CHICKEN TORTILLA SOUP I
This chicken tortilla soup is quick to make, flavorful, and filling! Serve with warm corn bread or tortillas. This also freezes well. Garnish with chopped fresh avocado, Monterey Jack cheese, crushed tortilla chips, or green onion!

Steps:
- In a medium stock pot, heat oil over medium heat. Saute onion and garlic in oil until soft. Stir in chili powder, oregano, tomatoes, broth, and water. Bring to a boil, and simmer for 5 to 10 minutes.
- Stir in corn, hominy, chiles, beans, cilantro, and chicken. Simmer for 10 minutes.
- Ladle soup into individual serving bowls, and top with crushed tortilla chips, avocado slices, cheese, and chopped green onion.

CREAMY CHICKEN TORTILLA SOUP
A restaurant in my town had the best creamy chicken tortilla soup, but they closed up and I have not been able to find a great tortilla soup since. I decided to create my own based on recipes that I had tried in the past. My husband couldn't get enough of it, so I knew it was a hit. Optional toppings: sour cream, shredded Cheddar, and avocado.

Steps:
- Heat oil in a large saucepan over medium heat; stir in onion and garlic. Saute until the onion has softened and turned translucent, about 5 minutes.
- Add broth, condensed soup, picante sauce, chili powder, oregano, cumin, cilantro, pepper, and bay leaf; bring to a boil. Add chicken, corn, and half-and-half. Cover and simmer for 30 minutes.
- Ladle into bowls and top with tortilla strips.

LEMON CHICKEN TORTILLA SOUP
Whenever I go out to restaurants, there's always one thing I look for first: chicken tortilla soup. So one day I decided to save myself the trouble of going out and tried making my own from a recipe online (and there are a lot!). I couldn't exactly decide which one would yield the best results so I just took a shot at it from reviewing the basic ingredients (all recipes for this dish are basically the same, with some minor differences). After about four months of making chicken tortilla soup for myself, I've gotten to the point where I'm comfortable making it the same way twice from my own recipe.

Steps:
- Start off by chopping up the raw chicken into small strips or roughly chop it into small, uneven pieces. In large pot, heat about 2 tablespoons of olive oil on medium-high. Throw chicken into the pot stirring occasionally.
- As the chicken cooks, finely chop the onion and garlic and throw into the pot once chicken is mostly white.
- Add oregano, cumin, and chili powder.
- Stir in to mix the ingredients.
- At this point what I do is add lemon juice so it's properly incorporated into the dish.
- Let chicken cook until finished (about 5 minutes at this point with frequent stirring).
- Roughly chop the cilantro and tomato and add to chicken.
- Let cook for about 5 minutes.
- You should start to notice a good amount of liquid in the pot from the oil, lemon, and tomato.
- This is when I add the tomato sauce and stir.
- Again, I let sit for about 5 minutes.
- Once it's all nicely incorporated, add the chicken broth.
- Bring to a boil, then reduce to a simmer.
- Add black beans.
- Simmer for about 15 minutes.
- The soup should be an deep red color when finished.
- Ladle into a bowl, add more fresh cilantro, cheese, and crushed tortilla chips. Enjoy!

ANAHEIM CHICKEN TORTILLA SOUP

- Place the Anaheim peppers on a foil-lined baking sheet. Broil peppers 4 in. from heat until skins blister, about 5 minutes. With tongs, rotate peppers a quarter turn. Broil and rotate until all sides are blistered and blackened. Immediately place peppers in a large bowl; let stand, covered, 20 minutes., Peel off and discard charred skin. Remove stems and seeds. Coarsely chop peppers; set aside., In a large skillet, heat 2 tablespoons oil. Fry tortilla strips in batches until crisp and browned. Remove with a slotted spoon; drain on paper towels., In a Dutch oven, heat 2 teaspoons oil over medium-high heat. Add onions; cook and stir until tender. Add garlic; cook and stir 1 minute longer. Add broth, tomato puree, cilantro, cumin, coriander, bay leaf, half of the fried tortilla strips, reserved peppers and, if desired, jalapenos. Bring to a boil. Reduce heat; simmer, uncovered, 35 minutes., Remove soup from heat; cool slightly. Discard bay leaf. Process in batches in a blender until blended. Return to the Dutch oven., In a large skillet, heat remaining oil over medium-high heat. Add chicken; cook and stir 4-5 minutes or until no longer pink. Add chicken, lemon juice, salt, pepper and cayenne to the soup; heat through. Serve with cheese, avocado and remaining tortilla strips.

- Heat 2 teaspoons of the oil in a large pot over medium heat. Add half of the tortilla strips, stirring often, until crisp. Drain on paper towels. Repeat with remaining 1/2 teaspoon of oil and remaining tortilla strips and set aside.
