LINDA'S BAKED STUFFED SHRIMP

This is one of my FAVORITE dishes. Quick delicious and tasty enough to serve to company anytime! Sometimes I pour extra melted butter with some malt or apple cider vinegar mixed in, over the top of the shrimp before serving. It gives it a very nice flavor!

Number Of Ingredients 5

1 lb large shrimp
37 Ritz crackers, crackers (1 sleeve)
1/2 cup margarine, melted
1 lemon, cut in half
salt and pepper, to taste

Steps:

  • Place shrimp, tails up, in a glass baking dish, big enough to hold all. I use individual baking dishes, single serving size, and put 4 shrimp in each dish.
  • Crush crackers, and put them in a bowl.
  • Add the melted margarine to the crackers, and squirt in some lemon. Mix well.
  • Add salt and pepper, to taste.
  • Put cracker crumbs on top of the shrimp, and squeeze some more lemon over top, depending on how much you like lemon. I love lots, the more the better!
  • Bake in a 350 oven, for 30-40 mins., or until cracker crumbs are golden brown.
  • Serve with lemon wedges.

Talk about delicious? Try this... I make this when I want something extra delicious for company... This recipe works well with ANY white fish...I don't care what you use... Great on fresh water fish, as well as ocean fish... It would also be good with Salmon or Swordfish too!

2 lbs haddock fillets or 2 lbs other white fish, of your choice
1 -2 lemon, juice of
butter
36 Ritz crackers (1 sleeve)
1 (6 ounce) can crabmeat
1/2 cup butter, melted

Steps:

  • Lay your fish filets out in a lg. casserole dish, or a 9x13" baking pan.
  • Squirt with fresh lemon juice, and dot with pats of butter.
  • Take the sleeve of Ritz crackers and crush finely in a bowl.
  • Add crabmeat to it, and mix well.
  • Add 1 stick of melted butter to it, and mix well.
  • Spread a 1" thick layer over your fish fillets.
  • Put in a preheated 350 oven, and bake for 20-25 mins., or until fish is no longer opague in the middle.
  • Serve with fresh lemon squirted on top.

I've always received rave reviews over this recipe and have shared it often. You may add diced lobster or scallops to the cracker mixture just before baking. Serve with drawn butter.

40 unsalted soda crackers, crushed
1 cup fresh bread crumbs
1 tablespoon garlic powder
½ cup butter, melted
1 tablespoon Worcestershire sauce
1 pinch ground black pepper
2 tablespoons grated Parmesan cheese
½ cup dry white wine
16 jumbo shrimp, peeled and deveined, with tails

Steps:

  • In a medium bowl, mix crushed crackers, bread crumbs and garlic powder. In a small bowl, blend butter and Worcestershire sauce. Mix blended butter, pepper and Parmesan cheese into the cracker mixture. Stir in white wine, using only enough to hold together the mixture.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Butterfly the shrimp using a sharp knife, and arrange back side up in a large baking dish. Stuff shrimp with heaping tablespoons of the cracker mixture.
  • Bake 20 minutes in the preheated oven, until cracker mixture is lightly browned, shrimp are opaque, and the tails have curled.

INGREDIENTS
1 stick butter
2 tbsp. lemon juice
1 tsp. minced parsley
30 Ritz crackers, crumbled
20 jumbo shrimp, cleaned deveined, butterflied

Steps:

  • 1 Melt butter and add lemon juice mixing well. In a large bowl, crumble Ritz crackers well and add parsley to mixture 2 Clean, devein and butterfly shrimp by cutting shrimp horizontally but not all the way through, open shrimp to look like butterfly leaving the tails on. Add lemon butter to moisten but ritz cracker mix til slightly moist, but not wet stuffing consistency. Place shrimp in rows on pan sprayed with non stick cooking spray. Stuff shrimp with stuffing mixture. Pour remaining lemon butter over top and bake at 400 for about 10-15 minutes until done. Do not over cook shrimp. Serve with rice pilaf.
