SIRI'S HEART SUGAR COOKIES
This recipe I revised from my grandma's Christmas angel roll-out cookies. They are sort of cakey, but this can be reduced by omitting half of the cream of tartar, though I prefer them thick and soft. Top with your favorite cream cheese or basic cookie frosting. I find it's best with almond extract and coconut on top. Enjoy!

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Beat butter and sugar with an electric mixer in a large bowl until fluffy. Add 1 egg, allowing it to blend into the butter mixture before adding the next with the vanilla extract.
- Dissolve cream of tartar in milk; beat into the butter mixture. Add 4 cups flour and pinch of salt; beat until doughy.
- Spread 1 cup flour onto a flat work surface. Roll the dough out on the prepared surface; cut out in desired shapes until all dough is used.
- Bake on non-stick baking sheets in preheated oven until cookies are set in the middle, about 12 minutes.

SHIELA'S SUGAR COOKIES
The best sugar cookie I have ever had. The frosting recipe is included. If you prefer, use vanilla extract in place of the lemon juice.

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a large bowl, cream together the 1 cup margarine, shortening, white sugar and 1 cup confectioners' sugar until smooth. Beat in the eggs one at a time, then stir in 1 teaspoon lemon juice. Combine the flour, baking soda, cream of tartar and salt; gradually stir into the creamed mixture. On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 1/2 inches apart onto prepared cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
- To make frosting, combine the 3 cups confectioners' sugar, 1/4 cup margarine and 1 1/2 teaspoons lemon juice in a medium bowl. Mix until smooth, adding milk 1 tablespoon at a time until frosting has reached its desired consistency.

RITA'S HOLIDAY SUGAR COOKIES
My family has used this recipe since I was a small child. I've reduced the amount of sugar that the original recipe called for. The cookie gets plenty of sweetness from the frosting. For the swap, I decorated some of the cookies and then I made packs of plain cookies, icing and sprinkles so that each family can have fun decorating at home. I also used the colored dough in the middle of the plain dough to make two-toned cookies, and I think this makes them adorable.

- Mix until combined well.
