2 packages frozen chopped spinach, thawed and drained
2 cups plain Pepperidge Farm Stuffing
1 onion, chopped
4 eggs, beaten
8 tablespoons butter
1/2 cup freshly grated parmesan cheese

Steps:

  • 1. Preheat the oven to 375 2. Combine all the ingredients in a large bowl. Form the mixture into bite-size balls and place on a baking sheet. Bake until heated through, about 20 minutes. Serve as an appetizer or side dish. Spinach balls can be frozen on the baking sheet. Defrost for 20 minutes before baking as above. Makes 36, about 6 servings

While I've seen similar posted here, have not seen this exact one. Got this from the CLBB a long time ago. They can be made ahead & frozen and are great with honey mustard.

2 cups crushed herb stuffing mix
1 cup grated parmesan cheese, firmly packed
1/2 cup butter, melted
4 scallions, chopped
3 eggs
1 dash nutmeg

Steps:

  • Combine all ingredients in a large bowl.
  • Shape into 1-inch balls.
  • Cover and refrigerate or freeze until ready to bake.
  • Arrange spinach balls on an ungreased cookie sheet.
  • Bake 10 to 15 minutes at 350 until lightly browned.
  • Serve with your favorite mustard for dipping.

2 (10 ounce) packages frozen spinach
2 cups herb seasoned stuffing mix
1 large onion, finely chopped
6 eggs, well-beaten
3/4 cup melted margarine
1/2 cup grated parmesan cheese
3/4 tablespoon cayenne pepper, to taste
1 1/2 teaspoons garlic salt
1 -2 teaspoon tony's creole seasoning

Steps:

  • Preheat oven to 325 degrees F.
  • Lightly grease a cookie sheet.
  • Cook spinach according to package directions and drain well, squeezing to remove excess moisture.
  • Combine with stuffing mix, chopped onion, eggs, margarine, cheese, Cayenne and garlic salt. Mix well.
  • Shape into 3/4-inch balls and place on cookie sheet.
  • Bake 15-20 minutes.
  • (These are successfully frozen by placing on a pan in freezer until hard, then storing in airtight bags. To serve, thaw slightly and bake 20-25 minutes.).
