2 1/4 cup nonfat plain Greek yogurt
1 tablespoon maple syrup
1/2 teaspoon lemon peel, plus more for garnish
1/2 teaspoon vanilla extract
1/8 teaspoon no-calorie sweetener
6 full sheet low-fat whole-grain graham crackers,
broken into halves

Steps:

  • 1. Line 8 1/2" by 4 1/2" loaf pan with plastic wrap, leaving overhang on two long sides. 2. In bowl, stir yogurt, syrup, lemon peel, vanilla, and sweetener to blend. 3. Line bottom of loaf pan with 3 graham cracker halves. Spread one-third of yogurt mixture over crackers. Repeat layering twice. Top with remaining 3 crackers. 4. Using plastic overhang, wrap cake. Refrigerate at least 2 hrs. or up to 4 hrs. Unwrap; using overhang, pull cake out of pan. With serrated knife, gently cut into 6 slices to serve. Garnish with lemon peel.

4 ounces cream cheese, softened
3 cups heavy cream
1/3 cup confectioners' sugar
2 teaspoons lemon zest, plus for garnish
1/2 teaspoon vanilla extract
11 ounces vanilla wafer cookies
10 ounces lemon curd

Steps:

  • Beat the cream cheese in a large bowl with an electric mixer until soft. Add the cream, sugar, lemon zest and vanilla and beat until it just holds stiff peaks.
  • Spread the bottom of a 9-by-13-inch baking dish with 1/2 cup of the whipped cream. Arrange half of the cookies on top of the cream, fitting in as many as possible without overlapping. Spoon half of the remaining cream mixture on top and smooth evenly with an offset spatula. In spoonfuls spaced every 2 inches, dollop half of the lemon curd onto the cream and then use a butter knife to swirl the curd into the cream. Top with another layer of cookies, followed by the remaining cream. Dollop with the remaining lemon curd and swirl into the cream. Cover with plastic wrap and refrigerate until the cookies have softened, at least 3 hours and up to 1 day.
  • Garnish each serving with lemon zest when ready to eat.

4-1/2 teaspoons sugar
3/4 cup cold butter
FILLING:
8 large eggs, separated
2 cups sugar, divided
2/3 cup lemon juice
3 tablespoons grated lemon zest
1 tablespoon unflavored gelatin
1/2 cup plus 2 tablespoons cold water, divided
1/2 teaspoon cream of tartar
TOPPING:
1 cup heavy whipping cream
1 tablespoon confectioners' sugar
1 cup sweetened shredded coconut
1 tablespoon grated orange zest

Steps:

  • In a small bowl, combine the flour and sugar. Cut in butter until crumbly. Press into a greased 13x9-in. baking dish. Bake at 350° for 18-22 minutes or until lightly browned. Cool on a wire rack., For filling, in a large heavy saucepan, combine egg yolks, 1 cup sugar, lemon juice and zest. Sprinkle gelatin over 1/2 cup cold water; let stand for 1 minute. Add to the egg yolk mixture. Cook and stir over medium heat until mixture reaches 160° and coats a metal spoon. Remove from the heat; cool completely., In another large saucepan, combine egg whites, cream of tartar, and remaining sugar and water. Cook over low heat, beating with a hand mixer on low speed until mixture reaches 160°. Pour into a large bowl; beat on high until soft peaks form. Gently fold into yolk mixture. Spread over crust., For topping, in a small bowl, beat the cream and confectioners' sugar until soft peaks form; spread over filling. Combine coconut and orange zest; sprinkle over top. Cover and chill for 4 hours or overnight. Refrigerate leftovers.

2 (3.5 ounce) packages instant lemon pudding mix
1 (8 ounce) package Cool Whip
3 cups milk
1 (16 ounce) package graham crackers
1/2 cup butter
1 1/2 cups powdered sugar
2 Tablespoons milk
2 Tablespoons lemon juice

Steps:

  • In a large bowl, mix together the pudding mixes, Cool Whip, and milk.
  • In a 9 x 13 inch pan, place a single layer of graham crackers on the bottom of the pan (you may need to break a few graham crackers so that the entire bottom of the pan is covered).
  • Spread half of the pudding mixture evenly over the graham crackers. Place another single layer of graham crackers on top of the pudding and then layer the second half of the pudding on top of those crackers.
  • Place one more single layer of graham crackers on top of the pudding.
  • Mix together ingredients for the lemon frosting and spread over all.
  • Cover and place in the fridge for about 4 hours.
  • We found that we like this cake even better then next day.

I seem to be on a roll finding no-cook, quick & easy, make-ahead desserts & this 1 by Helen Corbitt from her cookbook w/the catchy title of "Helen Corbitt's Cookbook" doesn't end my trend. Her only comment was "This dessert freezes beautifully & I always keep 1 on hand for emergencies." If you are after a low-cal or low-fat dessert, this is not for you. If you want something yummy & decadent, then read on. My view is it would make having surprise guests an almost worthwhile emergency. Enjoy!

1 lemon (peel grated & juice strained)
1 1/2 oranges (peel grated & juice strained)
1 cup butter
1 cup sugar
3 eggs (separated)
15 ladyfingers (or 1 already cooked pound cake, cut in fingers)

Steps:

  • Cream butter & sugar together.
  • Add egg yolks, grated lemon peel, grated orange peel + the strained juices & mix well.
  • Beat the egg whites till stiff & fold them into the butter mixture.
  • Line the bottom of a 1-qt mold or cake tin w/ladyfingers (or pound cake fingers) & cover them w/a layer of the butter mixture.
  • Repeat for as many layers as you can, ending w/ladyfingers or pound cake on top.
  • Refrigerate overnite or freeze for at least 2 hours & then unmold to serve.

