SLOW COOKER SOUTHERN LIMA BEANS AND HAM



Slow Cooker Southern Lima Beans and Ham image

I searched your website for the simple lima bean recipe that my mom used to make and the one that is served by many restaurants here in the south as a side dish. I couldn't find one, so I submitted my own. This is an easy, basic lima bean dish with ham, onion, and seasonings. Served over Mexican cornbread, it makes a delicious hearty meal. You can also do this on the stovetop. Just follow the directions on the back of the lima bean bag and add the seasonings. Slow cooker time is about 7 hours. Add a side salad for a complete meal.

1 pound dried baby lima beans
2 quarts water
2 onions, coarsely chopped
1 meaty ham bone
1 cup leftover ham meat from bone, chopped
3 cups water, or as needed to cover
1 teaspoon Cajun seasoning
¼ teaspoon freshly ground black pepper
¼ teaspoon garlic salt, or to taste
1 pinch cayenne pepper

Steps:

  • Soak lima beans in 2 quarts of water in a large bowl for 8 hours or overnight. The next day, drain the lima beans and place into a slow cooker with onions, ham bone, and ham. Pour in 3 cups of water or as needed to cover. Place lid on the cooker, set to High, and cook for 3 hours.
  • Stir in Cajun seasoning, black pepper, garlic salt, and cayenne pepper; set cooker to Low and cook until the beans and meat are very tender, about 4 more hours.

This is a family recipe. In Greek, it's called 'Gigantes' which translates as 'Giants.' Try to find the largest dried lima beans possible. My aunt adds small canned sausages, but I prefer this meatless. Serve with feta cheese and a crusty bread. You can also substitute 2 teaspoons parsley for the dill if you prefer.

1 (16 ounce) package dried lima beans
2 (16 ounce) cans chopped tomatoes with juice
1 cup olive oil
3 cloves garlic, chopped
sea salt to taste
1 teaspoon chopped fresh dill

Steps:

  • Place the lima beans in a large saucepan. Pour enough water to fill to 2 inches above top of the beans. Allow to soak overnight.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Place the saucepan over medium heat; bring to a boil; reduce heat to medium-low and simmer 20 minutes; drain. Pour the beans into a 9 x 13 baking dish. Add the tomatoes, olive oil, garlic, salt, and dill; stir.
  • Bake in preheated oven for 1 1/2 to 2 hours, stirring occasionally and adding water if the mixture appears dry.

I got this recipe yrs ago from a friend who served this dish at a dinner party & it got rave reviews. When you want to impress or convince a lima bean non-believer, this is the recipe for you. There are only a few lima bean recipes at this site compared to other veggies. This 1 is an easy to prepare stovetop-to-table dish & spectacular with any meat or chicken entree not combined with a cream sauce. Enjoy!

Number Of Ingredients 7

3 cups frozen lima beans
6 slices bacon (thick-sliced)
1 medium onion (roughly diced)
6 large button mushrooms (or 8 small)
2/3 cup low-fat sour cream
1 teaspoon curry powder (more as desired)
seasoning salt (to taste)

Steps:

  • Cook frozen lima beans per pkg directions while following remaining steps & set aside.
  • Roughly dice the medium onion & set aside.
  • Cut each large mushroom in half from top down through any stem. Put the cut edge down on your cutting board & slice each half in approx 1/3 inch slices & set aside.
  • Cut bacon slices in 1/2 inch segments & fry in a non-stick skillet until crisp. If you have more than 2 tbsp of rendered bacon fat grease, remove the excess of that amount.
  • Add diced onion & sliced mushrooms to skillet & saute until onion is translucent. Do not overcook to carmelized state.
  • Add 1 tsp curry powder + low-fat sour cream & combine well.
  • Taste & add additional curry powder or seasoning salt to your preferences.
  • Remove skillet from heat, add cooked lima beans, mix well & serve immediately.
  • Note: My advice is to plan for 2nd helpings. You'll need them!

