This is a vegan cersion of this Starbuck's scone. This recipe origially comes from www.recipehints.com.

1 3/4 cups all-purpose flour
3/4 cup quick oats
1/2 teaspoon baking soda
2 teaspoons baking powder
1 dash salt
3/4 cup vegan sugar
1/2 cup vegan butter
2 tablespoons lemon juice
1/2 cup soymilk or 1/2 cup rice milk
1 cup frozen blueberries or 1 cup frozen raspberries

Steps:

  • Preheat oven to 400 degrees. Grease cookie sheet lightly with butter or oil.
  • In large bowl, combine flour, oats, baking soda, baking powder and dash of salt. Add in vegan sugar, butter (softened), lemon juice, and soymilk and mix until just combined.
  • Stir in blueberries and/or raspberries LAST and gently mix. Do not over mix!
  • (Over mixing dough with berries can cause your scone to have a dullish purple/gray hue rather than a warm buttery color.)
  • Drop dough into 6-7 circular clumps on cookie sheet and bake for 10-15 minutes, or until lightly browned on top.

A good basic scone recipe with blueberries added . . . yummy!!

2 cups all-purpose flour
¼ cup packed brown sugar
1 tablespoon baking powder
¼ teaspoon salt
¼ cup butter, chilled
1 cup fresh blueberries
¾ cup half-and-half cream
1 egg

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cut butter into mixture of flour, sugar, baking powder, and salt. Add blueberries and toss to mix.
  • In separate bowl beat together cream and egg, and slowly pour into dry ingredients, stirring with rubber scraper until dough forms. Knead just until it comes together, 3 or 4 times. Don't overhandle.
  • Divide dough in half. On lightly floured board, shape each half into a 6-inch round. Cut into 6 wedges.
  • Bake on ungreased sheet about 20 minutes at 375 degrees F (190 degrees C). Serve warm!!

Topping:
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
6 tablespoons sugar
1/2 cup butter
1 egg
1 tablespoon vanilla
1/2 cup heavy cream
1 cup fresh blueberries
1 egg
1 tablespoon heavy cream
sugar (large crystal)

Steps:

  • Preheat oven to 375 degrees. Batter: Cut the butter into 1/4 in cubes. Sift the flour, salt, baking powder and sugar into a large bowl. Throw the flour mixture and the cubed butter into a mixer and use the whisk attachment on low to cut the butter in. Whisk the egg, cream and vanilla together and stir into the dry ingredients until just mixed. Gently stir in blueberries. Dump the dough onto a floured surface and pat into a 8" circle. (should be about 1.5" high) Cut into 8 pie shaped slices and place pieces on a parchment paper covered cookie sheet. Topping: Whisk the egg and cream together and brush on the top of each scone. Sprinkle sugar on top. Bake for 16-20 minutes, or until golden brown.

1 teaspoon baking powder
1/4 teaspoon baking soda
2 tablespoons sugar
1/2 cup butter
1/4 pint heavy cream
1 cup blueberries or 1 cup raspberries
2 tablespoons lemon juice

Steps:

  • Place flour and butter in food processor and combine.
  • Add baking soda, baking powder, sugar and lemon juice.
  • Mix in cream and pulse to combine.
  • Do not over mix.
  • Wrap in plastic wrap and chill.
  • Preheat oven to 375 degrees.
  • Roll out dough to 1 inch thickness and cut scones.
  • Place on buttered baking sheet and brush with egg wash.
  • Bake 13 - 15 minutes.