1/4 cup pure maple syrup
1/2 cup walnuts, toasted, chopped
1/4 cup plus 1 1/3 cups maple sugar
1/4 teaspoon ground cinnamon
13 tablespoons butter, cut into pieces, room temperature
2 large eggs
2 teaspoons vanilla extract
Glaze
1 1/3 cups powdered sugar
3 tablespoons sour cream
1 tablespoon pure maple syrup
1 1/2 teaspoons fresh lemon juice
1 teaspoon vanilla extract
1/2 teaspoon grated lemon peel
Whipped cream

Steps:

  • For cake:
  • Preheat oven to 350°F. Butter 9-inch-diameter Bundt pan, then spray with nonstick spray. Combine flour, baking powder, baking soda, and salt in medium bowl. Whisk sour cream and maple syrup in another medium bowl. Mix walnuts, 1/4 cup maple sugar, and cinnamon in small bowl.
  • Using electric mixer, beat butter and remaining 1 1/3 cups maple sugar in large bowl until fluffy. Gradually beat in eggs and vanilla, occasionally stopping to scrape down sides of bowl. Add flour mixture in 3 additions, alternating with sour cream mixture in 2 additions. Transfer 2/3 of batter to prepared Bundt pan. Sprinkle with walnut mixture. Pour remaining batter into pan.
  • Bake cake until tester inserted near center comes out clean, about 55 minutes. Cool 20 minutes. Turn out cake onto rack; cool completely.
  • For glaze:
  • Whisk first 6 ingredients in medium bowl to blend. Let stand until thickened, about 30 minutes. Pour glaze over cake. (Can be made 1 day ahead. Cover and keep at room temperature.)
  • Serve cake with whipped cream.

6 ounces mascarpone cheese (about 3/4 cup)
1/3 cup confectioners' sugar

2 teaspoons maple extract

2 cups cold heavy cream
24 graham crackers (from one 14.4-ounce box)

Steps:

  • Add the walnuts to a large nonstick skillet over medium heat. Cook, stirring often, until toasted and fragrant, about 5 minutes. Transfer to a cutting board to cool. Once cool, finely chop and store in an airtight container until ready to use.
  • Meanwhile, beat the mascarpone, sugar, maple syrup, maple extract, vanilla and salt together in a stand mixer fitted with the whisk attachment on medium-low speed until smooth. With the machine running, slowly add the heavy cream, then increase the speed to medium-high. Continue to beat until fluffy and thick enough to hold stiff peaks, about 2 minutes.
  • Line the bottom of an 8-inch springform cake pan with a single layer of graham crackers, breaking up some of them to fill in any gaps. You will need 2 to 3 graham crackers per layer. Spread about 3/4 cup of the maple whipped cream evenly over the top of the crackers, making sure to go all the way to the edges. Repeat until all the crackers and whipped cream have been used, ending with a layer of whipped cream. Use a small offset spatula to create a decorative swirl on top.
  • Cover the pan loosely with plastic wrap and refrigerate until the cookies have softened and the cake is chilled through, at least 8 hours and up to 12 hours.
  • Gently run a small offset spatula or paring knife around the edge of the cake, then unlock the pan and remove the outer ring. Coat the sides of the cake with the chopped walnuts. Slice into wedges and serve.

½ cup melted butter
1 (12 fluid ounce) can evaporated milk, chilled

2 lemons, juiced
1 (3 ounce) package lemon flavored Jell-O®

½ cup graham cracker crumbs
¼ cup maraschino cherries, drained and chopped

Steps:

  • To Prepare Crust: mix graham crackers, 1/2 cup sugar and melted butter and press into 9 x 13 inch pan.
  • Mix lemon gelatin with 1 cup boiling water and let cool.
  • Meanwhile, whip the chilled evaporated milk, add the 1 cup sugar and lemon juice. Whip until sugar is dissolved. Whip in the cooled gelatin into the milk mixture then stir in pineapple.
  • Pour lemon mixture over crust in pan. Sprinkle with 1/2 cup crushed graham crackers and chopped maraschino cherries if desired. Chill several hours or overnight. Variation: Mix one 8 ounce package of cream cheese with the 1 cup sugar; add this to the whipped milk, gelatin and lemon juice mixture. Stir in pineapple then proceed as above.

1 (18 1/4 ounce) Duncan Hines lemon supreme cake mix
1 1/3 cups water
1/3 cup vegetable oil
3 large eggs
2 (14 ounce) cans sweetened condensed milk
3/4 cup lemon juice
1 (8 ounce) whipped topping

Steps:

  • Preheat the oven to 350°F.
  • Grease and flour 2 (8 or 9 inch) round cake pans.
  • Prepare cake by mixing together eggs, water, and oil with electric mixer.
  • Place batter in pans and bake 28-30 minutes.
  • Allow cake to cool 15 minutes then "flip" cakes out of the pans.
  • Allow cake to cool completely.
  • In a large bowl, blend together, the lemon juice and 2 cans of condensed milk until thick and smooth.
  • Reserve 1/2 of this mixture (about 1 1/2 c) to be used later.
  • Place the remaining mixture between the cake layer
  • With the remaining mixture, combine it with the whipped topping- this is to be used as frosting.

  • Frost cake with frosting and place back into frig - this cakes is even better if kept in the frig overnight.
