Four different kinds of beans baked with molasses. I have substituted different kinds of beans and enjoyed all of the results. Use whatever kind of beans you like! I have also used Canadian bacon instead of regular bacon.

1 (15 ounce) can kidney beans, drained
1 (15 ounce) can butter beans, drained
1 (15 ounce) can lima beans, drained
1 (16 ounce) can pork and beans, drained
½ pound bacon, cut into small pieces
1 large onion, chopped
2 cloves garlic, chopped
¾ cup brown sugar
½ cup ketchup
½ cup vinegar
¼ cup molasses
1 teaspoon dry mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place kidney beans, butter beans, lima beans, and pork and beans in a 2-quart casserole dish.
  • Heat a saucepan over medium heat; cook and stir bacon, onion, and garlic until bacon is browned, about 10 minutes. Pour off excess fat.
  • Whisk brown sugar, ketchup, vinegar, molasses, and mustard into bacon mixture; simmer until cooked through, about 20 minutes. Pour sauce over beans in the casserole dish.
  • Bake in the preheated oven until bubbling, 1 hour 15 minutes.

Five stars for this five bean bake. It's not all about the beans, though. Bacon and onion are added for savory flavor, and ketchup and brown sugar for some sweetness.

1 can (15 ounce size) pork & beans
1 can (15 ounce size) pinto beans, drained and rinsed
1 can (15 ounce size) butter beans, drained and rinsed
1 can (15 ounce size) lima beans, drained and rinsed
1 can (15 ounce size) kidney beans, drained and rinsed
1 pound bacon, chopped in 1-inch pieces
1 medium onion, sauteed in bacon dripping
1 cup brown sugar
1 cup ketchup
1/4 cup white wine vinegar

Steps:

  • Heat the oven to 300 degrees F. Cook the bacon in a large skillet until crisp. Remove the bacon pieces and drain on paper towels. Add the onion to the bacon drippings and saute until browned. Mix all of the ingredients in a 3-quart casserole and bake for 45 minutes until heated through; or heat in a crock pot for 4 hours on high, or 6 hours on low.

1 small onion, chopped fine
1 small green bell pepper, chopped
2 pkg (12 oz. ea) frozen fordhook lima beans
1 can(s) (10-3/4 oz.) condensed cream of celery soup
1/2 tsp salt
1/8 tsp black pepper
1 c grated cheddar cheese
1/2 c fine bread crumbs, buttered if desired

Steps:

  • 1. In a medium saucepan over medium-high heat, bring 1 to 1-1/2 cups water to a boil. Add the lima beans. Bring to second boil; cover and simmer about 20 minutes, or until beans are almost tender. Remove from heat and drain completely.
  • 2. Transfer the beans to a large mixing bowl and add the onion, green pepper, salt and black pepper. Mix well with spoon. Add the celery soup, undiluted, and mix well.
  • 3. Turn mixture into a greased (may use Pam) 9x13x2" baking dish. Top mixture with the cheese and then the bread crumbs.
  • 4. Bake in a preheated 350-degree oven for 30 to 40 minutes, until bubbly and golden brown.
  • 5. Serve while hot with a favorite meat, or on its own with a salad and bread.

2 cups lima beans (, dried)
1 sweet onion (, diced (about 3 inch diameter))
2 cloves garlic (, finely chopped)
1-2 tablespoons olive oil for sautéing (, optional or use 1/3 cup broth for oil free)
2 carrots (, chopped (about 5 inches long))
2 stalks celery (, chopped (about 8 inches long))
1 pound fresh spinach (, chopped (or Swiss chard or both))
1 pound fresh tomatoes (, diced)
1/2 cup fresh parsley (, chopped )
3/4 teaspoon sea salt
1/2 teaspoon ground black pepper

Steps:

  • Wash and soak the beans in a pot overnight.
  • The next day, drain the beans and add enough fresh water to cover them. Cook over low heat until half tender, about 30 minutes, drain, and save the broth.
  • Preheat oven to 350°F/180°C
  • In a large pot sauté the onions in veggie broth or olive oil for 2-3 minutes until they begins to get translucent.
  • Add the garlic, carrots, celery, spinach and/or Swiss chard and sauté for a couple more minutes.
  • Add beans and mix well.
  • Add tomatoes, salt and pepper and sauté for another minute. Then add parsley and mix well.
  • Add enough reserved broth from the beans to barely cover them. If you don't have enough reserved broth, then use water for the rest (you can also use extra veggie broth).
  • Cook over medium heat for 15 minutes stirring, occasionally. Add more broth if needed. You don't want it to get too dry.
  • Transfer to a 9 x 12 glass baking dish, cover with tin foil and bake for 30 minutes, or until beans are tender and liquid has evaporated.
  • Uncover and bake for an additional 10 minutes.
  • Serve hot!

I got this recipe from the Mount Joy Mennonite Church cookbook. Very good! Mount Joy is in Lancaster County, PA. Prep time does not include overnight soaking of beans. Cook time is approximate.

2 pounds dried lima beans
1 teaspoon salt
10 ounces ketchup
2 tablespoons brown sugar, or to taste
2 tablespoons dry mustard
1 pound bacon, uncooked

Steps:

  • Soak beans in water overnight. Drain. Add fresh water, just enough to cover the beans, and salt. Cook until tender, about 30 minutes.
  • Preheat oven to 300 degrees. If necessary, pour off some water from the beans so that they are very moist but not swimming in liquid. Add ketchup, brown sugar and mustard to the beans and water. Pour into a large (about 9 by 12 by 3) flat baking pan. Lay strips of bacon on top of the bean mixture.
  • Bake for 2 1/2 hours. If the bacon starts browning too fast, reduce heat to 225 degrees and extend the baking time by 1 hour.

1 1/2 cups frozen whole kernel corn
1/4 cup butter, melted
3/4 cup spring onion, chopped
1/4 cup flour
1 1/2 cups milk
1 teaspoon salt
1 1/2 cups grated sharp cheddar cheese, divided
1/4 cup chopped pimiento
1 (8 ounce) can sliced water chestnuts
breadcrumbs or crushed potato chips, for topping

Steps:

  • Cook lima beans and corn together, following package directions.
  • Drain.
  • Make sauce by melting margarine in sauce pan and adding the chopped spring onions.
  • Blend in the flour, milk, salt and one cup of grated cheese.
  • Cook until the sauce begins to thicken; add pimento and water chestnuts.
  • Layer vegetables and sauce in greased 1 1/2 quart casserole dish, beginning with vegetables and ending with layer of sauce.
  • Top with 1/2 cup grated cheese and bread crumbs or crushed potato chips, your preferance.
  • Bake at 350 degrees for 25-30 minutes or until topping is golden brown and casserole is bubbly around the edges.
