Ingredients

2 cups unbleached all-purpose flour, (spooned and leveled)
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 tablespoon finely grated lemon zest, plus 2 tablespoons fresh lemon juice
1/2 cup (1 stick) unsalted butter, room temperature
1 cup sugar
1 large egg
1 teaspoon pure vanilla extract
Lemon Glaze

Steps:

Preheat oven to 350 degrees. In a medium bowl, whisk together flour, baking soda, salt, and lemon zest. In a large bowl, using an electric mixer, beat butter and sugar until light and fluffy. Add egg, vanilla, and lemon juice and beat until combined. With mixer on low, beat in flour mixture.
Drop dough by heaping tablespoons, 1 inch apart, onto two baking sheets. Bake until edges are golden, 15 to 20 minutes, rotating sheets halfway through. Let cool 2 minutes on sheets, then transfer cookies to a wire rack to cool completely. Spread cookies with Lemon Glaze and let set, about 1 hour.

1 (18.25 ounce) package lemon cake mix
2 eggs
⅓ cup vegetable oil
1 teaspoon lemon extract
⅓ cup confectioners' sugar for decoration

Steps:

Preheat oven to 375 degrees F (190 degrees C).
Pour cake mix into a large bowl. Stir in eggs, oil, and lemon extract until well blended. Drop teaspoonfuls of dough into a bowl of confectioners' sugar. Roll them around until they're lightly covered. Once sugared, put them on an ungreased cookie sheet.
Bake for 6 to 9 minutes in the preheated oven. The bottoms will be light brown, and the insides chewy.

1 cup butter
1 cup white sugar
2 eggs
3 cups sifted all-purpose flour
1 teaspoon baking soda
1 (6 ounce) can frozen lemonade concentrate, thawed
2 tablespoons white sugar

Steps:

Preheat oven to 400 degrees F (200 degrees C). Lightly grease a cookie sheet.
In a large bowl, cream together butter and 1 cup sugar. Blend in eggs. In a medium bowl, sift together flour and baking soda; gradually beat into butter mixture, alternating with 1/2 cup lemonade concentrate. Drop mixture by rounded teaspoons onto the prepared cookie sheet.
Bake 8 to 10 minutes in the preheated oven, until lightly brown. Brush lightly with remaining lemonade, and sprinkle with remaining sugar.

These cookies are Fantastic! Crushed lemon drop candies just make these cookies burst with flavor. This recipe makes quite a bit of cookies and half were inhaled by my family by the end of the day. The recipe orginated by a lady named Ann Orton who was trying to duplicate a recipe that she had had at a restaurant in Salt Lake City. I have no idea what the originals tasted like, but these cookies would be hard to beat.

2 cups sugar
1 1/2 cups Butter Flavor Crisco
3 large eggs
2 teaspoons vanilla
1 teaspoon lemon extract
4 cups flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt
1 finely chopped lemon, zest of
1 (6 ounce) package lemon drop candies, crushed
1 cup powdered sugar
1 lemon, juice of

Steps:

Preheat oven to 350°.
In mixing bowl cream sugar, shortening and eggs; add extracts.
Stir in dry ingredients, lemon zest and crushed lemon drops.
Roll into 1-inch balls, flatten slightly and bake on parchment-lined baking sheet for 10-12 minutes.
Note: Cooking spray works well too.
Let cool slightly on pan 1 to 2 minutes.
Make a glaze by mixing powdered sugar with lemon juice; then brush lightly over cookie tops. Let cookies cool completely.
