- Place fillets in a 13x9-in. baking dish. In a small bowl, whisk remaining ingredients until blended. Pour 1/2 cup marinade over fillets; turn to coat. Refrigerate 1 hour. Cover and refrigerate remaining marinade., Preheat broiler. Drain fish, discarding marinade in dish. Place fish on a broiler pan coated with cooking spray. Broil 4-6 in. from heat 4-6 minutes on each side or until fish just begins to flake easily with a fork, basting frequently with reserved marinade.

- Heat your grill or grilling pan. In a small bowl, melt the butter and mix it with the lime juice and lime zest. Add the dried parsley, garlic powder, paprika, salt, and pepper.
- Dip the fillets into the butter mixture or spread the mixture on top of the fillets
- Grill for 4 minutes on each side once the grill or grill pan is hot (medium-high heat)

- Cut fillets into four pieces if necessary; set side. In a large bowl, combine the orange juice, ketchup, oil, soy sauce, lemon juice and pepper. Remove 1/4 cup for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag; add fillets. Seal bag and turn to coat; refrigerate for 2 hours, turning once or twice., Drain and discard marinade. Place fillets on a broiler pan coated with cooking spray. Broil 4-6 in. from the heat for 5-6 minutes on each side or until fish flakes easily with a fork, basting occasionally with reserved marinade. Sprinkle with sesame seeds.

"I had a friend that had brought me some Orange Roughy Fish one time. Hence the name, I decided upon prepare this fish in a citrus marinade. Turned out tender and flaky. Very delictable & nutritious. Can also be grilled on the grill."

- 1. In a bowl, combine the thawed orange juice, lemon juice, lime juice, minced garlic, Mrs. Dash Onion & Herb, and Mrs. Dash Table Blend together. Pour marinade in the ziploc bag, place the 4 orange roughy fillets in the bag and close bag, releasing some air. Completely saturate the fillets in the bag with the marinade.
- 2. ( I like to prep this the night before so the fish can marinate overnight, enhancing the flavor.)
- 3. Preheat oven to 425* F. Place the Orange roughy in the 9x11 inch pan w/ all the marinade. Cover the pan with the foil tightly. Place in the oven and bake for 45 minutes. Serve w/ a sprig of mint.
LEMON-LIME ORANGE ROUGHY

- iN MIXING BOWL, COMBINE ALL INGREDIENTS(EXCEPT FISH), WISK TOGETHER. ADD FISH, MAKING SURE EACH FILLET IS THOROUGHLY COATED. MARINATE FOR 4-24 HOURS TO INSURE INFUSION OF FLAVOR. ON BAKING SHEET, BROIL FISH FOR ABOUT 2 MIN. PER SIDE(DEPENDING ON THICKNESS) SERVE WITH SIDE OF YOUR CHOICE AND/OR SALAD. BON APPETIT

- Put fish fillets in a greased 11x7 inch baking dish.
- Sprinkle with seasoned salt, pepper, and paprika.
- Drizzle with melted butter.
- Cover and bake at 400 degrees for 15 to 20 minutes or until fish flakes easily.
GARLIC PARMESAN ORANGE ROUGHY
Steps:
- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
- Place the orange roughy filets on the broiler pan and squeeze the lemon over the top of the fish. Broil the filets in the preheated oven for about 6 to 8 minutes.
- Combine parmesan, butter, dijionnaise, garlic, and salt in a small bowl. Remove the fish from the oven and spread the cheese mixture on top of the filets. Sprinkle with paprika. Broil until the topping is lightly browned and the fish flakes easily with a fork, about 3 minutes.

- Place fish fillets in a baking dish sprayed with Pam.
- In a bowl, mix mayo, lemon, lime and mustard.
- Add in dill and stir well.
- Spread all of the sauce over the fillets.
- Then sprinkle with the Parmesan.
- Bake at 375 for 20 minutes (or until fish is done), then broil for 5 minutes to get top crispy and brown.
