seed, mustard seed, ginger, and turmeric together in a saucepan over medium-high heat. Bring to a boil; add cucumber mixture and continue to boil until cucumbers and onions are tender, about 5 minutes.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the hot cucumber mixture into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 15 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool dark area.

Steps:

  • In a large nonstick skillet, heat oil over medium-high heat; saute onion 2 minutes. Add garlic; cook and stir 1 minute. Stir in carrot and spices; cook and stir until carrot is tender, 2-3 minutes. Remove from heat., In a large bowl, mash pinto and black beans using a potato masher. Stir in mustard, soy sauce, ketchup and carrot mixture. Add oats, mixing well. In Asian cooking, angled loofah is typically braised or served in soups, but it's also perfectly suited to pickling. Try to buy young loofah (no longer than 12 inches). Active time: 10 min Start to finish: 1 1/4 hr (plus 2 days for marinating)

1 angled loofah (1/2 lb)
2 tablespoons kosher salt
2 cups ice cubes
1 cup cider vinegar
1/2 cup water
3/4 cup sugar
1 teaspoon mustard seeds
1/2 teaspoon celery seeds
1/4 teaspoon turmeric
1 medium sweet onion (1/2 lb), thinly sliced crosswise and separated into rings

Steps:

  • Scrub loofah and peel only the ridges, then cut diagonally into 1/2-inch-thick slices. Toss loofah with kosher salt in a bowl, then cover with ice and let stand 2 hours. Drain and remove any unmelted ice.
  • Bring vinegar, water, sugar, mustard seeds, celery seeds, and turmeric to a boil in a 1-quart nonreactive saucepan, stirring until sugar is dissolved. Add loofah and onion, then reduce heat and simmer, uncovered, 5 minutes.
  • Transfer pickles with liquid to a 1-quart heatproof glass or ceramic bowl and cool to room temperature. Chill, covered, at least 2 days (for flavors to develop) and up to 1 month.

1 tablespoon pickling spice
1 tablespoon ground turmeric
3 cups distilled white vinegar
3 cups water
1 ½ cups sugar
4 teaspoons sea salt

Steps:

  • Divide cucumber slices among canning jars. Add 1/2 teaspoon pickling spice and 1/2 teaspoon turmeric to each jar.
  • Stir vinegar, water, sugar, and sea salt together in a large saucepan and bring to a boil. Cook and stir until the sugar and salt dissolve; cook at a boil for 2 minutes.
  • Carefully fill jars with brine to within 1/2 inch of the rim, covering the cucumbers completely. Discard any leftover brine.
  • Place the lids on the jars. Refrigerate at least 24 hours before serving. Store in the refrigerator for up to 6 months.
