Steps:
- Combine gin, lemon juice, and simple syrup in a cocktail shaker. Fill shaker with ice, cover, and shake vigorously until outside of shaker is very cold, about 20 seconds.
- Strain cocktail through a Hawthorne strainer or a slotted spoon into a large flute. Top with Champagne; garnish with lemon twist.

- In a pitcher, combine the lemonade and vodka. Slowly stir in the champagne. Pour into ice-filled glasses and garnish with mint sprigs.
- Cook's Note: To make vanilla-flavored vodka, place 3 whole vanilla beans in a 750 ml bottle of plain vodka. Place the bottle in a cool dark place for at least 10 days to allow the vanilla to infuse the vodka. Open the bottle occasionally during the infusion time.
CHAMPAGNE LEMONADE
Steps:
- Put the sugar and 1 cup water into a small saucepan and bring it to a boil. Cook for 1 minute until the sugar has dissolved, turn off the heat, and allow the sugar syrup to cool.
- In a pitcher combine the cooled sugar syrup with the lemon juice and remaining 2 cups water and mix well. Fill a Champagne flute halfway with the lemonade and top with Champagne. Garnish with a lemon slice.
CLASSIC CHAMPAGNE COCKTAIL
This minimalist drink of sugar that's been soaked in bitters and topped with Champagne was first mentioned in Jerry Thomas's book 1862 "How to Mix Drinks." It's both festive and resplendent with bubbles as written, but there's also room to customize: Split the amount of Angostura bitters with a lesser-used bitter (grapefruit, celery, orange, persimmon, for example) from your bar. Trade granulated or Demerara sugar for the sugar cube: The drink's flavor will remain the same, lacking only in the drama of the cube bubbling to its demise at the base of the glass. Finally, use Champagne if you're on a champagne budget, and dry sparkling wine if you're not.