6 slices bacon, finely chopped
1/4 cup olive oil
2 onions, thinly sliced
2 garlic cloves, minced
4 vine-ripened tomatoes, seeded and chopped
1/2 cup canned tomato puree
3 cups thawed frozen lima beans
Small red chili
Salt and freshly ground black pepper

Steps:

  • In a skillet, heat the bacon over moderate heat. When partially rendered, add the olive oil. When the oil is hot add the onions, cover and cook for 15 minutes or until really tender. Add the garlic, tomato, tomato puree, and hot chili pepper and simmer, uncovered, for 5 minutes. Add the lima beans, cover and simmer for 15 minutes or until they have had a chance to absorb the flavors. Season to taste with salt and pepper and serve with grilled Italian sausages or breakfast sausages.

I actually really like Lima Beans. But, I realize I'm probably in the minority. Salt, pepper and butter is all I need, but this is a great recipe for them. I try to get a few of my "picky" friends to try new vegetables now and then, and this is one of them they really liked. Just a few ingredients takes ordinary frozen vegetables and makes them a great side dish. NOTE: Some think that butter beans are the same as lima beans - and they are - well similar. Both are lima beans, but they are 2 separate varieties. The baby lima beans are the small green ones; whereas butter beans are actually Fordhook, and they are larger and buttery in color (hence the name butter beans), and they do have a stronger flavor. You can buy both frozen, canned, and dried; but difficult to find fresh. For this dish I use frozen. It makes it a quick easy dish.

1 (16 ounce) bag frozen baby lima beans, thawed (the small green ones)
4 -5 slices bacon, diced (I prefer a smoky flavor)
1 medium onion, diced
2 teaspoons minced garlic (you can use more or less, according to taste)
1/3 cup chicken broth
1 pinch red pepper flakes (more or less depending on taste)
1 teaspoon butter (you can add more if you like)
salt
pepper

Steps:

  • Bacon -- In a medium sauce pan, add the bacon and begin to saute on medium heat - don't try to rush it. After the bacon begins to crisp up, drain any excess drippings from the pan. I leave just enough drippings in the pan (1/2 teaspoon), to coat the onion and garlic.
  • Onion and Garlic -- Add the onion, garlic, and red pepper flakes to the pan with the bacon and saute for 2-3 minutes.
  • Beans -- Finish it up. Add the broth, beans and butter and simmer uncovered (medium heat) for 5 minutes or less until the beans are warm and the broth is reduced. Season with salt and pepper.
  • Serve and enjoy!

Tasty Lima Beans in tomato sauce. Leave out the sausage and make it vegetarian. Mr. Manetta explained his theory of why Greek food is so successfully seasoned. The best Greek cooks, he said, treat each major part of a dish separately, then combine it with other parts; they do not season the combined ingredients all at once. Butter beans is the other name for lima beans. There are two common varieties of lima bean - the baby lima bean and the Fordhook - but don't confuse them as the same bean in different stages of development.   • COOKED LIMAS. Put 1 ½ cups large dry lima beans, rinsed, into a large kettle. Add enough cold water to cover deeply. Heat to boiling; boil for 2 minutes; remove from heat, cover, and let stand for 1 hour. Drain, rinse, and cover with fresh salted water. Heat to boiling, then gently boil, uncovered, until beans are tender, about 45 minutes; drain.
  • SUGGESTED ACCOMPANIMENTS: Cooked chard dressed with oil, vinegar, salt, and pepper served at room temperature. Large bread sticks or crusty bread. Full fruity red table wine, as a hearty California Zinfandel. Chilled fresh orange segments.

This recipe came to me by way of the February 2005 recipe adoption. I found the recipe to be very tasty and different way to prepare lima beans. I did make some minor changes and updated the directions and the result is a creamy sauce with very nice flavor. I hope you enjoy.

1/4 teaspoon garlic powder
2 tablespoons diced pimentos
1/4 teaspoon salt
1/2 cup sour cream (low fat or fat free is fine)
1/4 teaspoon fresh ground black pepper
3 tablespoons fresh chives, chopped

Steps:

  • Add lima beans to a sauce pan with 1 cup of water and simmer 10-15 minutes until tender, then drain.
  • Meanwhile, mix together the sour cream, garlic powder, pimento, pepper and chives.
  • Over low heat return the drained lima beans to the sauce pan and mix in the sourcream mixture.
  • Gently stir until all ingredients are warmed through, being careful not to let the sour cream scorch.
