A creamy mustard and mushroom sauce perfect with pork, lamb, beef or chicken.

2 small onions (approx 60g each) (peeled and finely chopped)
1 clove garlic (crushed)
200 g button mushrooms (sliced)
1 chicken or vegetable stockpot (made up with 300ml boiling water)
3 tbsp Dijon mustard
1/2 tsp English mustard powder
3 tbsp low fat cream cheese
1 pinch black pepper
low calorie cooking spray

Steps:

  • Spray a small saucepan with low calorie cooking spray and place over a low heat.
  • Add the onion and fry for 5 - 10 minutes. Stir until golden and slightly softened.
  • Add the garlic, mushrooms, mustards and chicken stock. Simmer over a low heat, uncovered, for 15 - 20 minutes.
  • Remove the pan from the heat and stir in the cream cheese until completely blended.
  • Season to taste with black pepper.

This Creamy Dijon Sauce is light and flavorful accompaniment to dishes like savory bread pudding, crepes or my recipe for Ham and Gruyere Baked French Toast.

2 Tablespoons Butter
2 Tablespoons All-Purpose Flour
1/2 Cup Chicken Broth
1/2 Cup Whole Milk
2 Tablespoons Dijon Mustard
1/4 teaspoon Kosher Salt PLUS
1/8 teaspoon Kosher Salt
1/8 teaspoon Ground White or Black Pepper
Chopped Fresh Chives for Garnish (Optional)

Steps:

  • Over medium heat, melt the butter in a small saute or sauce pan.
  • Whisk in flour and cook for about 1 minute.
  • Reduce the heat to low, and gradually whisk in the milk. The mixture will become very thick.
  • Continue cooking over low heat and slowly whisk in the broth.
  • Once the mixture is combined and smooth, raise the heat source to medium-low and bring up to a low boil.
  • As soon as the first signs of bubbles appear, reduce the heat back down to low and simmer the sauce for 3 minutes, while whisking.
  • Whisk in the mustard, salt and pepper and simmer just until heated through, about 1 minute.
  • If the sauce becomes too thick, you can add a tablespoon of broth one tablespoon at a time in order to thin until desired thickness is acquired.

1 tablespoon brown sugar
4 boneless skinless chicken breast halves (6 ounces each)

1 small onion, halved and very thinly sliced
Minced fresh parsley

Steps:

  • Whisk together cream, mustard and brown sugar. Pound chicken breasts with a meat mallet to even thickness; sprinkle with salt and pepper., In a large skillet, heat oil and butter over medium-high heat; brown chicken on both sides. 1 tablespoon extra-virgin olive oil, or more as needed
2 ½ pounds whole pork tenderloins
salt and black pepper to taste
¼ teaspoon garlic powder, or to taste
1 onion, chopped
1 (8 ounce) package sliced fresh mushrooms
¼ cup white wine
1 (10.75 ounce) can condensed cream of mushroom soup
2 tablespoons Dijon mustard
¼ cup sour cream

Steps:

  • Heat the olive oil in a large skillet over medium heat. Season pork tenderloins with salt, pepper, and garlic powder. Cook pork in the oil, turning until browned on all sides, 5 to 6 minutes. Remove from pan, and set aside. In the same skillet, cook onion and mushrooms until they brown lightly and begin to soften; 3-5 minutes.
  • Pour wine into slow cooker; stir in the onion and mushrooms. Place browned pork on top of the vegetables.
  • Combine mushroom soup, Dijon mustard, and sour cream in a bowl. Spread mixture over pork. Cover slow cooker; cook on Low until pork is tender and liquids have formed a sauce; 7 to 8 hours.
