COCONUT-CHOCOLATE CHIP COOKIES

Steps:
- Add the flour, baking powder, baking soda and salt to a large bowl and whisk to combine. Set aside.
- Add the coconut sugar and butter to the bowl of a stand mixer fitted with the paddle attachment. Beat together until light and fluffy, scraping down the sides of the bowl as necessary, about 2 minutes. Add the eggs, one at a time, being sure to fully incorporate before another addition. Once incorporated, add the vanilla and beat to combine. Add in the flour mixture and beat until no more flour spots are visible. Fold in the chocolate chips and coconut by hand. Cover the bowl and refrigerate for at least 2 hours or up to overnight.
- Preheat the oven to 350 degrees F. Line 2 rimmed baking sheets with parchment paper.
- Scoop out a 2-tablespoon size portion of dough and roll it into a ball. Place the dough ball on the prepared baking sheet. Continue scooping and rolling until you have about 10 to 12 cookies per sheet, leaving 2-inches between them. Bake until the edges have set, but the center is still soft, about 14 minutes.
- Allow the cookies to cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely. Let the baking sheets cool completely and bake the remaining dough. (Alternatively, the remaining cookie dough can be wrapped and frozen for up to 1 month.)
LIBBIE'S RAISIN FILLED COOKIES

Steps:
- Cook filling: Place the 1/2 cup sugar and 1 cup ground raisins in food processor.
- Add cornstarch, 1/2 cup water and salt.
- When cooked and thick, add nuts.
- To make dough, combine rest of ingredients to a soft dough.
- Roll out thin.
- Cut with cookie cutter.
- Put teaspoon of filling on one cookie and then top with another cookie. Pinch edges together.
- Bake in moderate oven at 350 degrees Fahrenheit for about 10 minutes or until browned.

- Preheat the oven to 325 degrees F (165 degrees C). Lightly grease a large glass baking dish.
- Mix graham cracker crumbs and butter together in a bowl until thoroughly moist. Transfer to the bottom of the prepared pan and press to flatten evenly. Pour condensed milk over top, leaving about a 1/4-inch border around the edges.
- Mix walnuts, pecans, almonds, coconut, milk chocolate chips, white chocolate chips, butterscotch chips, raisins, chocolate syrup, and caramel topping together in a bowl. Pour on top of condensed milk all the way to the edge.
- Bake in the preheated oven until a toothpick inserted into the center comes out mostly clean and edges are golden, 20 to 25 minutes. Remove from the oven and let cool completely before cutting into 1 1/2-inch squares to serve, about 30 minutes.

- Preheat oven to 350 degrees F (175 degrees C.) Combine the flour, baking soda, and salt; set aside.
- In a medium bowl, cream the butter, brown sugar, and white sugar until smooth. Beat in the egg and vanilla until light and fluffy. Gradually blend in the flour mixture, then mix in the coconut. Drop dough by teaspoonfuls onto an ungreased cookie sheet. Cookies should be about 3 inches apart.
- Bake for 8 to 10 minutes in the preheated oven, or until lightly toasted. Cool on wire racks.

- Line a baking sheet with waxed paper.
- Mix oats and coconut in a large bowl until thoroughly combined.
- Stir sugar, cocoa powder, milk, and margarine together in a saucepan over medium heat until the mixture is smooth. Bring to a boil and cook for 2 minutes, stirring constantly. - Heat oven to 375º.
- In large bowl, beat 3/4 cup sugar, butter, oil, milk, almond (or vanilla) extract and egg until light and fluffy.
- Stir in flour, baking powder and salt; blend well.
- Spread evenly in ungreased 15x10 baking pan; sprinkle with 1 tablespoon sugar.
- Bake at 375º for 10 to 12 minutes or until light golden brown.
- Cool 5 minutes.
